Salmon and zoodles for lunch 😍 It’s been too long since I made zoodles 👌🏻 I get into kicks sometimes where I eat them like crazy because they’re so easy to make if you have a spiralizer! I got mine off of amazon for like $10 I think 💯 And they only take a couple of minutes to cook 👌🏻 Top with your fav sauces and seasoning and you’re good to go 🙆🏼‍♀️ I recommend pairing it with salmon but that’s just a personal preference 😎 I was soooo sore today for some reason so I took an unexpected rest day (listening to your body will never let you down!) and instead walked to the grocery store to get a few things 🚶🏼‍♀️ Saved some gas ⛽️ and got some fresh air ☀️ Being healthy for me doesn’t always mean getting a good sweat in. This was our typical breakfast in Southern China. Their noodles are absolutely delicious and I have been craving them all week!

Most noodle dishes came with a super nutritious meat broth base but they obliged us picky eaters with a veggie stock (or so I was told!) 😂. We always had tofu, boiled egg and some kind of leafy green veg in there too.

Before eating you then added the “extras”; fermented green beans, pickled veg and a super hot and spicy pickled chilli dip (can’t wait to start experimenting with some of these recipes)

This local food was simple, incredibly tasty, highly nutritious and eaten everywhere we went 😃 I tend to make up most of my meals as I go along but I am making more of an effort to pay attention to quantities and ingredients. The low FODMAP ingredients are prepared in a way that creates a velvety, creamy and soft texture. This meal is particularly good for those who find hard, crunchy foods difficult to digest. My journey to recovery started with cutting out dairy and gluten from diet as it it has a knock on effect on my thyroid glad and can't be too careful what I out into my body. .

So this morning I was up super early, made myself a warm lemon with my usual 1tsp myo-inositol (good for my PCOS) & enjoyed an early yoga session before making an anti-inflammatory breakfast for a slower rest of the morning to challenge myself to relax & rest before 11am.  The key to my success with this was I cheekily popped my dressing gown back on over my yoga 🧘‍♀️ gear 🙈😂. Anxiety levels are moderate and with that, my tummy always feels bloated & my gut unhappy.  This morning I enjoyed carrot cake porridge with turmeric & cinammon.  Topped with blueberry coulis & mixed berries as they were on special.  My usual sunflower & a few pumpkin (support my hair growth) & cacao nibs are then sprinkled on top.  Warming & comforting! 
Porridge:
40g gluten free oats
Grated 1/2 🥕 
1 tsp chia seeds (added protein, antioxidants, manganese & fibre)
1 tsp maca root powder (my fertility & PCOS pal!) 1/2 tsp turmeric powder or some grated fresh turmeric 
1 tsp cinammon powder 
1 tbsp ground flaxseed
Almond milk 
Simmer slowly & you’ll start to see both the porridge thicken & the yellow of the turmeric come about.

Gold = inflammatory heaven 🙌🏻 A great balance of protein & low GI (gluten free) carbs, with no dairy in sight. 
Did you know that ‘chia’ is the ancient Mayan word for ‘strength’. They are superfoods now, but the Aztecs & Mayans used to add these into their food as a dietary staple. 
Maca root powder is also from South America, from Peru & is traditionally used to enhance libido!  But.  For us #soulcysters it has been said to reduce anxiety & depression symptoms.  I also like the thought of it helping to improve learning & memory as when my anxiety was at its worst, my brain used to feel cloudy & my memory was awful!  However, there is still a long way to go to determine the benefits, so I consider it as a bonus rather than a dietary must-have for me.

Natural, whole foods are so important to me now & my breakfasts allow me to play around with giving my body what it needs.  I am always grateful for having more awareness of my body’s needs as before I would completely ignore all signals.

Wether it’s walking, a gentle run, some yoga, a workout in the gym, Pilates etc. I find that walking is actually what benefits my body the most. It lowers cortisol levels, and doesn’t create inflammation. Also, I find it quite meditative, as I let my mind wander. I also like to listen to audio books or make my calls then! I think life is defined by movement, so as long as we keep that in mind, we’re good ✨👍🏼

Chocolate cups with almondbutter and banana, a favorite 😍☝🏻
Recipe ▪️4 tablespoon coconutoil
▪️4 tablespoon raw cacao
▪️ Some sea salt ( Add some sweetener if you don't like to dark chocolate) 
Filling: • 1 banana •4 tablespoons almondbutter 
1. Melt coconutoil and add cacao
2. Line a  muffin pan with 8-10 paper lines and add a spoon of the chocolate and place in the freezer
3. Mash banana and almondbutter togheter
4. Remove the chocolate from the freezer and add the filling and the rest of the chocolate.
5. Place in the freezer again until the chocolate is set. Then they can be transferred to an airtight container and stored in the freezer until ready to eat.

Granola is considered to be one of the healthy choices when supermarket shopping. But, aside from the good ingredients, supermarket granola is loaded with sugars and sweeteners which cancel out the benefits. 
The solution? Make your own. 
You only need a few simple ingredients to make delicious granola, and because it is made from “real” food, it satisfies your hunger much more than the sugary versions. Plus, it tastes amazing so you will never want to buy the supermarket stuff again. 
INGREDIENTS:
1 cup raw almonds, chopped.
1 cup raw pecans, chopped.
1 cup raw walnuts, chopped.
1/2 cup unsweetened shredded coconut.
1 teaspoon ground cinnamon.
1/2 teaspoon sea salt.
3 Tablespoons coconut oil.
1 teaspoon vanilla extract.
1 dropper full liquid stevia (5 drops) optional as the pecans sweetened it enough.

METHOD:
Heat oven to 300 degrees F / 148 dg.
Add all the nuts, shredded coconut, ground cinnamon.
Place the coconut oil, vanilla extract and stevia in a small saucepan and heat over medium heat for a couple of minutes until liquids are fully combined.
Pour over dry ingredients, stir to combine.
Line a baking tray with parchment paper and evenly spread granola on it.
Bake for 10-12 minutes, then stir granola and bake for another 10-12 mins.
Serve with unsweetened almond milk or coconut milk and fresh berries of choice.
Store leftover granola in airtight container for the fridge for 3-4 weeks or in the freezer for up to 3 months.

Oats are so warming and delicious, they also contain beta-glucan, a soluble fibre which dissolves in our digestive system and forms a gel. It has been shown that this may help lower our cholesterol levels and it can help to support our digestion in many ways including helping things slide through more easily helping with constipation. As soluble fibre absorbs water is may also help if you suffer with diarrhoea. 
I’ve topped mine with strawberries and banana here to add some sweetness and extra essential nutrients but experiment with toppings, the choices are endless. I’ve also included some peanut butter here which contains protein and healthy fats which can help to keep us full until our next meal. You know I'm all about simple changes... well, if you are not completely sure about their importance yet, let me tell you more about this with A SUCCESSFUL STORY FROM ONE OF MY CLIENTS!⠀⠀ .⠀⠀ She is a busy mum and I've suggested her to start making smoothies as breakfast or snack to easily include more nutrients into her diet, but also to help her create a time during the day in which she can be focused on herself and her well-being. AND SHE'S HAVING BRILLIANT RESULTS!⠀⠀ ⠀⠀ A few days ago, she sent me the photo of a smoothie and told me:⠀⠀ ⠀⠀ "something that I really love about this journey is the idea that with these small changes you can truly take care of your body.. I mean, when I'm at home drinking my smoothie, I really think that I'm doing something good for myself! Often we give our poor body so much random food that gives us a sort of immediate satisfaction.. I don't want to turn into someone who's obsessed with healthy stuff, but I BELIEVE THAT YOU SHOULD FIND A BALANCE"⠀⠀ .⠀⠀ And again: "I've also noticed a change in my approach to grocery shopping... I really look for things that I need rather than just buying stuff because it's on offer"⠀⠀ .⠀⠀ I couldn't be happier to hear these things from her, because she managed to start with one small change (the smoothies) immediately after her first consultation - in a few days, she started to notice some differences and decided to use them as motivation to keep moving forward! During her first consultation, we talked a lot about her relationship with both food and self-care, then together we planned the first steps to start building healthy habits that she can fit into her busy schedule⠀ .⠀⠀ After only 2 weeks:⠀⠀ *she is more aware of her food choices⠀⠀ *she has created the habit of having a daily smoothie⠀⠀ *she started to be creative pairing different ingredients⠀⠀ *she included new ingredients in her weekly shopping⠀⠀ *she wants to start changing her snacks too⠀⠀ *she is getting her family involved in her journey⠀⠀ *she has more energy and focus⠀⠀ *she is able to notice her progress and be happy about it!⠀⠀ .⠀⠀ 🌟When you put some effort into what you really want, AMAZING THINGS CAN HAPPEN!🌟 [continue]

I kicked this morning off with a brisk walk around the park with my dad 🌳 We were out for an hour, and it was hard work getting up the hill at the end 😅 I haven't been doing much exercise lately, so it was great to get my heart rate going.

It is a rare treat that I get to spend some 1-on-1 time with my dad because he is always working! He is my number 1 inspiration for working hard for what you want in life. His favourite saying is: "It's funny! The harder I work, the luckier I get" 😉

I definitely do not look like this right now! I'm all snuggled up in my onsie 🤗💕 Today I am going to....leave the house 👏🏻👏🏻👏🏻😂 It's almost been a week since I last left the house and the main reason I'm adventuring outdoors is because I need to buy more FOOD 😅🍋🍌🍓🥕🥒 But I'm also on a mission to find a new pair of black leather boots as my trusty ones failed me by getting a hole. I've been risking it and wearing them, hoping that it's not going to rain. But I don't think I can get away with that for too much longer. I'm either going to get the exact same pair that I'm wearing in this pic: swap navy suede for black leather....or something a bit looser like my old ones 👢
