No outro dia na @miosotis_bio comprei a couve flor roxa mais bonita e fiquei espantada com o seu sabor adocicado. Ficou ótima como puré, ao qual adicionei trigo sarraceno cozido, beringela assada no forno e canónigos salteadas em alho.⠀

Devo dizer que de futuro irei saltear acelgas ou espinafres porque os canónigos ficam com um ligeiro sabor amargo que não é fantástico.⠀

Purple Cauliflower Purée with Buckwheat, Roasted Eggplant and Lamb's Lettuce⠀

The other day I bought the most beautiful purple cauliflower and was amazed by the sweet flavour. It turned out great as a purée, to which I added cooked buckwheat, roasted eggplant and lamb's lettuce sautéed in garlic.⠀

I must say that the lamb's lettuce turned out a little bitter, so in the future, I will be using chard or spinach.⠀

Have you tried a cleanse lately? I'm loving it! Ok the actual day of cleansing is hard sometimes, but I cleanse to get rid of the toxins and reset. ⠀

I never would have thought I would like it, but it's second nature to me now and I have been doing it for 2.5 years! (Well not while pregnant. 😬) The idea is that it is an intermittent fast, but supported with additional nutrients to help the body detox. It's great for burning fat, but I just love how I feel after! My anxiety goes down, my energy goes up, I crave less junk, I lose a few pounds...⠀

Dark chocolate—high in natural caffeine that can give you that energy boost. High quality dark chocolate ​also contains magnesium which many of us are seriously lacking in. Look for at least 70% cacao and brands that list cacao as the first ingredient not sugar. ​Moderation is still key (it still contains some sugar) but a little chocolate here and there can actually be good for you! ⠀

My mom was at a coffee shop near Thanksgiving and when she went to order her drink, the barista was like, "oh, the person ahead of you paid for your coffee". My mom was so taken aback, because when does this ever happen? That we do random acts of kindness to strangers?

This stranger teaches us a great lesson. To do what you can to brighten someone else's day. For him, it was leaving an extra $5 to help the person behind him. His action also motivated my mom to give an extra $5 for the person behind her. We'd have to ask the barista how many others would do this throughout the day 🙌

One of the toughest decision I’ve had to make recently was deciding who I wanted to serve as an OBM, because the fact is, I want to serve everyone; especially those folks who I know are struggling with their business be it from an operational standpoint or managerial standpoint.

What I decided was that I would take a personality test (at the request of my team) to determine who I was best aligned with from a very basic standpoint and that was personality wise.

I’m excited to share my findings with you, but here’s one thing that I did learn, you have to serve who you’re best fitted with and not with who you merely “desire” to help. Sometimes we have the best intentions, but when it comes to business, opposites may very well attract.

If you always feel bad about yourself, you will never be happy. You will never enjoy what you are doing and you won't be making changes from a productive state. You will be more working from a state of unworthiness and punishment.

If you think food makes you fat, if you hate your body, if you think you are not good enough...that will be what will actually happen. Your brain and thoughts are powerful, when you are in such state that's what you project and that's what you will have.

Also physically, you are sending a strong signal from your brain to your nervous system. Your nervous system will tell your body what you believe. You think you are fat...there you are you are telling your body what you want to be. You think you are not enough or you are not able to achieve your goals, more of the same your nervous system is receiving the signals not to be able to do it.

You need to love yourself now, you are worth, your are beautiful, you are unique. Tell yourself loud every morning 10 times. Start doing things and making changes because you love yourself not because you hate yourself.

Our thoughts and mental state, affect directly the way we feel physically and weight loss. ▫️▫️▫️▫️▫️▫️▫️▫️▫️▫️▫️▫️▫️▫️▫️▫️ If you always feel bad about yourself, you will never be happy. You will never enjoy what you are doing and you won't be making changes from a productive state. You will be more working from a state of unworthiness and punishment. ▫️▫️▫️▫️▫️▫️▫️▫️▫️▫️▫️▫️▫️▫️▫️▫️ If you think food makes you fat, if you hate your body, if you think you are not good enough...that will be what will actually happen. Your brain and thoughts are powerful, when you are in such state that's what you project and that's what you will have. ▫️▫️▫️▫️▫️▫️▫️▫️▫️▫️▫️▫️▫️▫️▫️▫️ Also physically, you are sending a strong signal from your brain to your nervous system. Your nervous system will tell your body what you believe. You think you are fat...there you are you are telling your body what you want to be. You think you are not enough or you are not able to achieve your goals, more of the same your nervous system is receiving the signals not to be able to do it. ▫️▫️▫️▫️▫️▫️▫️▫️▫️▫️▫️▫️▫️▫️▫️▫️ You need to love yourself now, you are worth, your are beautiful, you are unique. Tell yourself loud every morning 10 times. Finding a vegan/gf dish wasn’t the easiest thing to do in Barcelona & Milan BUT I managed to find some exceptional dishes 🤩 Nothing too fancy but it was absolutely delish. . .

I had some protein bbq chips in my stash so those got my protein requirement up to where I needed it. They’re made mostly from pea protein & are quite tasty! Often I’m asked, what’s my favorite diet? I don’t really have one, but my rule is to incorporate as many vegetables as I can into my daily meals, usually striving for a minimum of six -seven servings a day. But with that said, I say my diet closely resembles The Mediterranean Diet. It is one I follow a lot because research shows that
people from the Mediterranean ( France, Greece, Italy, Portugal, Spain, ) enjoy tremendous health benefits from their diet. First, they suffer lower levels of chronic disease, which means they enjoy a higher life expectancy than most other countries in the world. Secondly, they do this by balancing work with leisurely downtime with the company of family and friends. They also engage in regular physical activity or exercise, and they consume a healthy diet consisting of mainly fresh fish, such as salmon, organic lean meats such as chicken, whole fruits and vegetables, and heart-healthy whole grains and olive oils along with other other omega -3 foods such as avocados. When I was a young girl, I struggled so much with body image. All of my friends were naturally very thin, while I was muscular and carried a little extra padding. I asked my mom when I was in second grade if I could have an operation to make my thighs smaller. The memory of that makes my heart break.

That was just the beginning. My lack of confidence made my highly vulnerable to attack, and I let the voices drown me in self-pity and shame until all of my pain manifested as a full blown, all-consuming eating disorder that robbed me of ten precious years.

To be honest, I’m not sure that I would change any of it. My journey has fueled a passion to help women live a healthy but also truly happy life. It’s about breaking free from a weight-related identity, but in the process finding freedom in health. And then when my daughter was born, I knew God was going to use my past to help her future. I knew I was going to be equipped with the skills to help guide her tender heart through this world that can be so overwhelming, confusing, and harsh for little girls. For all of that, I am so grateful!

In 4 weeks I’ve increased my calories by 250-300. I’ve had to eat when I don’t want to, try new foods, experiment with ways to get my intake up, and most importantly- change my mindset around food. It hasn’t been easy. I have a ways to go, but for the first time in a long time, I feel hope, and I BELIEVE that it’s possible. 🙏🏼 Food is no longer the enemy 😍

I don't need to tell you that regular and consistent exercise is a good thing. For EVERYBODY. But for people with insulin resistance, it can truly be a lifesaver. Research has shown that for individuals with PCOS, frequent physical activity, at the right intensity, can significantly improve insulin sensitivity, aka making the body much more effective at controlling blood sugar.

The key is to find movement that challenges you AND gets your heart rate up without completely wiping you out after. Given some women with PCOS can also have some wonky things going on with their adrenal glands (which produce our primary stress hormones) choosing the right intensity exercise, such as resistance training or high-intensity interval training, can be especially beneficial. .

Pumpkin Soup⠀
1. Heat a large soup pot on medium/high heat with 1 minced garlic clove, 1 diced onion, and 1 tbsp olive oil. ⠀
2. When onions become translucent (about 3-5 minutes), add 4 cups veggie broth, 30 oz canned pumpkin, .5 tsp thyme, and .5 tsp sage. Bring to a boil.⠀
3. Once boiling, turn to low heat and let cook for about 40 minutes. ⠀
4. Transfer soup into a blender and blend until very creamy. ⠀
5. Transfer back to the pot on low heat to keep warmed until served. Optional: all in .25 cup heavy cream for extra creamy texture. Enjoy! #rdapproved

When I think of the trust in my body, what comes up for me is:

> I know confidently that my body will tell me what it needs - food, rest, activity, etc. It is my mind’s job to listen to those cues.

> I trust my body will do It’s best protect me from external harm (pathogens, accidents, environmental emergencies, such as being attacked or robbed). I may still get sick, injured, or harmed, but I still know that my body did it’s absolute best to fight.

> I trust my body to change & adapt physically in response to how I treat it. Fluctuations in weight, inflammation, sleeping patterns, etc, will all influence my body’s physical structure, and I know it is doing so out of resilience, not spite.

** Instagram is being incredibly difficult this morning and won’t let me post my step-by-step videos 🤷🏼‍♀️. SO THEY’RE IN MY STORY **

Decided to get creative yesterday in an effort to increase our veggie intake (always a struggle with kids).
• • •
So, this is what I came up & it was ah-mazing! And really very easy!
• • •
Here’s how you do it:

1. Preheat oven to 425* F.
.
2. Wash & chop up a head of cauliflower in relatively similar sized pieces.
.
3. Place chopped pieces on a large baking sheet & drizzle with a high heat fat (avocado oil, melted ghee, butter or coconut oil).
.
4. Sprinkle with a good pinch or two of Sea Salt and black pepper.
5. Roast for 15-20 minutes, or until slightly brown & roasted.
.
6. Meanwhile, chop up 4 cloves of garlic. Set aside.
.
7. Once cauliflower is roasted, remove from oven and melt 3 Tablespoons of fat (I used butter) in a skillet (I like cast iron).
.
8. Add chopped garlic to skillet and sautée until slightly browned (about 30 seconds).
.
9. Add roasted cauliflower to skillet & mash.
.
10. Add 2-3 Tablespoons of sour cream, creme fraiche OR non-dairy substitute AND 2-3 Tablespoons of shredded Parmesan, Asagio OR non-dairy substitute (like nutritional yeast) AND about 1/4-1/2 cup of heavy cream or non-dairy substitute (like canned 🥥 milk). Stir & mash!

SO THEY’RE IN MY STORY ** • • • Decided to get creative yesterday in an effort to increase our veggie intake (always a struggle with kids). • • • So, this is what I came up & it was ah-mazing! And really very easy! • • • Here’s how you do it: —————————— 1. Preheat oven to 425* F. . 2. Wash & chop up a head of cauliflower in relatively similar sized pieces. . 3. Place chopped pieces on a large baking sheet & drizzle with a high heat fat (avocado oil, melted ghee, butter or coconut oil). . 4. Sprinkle with a good pinch or two of Sea Salt and black pepper. 5. Roast for 15-20 minutes, or until slightly brown & roasted. . 6. Meanwhile, chop up 4 cloves of garlic. Set aside. . 7. Once cauliflower is roasted, remove from oven and melt 3 Tablespoons of fat (I used butter) in a skillet (I like cast iron). . 8. Add chopped garlic to skillet and sautée until slightly browned (about 30 seconds). . 9. Add roasted cauliflower to skillet & mash. . 10. Add 2-3 Tablespoons of sour cream, creme fraiche OR non-dairy substitute AND 2-3 Tablespoons of shredded Parmesan, Asagio OR non-dairy substitute (like nutritional yeast) AND about 1/4-1/2 cup of heavy cream or non-dairy substitute (like canned 🥥 milk). Stir & mash! . 11. 4. Pon una capa de salsa en el molde, luego una capa de calabaza y repite, la ultima capa debe ser de salsa 
5. Hornea a 180 C por 30 min
6. Mezcla el tomillo 🌿con aceite de oliva 🌳y deja reposar

It has now been well proven that there is a strong and direct connection between our gut and brain - they are in constant communication with one another. 🔅Cali born and raised! Moved to NY for grad school at NYU and I call Brooklyn home. I’m a chef and I’ve worked in nutrition ed and public health for nearly 10 (?!) years. Past food jobs include culinary educator, caterer, and baker at a vegan bakery 🍪.

🔅My ultimate comfort foods are pho, street tacos and Vietnamese crepes. Cali has my heart for all three!

I created Eat Well Eat Real to help folks enjoy tasty and healthy food, make lasting healthy changes without fad diets, and gain kitchen confidence.
