Seriously loving this recipe. 
It's meant for biscuits but translates well to sweet or savory scones and it's an overnight ferment so it is easy on the digestion if you don't do amazing with flour!

CHRISTMAS IN A BOX! 🎄🎄Husband came home with a box of these gluten+dairy cranberry and orange tiffin bites yesterday!! Major brownie points for him! They are bloody delicious and so Christmassy tasting! You can massively taste the cranberry! Obviously I had already eaten half of them before I got around to photographing them-because that’s the kind of professional I am. Other than my costa mince pie, this is actually my first Christmassy purchase! I’ve actually been very restraint. What are you most excited to try this Christmas? The cafe by me is doing a gluten-free turkey cranberry sandwich and very tempted to treat myself tomorrow!

Ingredients:
1 tbsp coconut oil
3 cups chicken bone broth
1 13.5oz can full fat unsweetened coconut milk
3/4 cup chopped green onions
1 tbsp curry powder
1 tbsp minced peeled fresh ginger
1packet BETTER//BROTH™ Coconut Curry
3 cups shredded cooked chicken
6 oz baby spinach leaves
3 tbsp fresh lime juice
1/4 cup chopped fresh cilantro

Instructions:
1. Heat coconut oil in pan over medium-high heat.
2. Add green onions, curry powder, lime juice, and ginger to pan.
3. Sauté 1 minute, stirring constantly.
4. Add chicken bone broth and bring to a boil.
5. Add coconut milk and chicken and reduce heat
6. Simmer for 10 minutes.
7. Add Spinach and cook until spinach wilts (2-3 minutes.)
8. Remove from heat and stir in fresh chopped cilantro and BETTER//BROTH™ Coconut Curry.
9. ENJOY!

I don’t spend time counting calories or obsessing over how many grams of this or that is in a particular food or meal. However, every meal I have, I try to approach it as an opportunity to nourish myself. I make sure i have a colourful range of wholefoods in my fridge each week because it allows me to easily create delicious meals that tick all of the “nourish me” boxes. Healthy fats, quality protein, complex carbs, fibre, fermented goodies for gut health, vitamins and minerals - it doesn’t have to be a complex dish.

And to make my life just that little bit easier, sometimes I prepare and think ahead. Like the other day I made an extra big batch of my 4 Ingredient EGG FREE (fermented) pancakes/ wraps then stored what we didn’t eat in the fridge. The next day, I simply reheated them in the oven while I got the fillings ready (basically whatever was in the fridge at the time). This took all of 15 minutes to make. Real food doesn’t have to be hard or complicated. It just needs to keeps me satisfied until my next meal 😂. I know that eating well can seem overwhelming with all the different information available these days, but remember how simple good food from nature is and you’re well on your way to a less stressful time with healthy food.

Start eating meats that are roasted and grilled (Do NOT barbecue or fry). Avoid bits that are too brown or burned.

Eat cooked vegetables or fermented vegetables/sauerkraut with cooked meats.
.
Introduce a few spoonfuls of freshly made carrot juice with NO fiber (filter through the cheese cloth).
Can be diluted with warm water, mixed with home-made yogurt or whey.
Chew the juice every mouthful. .
After a full cup of carrot a day is tolerated, try to add it to juice from celery, cabbage, lettuce and fresh mint leaves.
Drink the juice on an empty stomach first then in the morning and the middle of afternoon.

Baked bread can be made of 1) nut flour, 2) eggs, 3) piece of fresh winter squash, zucchini, or marrow peeled, deseeded, and grated, 4) fats (ghee, butter, coconut oil, goose or duck fat) and some salt.

Apparently sunflower seeds are the new cashew?! I would have to agree - less expensive, lower in FODMAP’s, and higher in fiber, protein and iron! Plus when you soak and blend them they become a creamy, dairy-free substitute for dips and sauces. So, I started experimenting👩‍🍳.... Smoky sunflower seed dip🔥🌻 Creamy dip for fries, chips, or crackers! Drizzle on tacos and soups! 
Ingredients:
1/2 cup raw sunflower seeds
1/2 tsp smoked paprika 
1/2 tsp asafoetida (available at Superstore and most South Asian markets) 
1/4 tsp salt 
1 tsp Bragg’s 
1 Tbsp nutritional yeast 
Juice of half a fresh lemon 
1/3 cup plant milk (I used almond-coconut) 
Soak sunflower seeds in boiling water for ~10 minutes. Drain liquid. Add all ingredients to a blender or food processor and blend until smooth. Garnish with a sprinkle of paprika or fresh herbs. 👩‍🏫 Would love to know what you’ve tried making with sunflower seeds? .

“I wish I could be a do-it-all-woman”, I thought as I sat down exhausted from a long day of physical labor looking at my schedule for the evening which involved a dinner party.⠀⠀⠀⠀⠀⠀⠀⠀⠀

Whoa. After “living” with automatic thoughts like that for my 1st 30 yrs, I’ve spent at least the last 10 working on upgrading my thought patterns so I’m surprised to see that one return.⠀⠀⠀⠀⠀⠀⠀⠀⠀
.⠀⠀⠀⠀⠀⠀⠀⠀⠀
But that’s just it. Those thoughts are more frequent when I’m worn out physically, mentally, and emotionally. And that’s exactly why I skipped the dinner party this time to take care of myself.⠀⠀⠀⠀⠀⠀⠀⠀⠀
.⠀⠀⠀⠀⠀⠀⠀⠀⠀
Because that’s now my deliberately designed version of a “do-it-all-woman”. With post-traumatic stress injury symptoms that like to visit from time to time, I require a certain amount of self-care to bring the best version of my SELF to LIFE for myself and for others.⠀⠀⠀⠀⠀⠀⠀⠀⠀
.⠀⠀⠀⠀⠀⠀⠀⠀⠀
To maintain this level of health for the only body I have, this time I thanked my mind for worrying about offending the person having the special night because I understand caring about that.⠀⠀⠀⠀⠀⠀⠀⠀⠀
.⠀⠀⠀⠀⠀⠀⠀⠀⠀
And I thanked it for its fear of missing out because I appreciate that drive I have to connect and create. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

Instead, I consciously chose to get my bum outta bed and into the tub to soak in some magnesium flakes with some lavender essential oil.⠀⠀⠀⠀⠀⠀⠀⠀⠀

And when I still felt the fear, guilt, or shame throughout the evening, I thanked them for stopping by as I took a slow, deep breath to calm my thoughts and nervous system.⠀⠀⠀⠀⠀⠀⠀⠀⠀

I created this beauty for lunch the other day using up the random bits of fermented fruit that was floating around in my freezer. It was a mix of cultured banana, papaya, mango and berries + a good dollop of coconut yoghurt, collagen, vanilla and rhodiola. I decorated it with coconut yoghurt, strawbs, cultured raspberry coulis (recipe from GUTALICIOUS) frozen into ♥️♥️♥️’s and a little sprinkle of cacao nibs and coconut on top for texture. I created this beauty for lunch the other day using up the random bits of fermented fruit that was floating around in my freezer. It was a mix of cultured banana, papaya, mango and berries + a good dollop of coconut yoghurt, collagen, vanilla and rhodiola. I decorated it with coconut yoghurt, strawbs, cultured raspberry coulis (recipe from GUTALICIOUS) frozen into ♥️♥️♥️’s and a little sprinkle of cacao nibs and coconut on top for texture. Look at that gooey scramble but the Salmon.. just wow! Raspberry vodka & blueberry infused from @thepishedfish It was the tastiest salmon I’ve ever had, just look at that colour. 
Having had their cakes at Broadway Market I had no doubt it would be epic but it surpassed my expectations, the service was fantastic, nothing was a hassle & it has the cutest atmosphere! & Milo the gorge cafe pup even popped in to see us too! 😍

Legumes (i.e. beans, lentils, chickpeas) are a fantastic meat substitute offering us the benefit of being a good source of both carbohydrates and protein AND are the perfect food our gut probiotics need to thrive and flourish! I tend to use legumes a lot in our dishes as I’ve never been a fan of processed meat substitutes that are currently on the market. Plus, my motto is “keep it simple!”. If you have issues tolerating legumes, they shouldn’t cause an issue at a 1/4 of a cup cooked. ⠀

This is a #glutenfree, #dairyfree, #lowfodmap SAUSAGE ROLL!! I've not had a sausage roll in over a year so this weekend I set out to rectify that and made a batch of these bad boys. The pasty is store bought but I made the filling myself with 100% pork mince, a free range egg, gluten free breadcrumbs, sage, salt, white pepper and tomato puree. Lo que necesitas saber es que son: “COMPLETAMENTE VEGANOS/ y AMIGABLES PARA EL INTESTINO!” ✅
Los French toast son de los recuerdos de mi infancia. De comérmelas cada vez que viajaba con mi familia y las ordenábamos en los restaurantes. Este es prácticamente lo que me hizo despertar y con lo que probablemente sueñe hoy por la noche jejej Too muchhhh? Nunca es suficiente😂(cuidado☝🏻)Lo hice al reojo así que les comparto los ingredientes: leche de coco, azúcar de coco, aceite de coco o mantequilla vegana con probioticos, banano, linaza molida, canela, cardamomo, jengibre y cacao. Cassava Waffles with Coconut Whipped Cream! .

My Mom stayed an extra day because of weather. She’s leaving this morning, so we had a treat! I found the old waffle iron in a thrift store yesterday, heats higher and cooks thinner, so it’s perfect for Cassava waffles to prevent the gumminess. .

1/2 cup Cassava Flour
1/2 teaspoon of salt
1 teaspoon compliant baking powder
1 Tablespoon compliant sweetener (I used swerve)
1 teaspoon spice (I used pumpkin pie spice and cinnamon)
Mix together. .
In separate bowl:
.
Lightly beat 2 room temp compliant eggs. 
Add 6 Tablespoons compliant milk (I used goat) and 3 Tablespoons compliant oil or melted coconut oil. Mix the wet and dry together. As with most PP recipes, let dough rest a bit before using. About 10 minutes. Then cook according to your waffle iron. Cassava waffles usually take a little longer to cook. .

PUMPKIN SEED MYLK 💫
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
-1 cup raw pumpkin seeds
-3 cups filtered water
-1 tsp pure vanilla extract
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
Soak pumpkin seeds overnight in room temp water. Or, cover seeds in boiling water and soak for 10-25 minutes if you’re short on time. Drain + rinse seeds, then combine with filtered water and vanilla in a powerful blender or food processor (I used my @ninjakitchen blender). Blend on high until smooth and creamy, approx 5 min. I don’t strain seed milk to keep it extra creamy and preserve the nutrients.
Store in a sealed jar in the fridge for 3-5 days. ✨

This milk is thick and creamy. I love adding it to my lattes, smoothies, or porridge bowls. It’s also a wonders way to consume pumpkin seeds while seed cycling! #SeedCycling
