With today being #nationalmaplesyrupday I knew that breakfast for lunch was a must! Took a break from watching the princess switch on @netflix (maybe my walk will happen after that😉) to pop some @kodiakcakes buttermilk & vanilla power waffles in the toaster so that I could drown them in some 100% pure Vermont maple syrup! Added some vanilla @lovvelavva + some frozen wild blueberries for the perfect lunch! Will you be celebrating national maple syrup day today?!

I feel like I have about 1000 bricks on my shoulder cooking/studying today... so here is my #foodiefaceoff post for this weeks challenge to make a recipe with potatoes, zucchini, and cheese... now for me I’m more of the person to make dishes and I’m not always crazy about things mixed so I did a boated meatless zucchini lasagna with a side of hassleback butter potatoes ~ to bring in both of the flavors I used the same basting oil to coat the zucchini and the potatoes with garlic and chopped parsley... the filling is a ricotta cheese mixed with basil and thyme herbs topped with fire roasted diced tomatoes and Japanese panko crumbs blended with garlic seasoning, cumin, and oregano! Sugar Cookies😍 - Without Cane Sugar, yes you read it correctly 🥰

My Grandma left me with her cookie cutters & rolling pin before she passed away last year. I played around with a recipe last night & I’m amazed how you cannot tell the difference between the regular sugar cookies I have made every year & these!!!

Ingredients:
•2 & 1/4 cup almond flour
•1/3 cup coconut sugar
•3 droppers full of vanilla stevia
•4 teaspoon vanilla extract
•3 eggs
•1/2 cup butter
•1/2 teaspoon baking soda
•1/4 teaspoon sea salt
—
Directions:
1. Combine ingredients & let sit overnight in a ball in the fridge with plastic wrap.
2. Pre-heat oven to 350°.
3. Cut out like any typical sugar cookies.
4. Bake for 9-11 minutes depending on thickness.
5. Let cook for 4 or so minutes before transferring cookies off cookie sheet.
6. Feel free to add icing on top! 
7. Enjoy!✨

So here’s what’s else in my salad ... I would love to tell you I made these falafel all by myself but I bought them from Aldi 😂 as I’ve had a busy day!  I cooked my falafel in the #organic #coconutoil From @niulife .
I also added #hummus #spinach #avocado #vegan feta, red onion bell pepper and beetroot relish along with My teriyaki sauce and it was super dooper 💕🌿 .

I haven’t had time to cook anything the last few days, but I’m so happy to be able to eat a good healthy meal! I have felt exhausted & just overall sick being off my diet for just two days, now I know why I eat the way I do.🤣But lets be honest, if you don’t cheat here & there you’ll make yourself go crazy! I’m back at it until Christmas, wish me luck.🤪

Ingredients:
•3 chicken breast
•1/2 cup bread crumbs I use @wholefoods .
•1/2 cup parmesan cheese
•brown rice noodles- Tinkyada •2 tablespoons butter @earthbalance •1-24 oz. container of marinara .
•2 teaspoons Italian seasoning .
•dash of salt & pepper
•2 teaspoons minced garlic
•broccoli- I added this to it last minute & so happy I did, roughly 1 cup diced. .

1. Pre-heat oven to 350°
2. Melt butter in a small pan on low.
3. Brush melted butter on chicken breast & place in bread crumbs.
4. Take a large glass container & place the marinara sauce, minced garlic, Italian seasoning & salt & pepper in it. Stir. Add broccoli here if you want to.
5. Place chicken on top & add cheese on top of the chicken breast. 
6. Bake for 50 minutes.
7. In the meantime, cook the noodles. 
8. Put noodles on plate, add sauce, then place chicken breast on top.
9. Top off with fresh parsley! Enjoy!😋
