Well go ahead and add baker to my resume! .
Shhhhh let me let you all in on a little secret..... I used to hate 🚫cooking and baking. If I could eat out I would. If I could get it store bought, I would. My mom was a HUGE baker🎂 growing up and I guess it was never an interest to me until I was diagnosed with Hashimoto’s and Celiacs Disease. OMG you mean I actually had to watch the ingredients in the food.... .
5 years ago my life turned upside down and I have learned, I have failed, and I have appreciated every failure I’ve had in learning to cook and bake and use it as an opportunity to grow and be able to help my clients with similar issues. I used to be scared I would mess up and always thought people would hate my cooking, but you don’t know until you try.  You figure it out, you keep learning and if you want to be able to eat normal take the steps and have fun with it... What’s the worst that will happen? You will burn it or you will use salt instead of sugar. 😆 .
So now I love 💕 baking. I love being that mom who shows up with homemade goodies and most of the time they are healthy.... but I will for sure make anything for the most special little man in my life.... I’m so excited to celebrate our best friends little boy tomorrow as he turns 5 and if Jurassic Park is what he wants, well it’s what he will get!! Tell me this..... do you enjoying cooking and baking?

Progress is progress, but if you want results, you have to be consistent!

 This time last year, I had to stop running because my hip bothered me that bad. I went to physical therapy for about a month and can say today, I've been pain free since February! Trust, me! It has been very hard getting back. I have had to build up my miles and pace again, but I am continuing to see progress. •

Just a reminder, don't give up on something because you think it may be too hard or you think it's taking too long. Happy Friday! It’s a good day to celebrate being able to push past the challenges that our bodies sometimes give us. I never thought I would be able to push my body the way I have because of my autoimmune disease. When you have an autoimmune disease you learn to be in tune with your body and it’s needs. When I finally listened to my body I figured out a diet that worked for me, I learned very quickly that endurance is a struggle and I have to pace myself, but that doesnt mean I can’t achieve great results, sleep quickly became my best friend because without it I couldn’t train at this level, and I learned to celebrate overcoming the things that I thought I could never do with my autoimmune.

Autoimmune does not have to be a death sentence. Listen to your body, do what works for your body, and adopt a lifestyle that will help your body heal and thrive so you can live a quality life. #hashimotosdisease #autoimmunewarrior

Living in Austin it’s very easy to feel disconnected from the seasons. Our seasons are either hot or inferno for most of the year. To feel more in touch with the change of seasons I’m starting to create new family traditions. This is the second year in a row I’ve made fire cider as summer turned into autumn.

Last year J was a baby and this year he was able to interact with the ingredients. He smelled the fresh ginger, watched how turmeric stained my hands, and tasted a slice of lemon. I’m hoping as the years go on these grounding practices become a part of the fabric that makes our family.

⭐️ SELF CARE IS AN IMPORTANT PART OF YOUR HEALTH CARE ⭐️ .
Repeat that with me... Self care is an IMPORTANT part of your HEALTHCARE. That’s so easy to forget. We go to our appointments, we take our medications, we eat the way we should.. but we become stuck in those routines and forget to show ourselves self love. Sometimes self care is as simple as a much over due hair cut and color. Here lately I have really been feeling the effects of the stress from all of my appointments with the different specialists, physical therapy, different diagnostic tests, medications plus their side effects, balancing my two jobs and still having time to enjoy life. God always has control over the situations, but it’s easy to loose yourself in the craziness of life. This is especially true if you’re an autoimmune warrior. But that said, things could always be worse and I am truly blessed than I am not worse off than I am.

I have never had my hair professionally colored so this was a real treat for me! Since being diagnosed with Celiac and going gluten free a year ago, I’ve had some major hair, skin and nails issues. My body has been going haywire over all the vitamins and minerals that it’s been deprived of for so long. My skin and hair have taken the brunt of it. Because of that and my already dry hair, my stylist recommended color correcting a previous dye job (from last year... yup, I’d say it’s overdue!) by doing a natural looking balayage and blending the 3 colors together to give dimension. I’m in absolute LOVE! 😍😍😍

I officially have the best *health care* team with my GI, PCPs, endocrinologist, spine specialist, dermatologist.. and now hair stylist. 😉 I’ve found my tribe and they support and educate my in every way. Now hopefully I don’t have to add anymore to the mix.. 🤞

It’s rained pretty much our whole camping trip so far. I’d never tent camped in a thunderstorm 😂 today it’s been cold and windy AF, and yet...it has been the best weekend! It’s been a good reminder for me to be happy and present with what is. These s’mores aren’t hurting anything either 🙌🏼 (the last of my yucca crunch, @tazachocolate, and a little coconut butter 😍 inspired by @naturallylaura AIP camping blog post!)

18 months ago I started seeing an Endocrinologist for my thyroid. I had unstable levels and Hashimoto’s Disease- autoimmune disease that attacks the thyroid.  It causes some yucky symptoms. I have blood work and appointments every 4 months. Today at my visit my doctor told me there were no abnormal antibodies showing in my blood work- meaning no more Hashimoto’s!👊 Drinking my shakes and fueling my body with good food has made all the difference! I’m not making a medical claim that Shakeology reversed my autoimmune, but I truly feel that it had a part✨✨Who’s jumping on my “health train” with me?

As some of you know I was diagnosed with an Autoimmune disease years ago called Hashimotos.

Hashimotos is a disease where your immune system is attacking your thyroid gland. Which your thyroid gland is in control of everything in your body including your temperature gage, hormones, metabolic rate, memory, diagestion, etc.
**
I am starting a new diet of going gluten free and soy free!!
**
What gluten does to someone with Hashimotos, is once it enters the body, gluten will mimic the thyroid gland that your body is already trying to attack. So when gluten in the body mimics your thyroid in this situation, your body tries to attack by sending antibodies throughout the body and to the thyroid gland which is not a good thing.
**
Therefore I will be starting this diet to hopefully see a difference in how I feel and to see a decrease in inflammation! 👍🏽

So glad these are back in my life. I ran out of them, and didn’t put in another order til a month later almost. Could definitely tell a difference without them. My hair is looking dead, skin is drier, and I’m more anxious & scared at night. Also more tired, even though I’m still taking the 5000 iu dose of K2& VitD. Taking these asap. Thinking I was really missing out on the VitB’s. 🙌 🙏 🙌

Happy #facetofacefriday!! Before keto, weight watchers and many other diets failed me too many times. I started and stopped often. I felt more sick and tired on weight watchers than I did eating normally. Which made no sense to me. Yeah, I'd lose maybe a pound or two a month but super slow weightloss and super sick. Just was not for me. I don't think it promotes a healthy lifestyle, either. When I did it a piece of bread was 2 points and an avocado was like 8 points. It may work for some people, but for me it sucked. I'm glad I found something that works!

Living with a chronic illness is stressful enough. I already anticipate that I may feel aches and pains sometimes- I don’t need the guaranteed PAIN IN MY SOUL that would come with avoiding nachos. Ya know what I’m sayin’?!

Thankfully, Sweet Potato Fry Nachos are simple to make, too: 
Buy or make your own sweet potato fries and bake them in the oven (use package instructions or roast your own at 400 degrees for 25-45 minutes- the times vary, depending on desired crispiness). For extra crispy fries, soak the raw fries in a bowl of water for an hour before baking.

I topped my fries with:
Black beans (fiber, protein)
Low-fat cheese (calcium, protein)
Low-sodium salsa (vitamins, antioxidants)
Chopped green onions (vitamins, extra yumminess)
Nonfat Greek yogurt (protein, calcium, probiotics)

Also, sweet potatoes are a great source of Vitamin A (which is beneficial for our eyes, skin, and immune system) and fiber (which helps us feel full and keeps us regular 🙃).

Thankfully, Sweet Potato Fry Nachos are simple to make, too: Buy or make your own sweet potato fries and bake them in the oven (use package instructions or roast your own at 400 degrees for 25-45 minutes- the times vary, depending on desired crispiness). I was taken to the hospital via ambulance last night because I had a grand mal seizure. I remember the moments before the seizure but nothing during it. I literally threw salad on a plate, chopped carrots, celery, radishes, threw on some cooked chicken, added some pumpkin seeds that I’ve had for a few months 😳, and then drizzled with toasted sesame olive oil and coconut flavored vinegar. .

Doctor bullying is not OK. You may think: well they know more than me so their arrogance, small snickers under breath to your questions or any ‘attitude’ you receive is not Ok.  I have been busy working on an essay on this topic and will let you know the link when I post it live but for now...yes, this. I needed my medical records for insurance reasons but I went through the first few pages and one of the surgeons I met with to discuss my endo (who I declined as my surgeon well before reading this) wrote a few details to my GP after I met with her, as they do here in Canada. They give their assessment/report on the visit as it was a referral. She stated 3 subjective statements with consequences for my future healthcare providers. She stated I refused a hysterectomy (not true), that I was indecisive on a surgery date (no lady, I came to your office to book one) and that I was very dramatic in the office with my pain. This is unethical, unprofessional and a personal judgement call that has gone into my record. I will not be letting this go because there is a little more to this incident with my visit. Nobody needs to stand for this kind of judgement and bullying by a doctor. Was I dramatic with my Endometriosis pain and you, an Endometriosis Surgeon (specialist) is making this kind of a comment? If you have no respect for the women you are treating you need to retire your scalpel and take a seat. 💛 Do not stand for this, ladies. •

😯Bueno tengo que contarles lo mal que me siento hoy. Como recién hoy pude hacerme los estudios que me pidió el Gastroenterólogo y el Reumatólogo (vi la semana pasada a los especialistas) esta semana decidí incorporar los alimentos que había eliminado... Si bien el gastro y el Reumatólogo coincidieron en que es poco mes y medio de cambio alimentario para notar mejorías a nivel laboratorio... Yo quiero que den tal como cuando comía todo eso que me hacía mal.. por eso esta semana incorpore Avena... Y ayer tomé leche y comí pan con gluten... No saben el sinfín de malestares que tuve desde el miércoles a la fecha 😱

“You guys I’m in complete shock! I just had the most bizarre appt with my Thyroid Dr.
Back story: after years of battling chronic hives, fatigue, weight and metabolism issues, PCOS, etc... I was diagnosed with Hashimotos hypothyroidism in 2015. My antibodies were through the roof and my TSH was 43. I felt LIKE . CRAP.
I was prescribed medication and given suggestions on dietary changes and told I would have this the rest of my life. That same month, I had started new supplements in hoping to relieve my fatigue and sleep issues.
Fast forward to today. I sat in my doctors office while they dumbfoundedly looked at my most recent labs (which I had been unmedicated for 4 weeks prior during switching insurances and drs.)
They looked at me and said "well... you are a mystery. In all my years I have never seen this. You have completely normal labs. Your antibodies are negative and all your thyroid levels are normal. If I didn't know your history I would say you have never had thyroid issues or Hashimotos. I am completely at a loss as to how."
You guys... According to my doctor, I have basically REVERSED my Hashimotos, and for the most part I have a normal functioning thyroid... my most recent symptoms were likely due to low Vitamin D after cutting out dairy, and being overmedicated by a med they put me on assuming I needed it.

Hair loss, folks. It’s not going well. Over the past month or two it’s become quite overwhelming. At first i attributed it to my med mess up a few months and and my low calorie phase in DSK, but it’s not getting any better. This handful is after my shower, there’s also about 3 more fistfuls in the shower, more when I blow dry my hair, and everything during the day (a LOT). I’m getting desperate and freaked out. I’ve increased my calories, upped my protein, increased Vit D, use essential oils... next I’m going to stop a bunch of supplements and eliminate almonds (😭almond butter is life). Have asked to get my T3 tested since I recently switched to compounded dessicated thyroid. I’m at a loss and feeling so, so worried. There are so many symptoms of #hashimotos and I recognize this is my body talking to me, I just don’t know how to respond at this point 🤷‍♀️😣 trying not to stress more- that won’t help! a little #nonscalevictory for the masses! i think i’ve gone down a size in pants which is  exciting. my jeans used to be extremely tight on me which is why i’d hate wearing them and now my jeans are somewhat baggy and i have to pull them up every 3 minutes when i’m walking. my shirt size has definitely gone down too! super happy for this. my original shirt size was 4/5x (i like to wear baggy clothing 🤣 i was really a 4xl) and now i’m a 3x (and it’s baggy!) my pants size is down from 20 to 18. overall i’m so happy, but i have been having a few rough days here and there where i questioned why i did this. like last night when i threw up after eating some chicken. i’m taking everyone’s suggestions to heart and i’m going to try ground chicken. another suggestion was to chew and eat very slowly. i don’t think i’m chewing enough. either way - on to better things!

1⃣Looking at “normal” rather than “optimal” ranges.
Most conventional practitioners are taught to simply look at the “normal” ranges provided rather than looking deeper or looking at ratios of different metrics. These reference ranges can be quite large and normal for one person, may not be normal for the next.

2⃣Lack of specialized testing in conventional medicine.
Subtle hormonal imbalances (that can still make you feel “off”) aren’t being caught by the normal labs. Hormones, especially female hormones, fluctuate throughout the month. In order to *really* identify what’s going on, you must use a specialized test that takes into consideration where you are at in your cycle.

SUGAR FREE ALMOND BUTTER CUPS! I get sad at the grocery store because all of the cups have sugar added, so I decided to make my own 😍.

Ingredients:
⠀⠀
Almond butter ⠀⠀
1/2 Cup of melted Coconut Butter
⠀⠀
¼ Cup Organic Cocoa Powder
⠀⠀
MAKE ‘EM:
⠀⠀
🎉Using a double boiler, melt 1 cup of coconut butter in a glass measuring cup (stir regularly to avoid clumping/over heating)
⠀⠀
🎉Combine cocoa powder with coconut butter ⠀⠀
🎉Pour cocoa mixture into a mini muffin tin approximately 1/3 of the way
⠀⠀
🎉Place muffin tin in freezer for 10 minutes
⠀⠀
🎉Remove from freezer and add a layer of almond butter (I eyeball this part)
⠀⠀
🎉Place muffin tin in freezer another 10 minutes
⠀⠀
🎉Meanwhile, your cocoa mixture may have solidified, so put that back in a warm bath of water to melt it again
⠀⠀
Top off muffin tins with the remaining cocoa mixture and add to freezer for another ten minutes
⠀⠀
SO GOOD!  You could try making them AIP by subbing carob for cocoa and tiger nut butter for almond butter.

My sweaty eyebrows say it all really 😅 Just finished my dance workout and feeling really proud. Monday’s and Friday’s are my self-employed days working on my advocacy stuff, and when I finish at 3pm (as I treat it like any other work and have set times I do it), I get changed in to my sportswear and do a dance workout. When I first started a few months ago I couldn’t do more than 5 minutes without feeling exhausted but I’ve slowly but surely worked up to managing 30 minutes without much of a problem. Improving my energy levels and stamina is mainly thanks to getting a better grip of my diet and targeting my gut health. I’ve been focusing on that for almost two months now and I’m excited to see my functional doctor in a week or so to show her how much I’ve already improved. Also, my skin has cleared up again this week following an increase in the anti fungal for the Candida, and my eyebrows are really thickening out. What is goitrogens and do cruciferous vegetable cause hashimotos? 
Goitrogens are substances that disrupt the thyroid-hormon production. This will happen when the substances interfer with the iodine uptake and this trigger the pituitary to release more TSH that eventually can lead to goiter. 
Cruciferous vegetable include for example broccoli, bok choy, brussel sprouts, cabbage, cauliflower, kale, mustard and mustards greens, kohlrabi, radishes, ruccola, rutabagas, turnips. 
In smaller amounts even bamboo shiits, Peaches, peanuts, pears, pine nuts,spinach, strawberries och potatoes. 
Anyway cruciferous is rich in antioxidants, they are anticarcinogenic, antiinflammatory and in some way real superfood so instead of avoiding them overall you should only avoid them in their raw form as cooking them helps reduce the goitrogenic substances. 
Therefore a little boiled kale and broccoli now and then is just beneficial. The amount should be no more than 1 1/2 dl per day.

BROWNIE DE COCO, BROCOLI Y DÁTILES 🍞

Me la pedísteis mucho por stories, así que aquí la tenéis!!Recetita de las ricas, nutritivas y de las que los peques disfrutan sin saber que están comiendo verdura! 🆓Lácteos🆓harinas🆓gluten🆓 azúcares 🆓huevo🆓frutos secos!!! Apta para todos!! Que más se puede pedir???
🌿
Ingredientes:
🔸1taza de brócoli crudo picado.
🔸Media taza de harina de coco (no coco rallado que es más húmedo y suelto y no cuaja igual).
🔸3 cucharadas de aceite de coco.
🔸Opción vegana: 4 huevos de lino ( 4 cucharadas de lino por 12 de agua). O si lo prefieres 4 huevos animal.
🔸La parte grasa de una lata de leche de coco.
🔸Una cucharadita de bicarbonato.
🔸Pizca de sal sin refinar.
🔸1cucharada de algarroba (la nuestra es de @iswariofficial ).
🔸1cucharada de canela de ceylan (en @conasicocina tienes).
🔸Un puñado de dátiles normales troceados.
🔸2cucharadas de semillas de cáñamo (las mías las compré en @carrefoures y son de la marca @naturgreenoficial ).
🌿
Procedimiento:
Batir los huevos separando las claras de las yemas y batir bien las claras. Añadir el aceite y la leche de coco y remover bien.Por último añadir el resto de ingredientes secos batiendo bien. Verter la masa sobre un molde (yo los uso libres de PBA) cuadrado (para darle la forma de brownie) previamente engrasado de aceite de coco y decorar con semillas de cáñamo. Hornear 40 minutos a 175 grados (aunque cada horno es diferente así que mejor vigilarlo!!!). Cuando esté bien cuajado dejar enfriar 10 minutos y desmoldar.

💛 Self care can be boring at times, but luckily I enjoy grocery shopping. The things is however that it’s very draining and at the end of a shopping trip I am utterly exhausted. DEAD... But it’s very necessary for me to eat a LOT of fresh fruits and vegetables daily, so it’s worth it in the end. 🥦🍌🥕 I know that by stretching my limits, I will by able to eat what’s best for my body! I know to some it sounds silly that shopping makes me tired, but since my symptoms started showing up and my health decreased, “silly” things became so much harder. ALSO - It’s the beginning of our Chuseok or Korean Thanksgiving break here in Korea and we get the next 5 days off! I am so excited to spend some time with friends, eat good food, but also relaxing, sleeping and taking it easy. This time away from work is all about taking care of my soul, my body and listening to what my body needs. I need to learn how to take care of myself again. I tend to pour too much of myself into work and worry about things that are actually not that important in the long run. Stress affects me in a very negative way, causes more pain and it is not good for me or you. This true whether you are chronically ill or not. Self care is not selfish, it’s vital for your health and it’s not something to feel quilty about. Sometimes your health is more important than being busy. Keeping cardio to a minimum and allowing strength training to boost my metabolism. Sometimes you have to do less with Hashimotos disease or hard work will work to your disadvantage.

You may be wondering, uhm, what's carob? Well, I thought the same the first time I heard about it. I love chocolate, but I can't have it mainly because of the caffeine it contains. For those of you that can't have chocolate for whatever reason, here is a great substitute. It will never be the same, but it's pretty close to that delicious chocolaty taste.

Carob comes from a pod of a tree of the same name.  It is native to the Mediterranean The ripe pod contains a sweet pulp that is dried, roasted, and then ground into powder. It's flavor is unique. It's less bitter than chocolate. It has a naturally sweet flavor which you can smell as soon as you open the container. There's no added sugar because of its naturally sweet taste. 
Benefits:
-It's Gallic acid works as an analgesic, anti-allergic, antibacterial, antioxidant, antiviral &antiseptic.
-Improves digestion.
-Lowers cholesterol level in the blood.
-Doesn't  contain caffeine, so it benefits people with high blood pressure.
-Vitamin E helps in treating cough and the flu.
-Fights against osteoporosis due to its richness in phosphorus and calcium.
-Clears the voice and throat.
