Another weekend of fine company and fine wine has passed. The temperature is continuing to drop in Canada 🇨🇦 which means I needed a nice way to warm up🧣!
For me, nothing more warms up the soul then a comforting meal and fantastic wine! On my plate is a roasted halibut - which is a beautiful medium bodied, white flaky fish🎣! The halibut lays atop of a carrot and miso purée, shaved and roasted carrots, brown butter and a lovely parsley oil drizzly - if this doesn’t scream fall harvest and deliciousness then I don’t know what does🤤! Now... the crucial part, what wine to pair with this stunner of a meal? In the world of food and wine pairings, you’re faced with one of two decisions: a congruent or complimentary pairing🤔? A congruent pairing is when a wine and the food share many similarities; whereas, a complimentary pairing offers fewer similarities between the two. Both work, but it’s up to you to choose🤷🏻♂️!
I chose a complimentary pairing and went with an Oaked Chardonnay👌🏼! The reason this is complimentary is because the buttery flavours and creamy mouthfeel of the wine compliments the inherent butteriness of the fish and the way it was prepared! Where it injected new complimentary elements was the Oaked Chardonnay’s notes of baking spices, white stone fruit and soft citrus to cut the savouriness of the carrot and miso purée and brown butter! Does this scream #pourrecommendations or what😍?

This version is halibut puttanesca with a wonderful garlic and olive bite to it. Love this white fish but eat in moderation as the Eastern Halibut is protected and fisherman are very restricted with their catch. Pacific halibut is a more sturdy stock and more easily available.
