For me, this dish is everything Italian food represents. Spaghetti all’ amatriciana. Six simple but quality ingredients:
1) Dry spaghetti
3) Chilli flakes
6) Extra virgin olive oil
No matter how many times I cook, it still amazes me how the most minimal and simple ingredients can create something so delicious. If you know the basic rules of how to cook pasta you will win every time. .
1) Give your sauce time to reduce. Cook away the acidity from the tomatoes and you’ll be left with something rich and sweet
2) Take your pasta out at least 3mins before go time and toss, toss, toss to release the starch and emulsify the goodness from the sauce and the starchy pasta
3) Pasta water is liquid gold!!! NEVER throw that away. Ladle the water into the pan while you’re tossing your pasta for a silky smooth finish
4) Mantecato! Butter, cheese, extra virgin olive oil. Did you say fats? Yes, but a little goes a long way and will take your dish to a new level!
