To prepare this moreish Greek fried cheesy bread, simply roll out the flat bread dough and fill with of course some good quality Greek feta cheese @dodoni_feta, add fresh baby spinach, fold and fry the flat bread in a little olive oil for a few minutes on each side until crispy and golden. A crowd pleaser every time!
Combine the following ingredients to make a soft dough and allow to rest for 30 min, then divide to make 8 tiropsoma:
1 x 8g sachet instant dried yeast
pinch of salt
1 teaspoon caster sugar
3 cups plain flour
2 tablespoons olive oil (see my story for more pics )
300ml warm water .

A satisfying alternative to meat.... indeed! I have become such a huge fan of these beans. I recently bought mine from @thesourcebulkfoods but @wholefoodmerchants also stock them. 2 medium size beetroot
200g Adzuki beans soaked
1 bay leaf
1 sprig of thyme
Salt and black pepper
200g greek feta
For the parsley vinaigrette
1½ cups of fresh parsley
2 tablespoons extra virgin olive oil
2 tablespoons white wine vinegar
½ teaspoon salt
A pinch of sugar
Soak the adzuki beans overnight in cold water.
Preheat your oven to 200C. Wash the beetroot then wrap the beetroot in aluminium foil and place it on a baking tray. Bake for 45 minutes or until the beetroot is tender (but not mushy, it should still have a bite to it).
Once the beetroot is roasted, peel it and chop it ready to be used.
Put the soaked beans in a pot together with the bay leaf, thyme and a generous pinch of salt. Cover the beans with cold water and cook for 45 minutes or until tender. It is important to use cold water so that the cooking is even.
Once the beans are cooked, drain and wash them with cold water to prevent them from cooking further. Remove the bay leaf and thyme.
While waiting for the beans and beetroot to cook, start on the vinaigrette.
Using a food processor, put in the parsley (including the stalks), oil, white wine vinegar, salt and sugar, and blitz them. Upon returning to Aus, I was surprised to learn that like champagne, in the European Union, feta can only really be called feta, if it follows strict PDO (Protected Designation of Origin) methods. This rule however doesn’t apply in Australia, so any type of milk and any method can wear the feta name. @Epirosaustralia isn’t one of those fetas, phew! It’s made from happy goats and sheep that graze freely upon the Greek Epirus hills, giving it a distinct flavour. When I tried it, I thought its sourness would make an epic dip paired with something sweet. You’re looking at my whipped feta, pumpkin skin and carrot smash, with a touch of honey and cumin.
That day I experienced something new: I attended a famous #greeknight , where they served traditional&delicious #greekfood .
Even though they served seafood - which I don’t prefer that much) - I had #greeksalad and #souvlaki (popular greek meat often grilled with vegetables on a skewer). It would’ve been a shame if you hadn’t gotten a piece (or more) of #greekfeta white cheese. Of course I couldn’t avoid wine 🍷🍢🥗🧀🥨
