Had this sandwich for lunch and I am so happy I took a picture before I ate it because it WAS SO GOOD! Maybe it’s just because I haven’t been able to taste anything for the past couple of days but all the flavors complimented each other so well, I’ll definitely be remaking this during the week. Again, just proves you don’t need to over complicate your meals for them to taste delicious and nourish you sufficiently!
Sandwich with 1/4 of a large avocado mashed (add lemon/lime juice to keep it from going brown) + spinach + cucumber slices + cherry tomatoes + leftover grilled chicken + @central_market roasted pepper hummus in between 2 slices @daveskillerbread power bread😋

Kale masajeado con limón + cebollas encurtidas + pollo con salsa de gulupa + champiñones salteamos con vino blanco, ajo y ghee + acelga con limón + maduro asado + noodles de zanahoria + almendras.
GRILLED CHICKEN SKEWERS 😍😋
Chicken breast cut into large cubes, marinated for about an hour with generous amount of olive oil, minced garlic, hot paprika, natural yogurt, tomato paste, lemon juice, salt, black and white pepper.
1 kg chicken breast cut into large cubes
3-4 Tbsp of plain natural yogurt
3-4 cloves garlic minced
1 tsp hot paprika
1 Tbsp tomato paste
1/4 cup lemon juice
Salt, pepper to taste
Vegetables for grilling: season tomatoes, coloured peppers and onions with olive oil, salt and pepper.
Quinoa Salad: cooked quinoa mixed with chopped fresh coriander (cilantro), spring onions, fresh chillies, red onions, pomegranate, mixed coloured grape tomatoes with a dressing of extra virgin olive oil, lemon juice, grape or pomegranate molasses (optional) or balsamic glaze.
1- Soak skewers into a baking dish filled with water until ready to thread chicken.
2- Preheat oven on medium broil. Line a large baking sheet with foil. Set aside.
Thread the chicken onto the pre soaked wooden skewers.
3- Transfer to prepared baking sheet with the seasoned vegetables and place in oven to roast. Roast for 20-25 minutes or until the chicken is cooked and the vegetables are fork tender flipping half way through.

Also, Andheri was in a dire need of a place that serves Healthy Food and @meatsandgreens, a cafe which has opened up 4 Months Back in the lanes of 7 Bungalows, serves some amazing dishes for the Health Freaks, which are not just healthy but delicious too! 😋
In the dish pictured, the Chicken Breasts are marinated in Indian Herbs like Coriander and Pudina, and then Oven Grilled! It is served with a side of Lettuce Salad and Chermoula Sauce! The flavours were bang on and this was one really innovative and healthy Chicken dish I have had till date! 😍
