Today I physically went shopping for the first time since July(we've been using Shipt 🙄). Anyway, I knew I was going to be flooded with memories of my mom, and how much she loved going to Meijer and buy approximately one thousand mangoes whenever they were 5 for $5, like today(great deal, really! And avocadoes too!). It was almost like a hobby for her, I swear; buying groceries upon groceries that she would then turn to around and cook and feed anyone that walked through her door; welcoming them with open arms and a hot plate of food. Remembering all of this, made me smile, but it made me sad, made me not even want to go. Thought about going to Kroger, maybe. But I have been a Meijer girl since the days of yore, so in I went. Within a minute of scrubbing my cart down with a Purell wipe, I grabbed some mangoes, thoughts of my mom filling my head, and as I turn around, I see this. Tears almost instantly. I firmly believe in signs being all around us(ala Fools Rush In. If you haven't seen it, watch it. Selma Hayek, Matthew Perry, Vegas, it's all very good.), and I know this may just look like a very creative produce person got bored, but I think this is a sign from my mom. Reminding me she is always with me and showing me her love, even though she's gone. That she will always be in my heart and in the heart of those who knew and loved her. I love you mom, and I hear you loud and clear. ❤
Creamy Coconut Stew🍲
Delicious & full of healthy fats 🥥.
Tofu, Broccoli 🥦, Mushrooms, Ginger, Garlic simmered in coconut milk spiced with tomato puree, chilli powder, turmeric and salt. .
You can use red chillies or green chillies for heat if you don’t have the chilli powder. .
In a pan, heat coconut oil and sauté chopped white part of green onions, broccoli, stalks first then florets, ginger, garlic, mushrooms, salt, turmeric powder, chilli powder, 1 tsp tomato purée and add 1/2 cup of coconut milk and cook till vegetables are cooked.
Add Tofu slices and pour 1/2 cup more coconut milk. Simmer, adjust salt and add freshly cracked pepper. Switch off the flame and sprinkle green onions. Yummy 😋 Creamy coconut stew/curry/soup is ready.
Comforting and filling dish! You can have a small bowl of cooked Jasmine rice 🍚 along with this prep. Do add few drops of freshly squeezed lemon/lime juice. .
This is the super easy version close to a Thai yellow curry but you don’t need the kaffir lime leaves or galangal!
Throw in whatever leftover herbs that you have to pep up the aroma. .
Can add peppers, baby corn, cauliflower, snap peas, carrot, beans, peas or any squash of your choice.
