I made a nice, healthier breakfast for my Sunday morning. I eliminated the toast that the avocado would go on to save on carbs, and opted instead to just enjoy it in it's natural glory with light salt and a hint of chili powder to give it some zing. Paris, as always, stood vigilant, by my side, in hopes I'd throw a little bacon her way. Lol. She did get a couple of pieces of bacon, and an unpictured banana I brought for her. Yesterday was a great day for a bit of BBQing. One mustard pork, the other without mustard (the kid hates it). Served with sauteed kale, corn, kidney beans and grape tomatoes.

Let's get personal......with this PIZZA🍕 I don't eat pizza often, although it is one of my favorites. Two reasons: Gluten & Dairy. If I eat in moderation I am able to tolerate, but who does that with pizza? I can tear down 4-5 slices. Hence my problem😂 So the only solution here is to make my own so I can control the ingredients. Made these personal pizzas last night for us girls. They were delish. Healthier pizza without the bloat. Yesssss!

Simple and yummy dinner with rice. I made beef & asparagus stir-fry and chicken vegetable soup. I have say, I really LOVE my new copper pans! The red copper pans, “as seen on TV,” are titanium ceramic, nonstick, lightweight, won’t chip, scratch or peel into your food (unlike other nonstick pans); they are excellent heat conductors and are very good pans on stovetop or even oven cooking. The best part is, you don’t hardly have to use much oil, so you can actually cook & eat healthier! For my stir-fry today, I used half the amount of oil I usually put and it was even more than I really needed. I was astonished at how well it cooked my food with even-heat distribution and the food did not stick to the pan at all. So easy to cook and clean! I didn’t need hardy any oil, so I’m excited to use it more now to cook healthier meals! Love it!!!.

Dinner was amazing!! My mom has NEVER liked or been willing to eat seafood.  In the past 2 weeks she has eaten fish 3 times!! Tonight was salmon with pistachio cilantro pesto cooked with white onion and grape 🍅 with a side of quinoa and spiralized zucchini with red onion, grape tomatoes 🍅 and kalamata olives.

Forgot to take a pic last night so this is leftovers. One of the most easiest and tastiest (in my humble opinion) recipes is baked salmon with mayo on top. Salmon is my favourite fish...season with salt and pepper...a little lemon juice and slather mayo on top. Wrap in tin foil and bake for 20 min then open tin foil and bake for another few min to caramelize the mayo. Tonight I made homemade chicken fajita tacos ( I always have to habe one soft shell and one hard shell ). I sauteed onions and mushrooms with fajita seasonings and did the same with diced chicken breast. I made my homemade guacamole and corn salsa. So good, light, and good for me! I sauteed onions and mushrooms with fajita seasonings and did the same with diced chicken breast. I made my homemade guacamole and corn salsa. So good, light, and good for me! Jiu Hu Char (Stir Fry Jicama with Cuttlefish) is the quintessential festival dish for the #Penang Nyonyas including those who originate from the northern part of Peninsula #Malaysia, like my family. 
This dish consists mainly of shredded jiu hu si (shredded cuttlefish), bang kuang, carrots, and cabbage. Other ingredients include onion, garlic, dried prawns, mushrooms, oyster sauce, white pepper.

Jiu Hu Char is usually served as a side dish in a traditional Chinese dinner but it can also be served as a lettuce wrap with a sambal belacan dip appetizer for a multi course dinner. It is one of those dishes that actually tastes better the next day and so cooking a batch the day before is a good thing. 
You can also use the leftover as a filling for Fried Popiah (Spring Rolls). Do give it a try.

The idea came to me after "accidentally" eating an entire sweet potato last week stuffed with all the delicious toppings like 🥑🧀🍃🍗.
