We all have an “unconventional” quantity of raw cream from yesterday’s milking with our morning tea-this cream is our first, sometimes even second meal of the day. After that, I skim every last drop of remaining cream to save for ghee making. The milk we don’t drink today feeds kefir grains, becomes cheese, and/or feeds our grass-based pigs.
This is ghee, a shelf-stable, rendered butter, and the primary fat and cooking oil my family eats. It’s made every day by the four of us, the cows that live here, grass, microbes, sun, rain...and on and on: a sacred gift from this patch of Earth.

They are still going to be eating grass(silage), it's the grass we harvested in the early summer and autumn. The grass outdoors is still growing slowly and will be ready for them to start grazing again towards the end of January. Mother nature is very kind to us here in Ireland 🇮🇪, sometimes we don't realise how lucky we are☘️
No school today. Baby wakes up at 6:30 anyway. Bake gluten free banana bread, realize you have to go before it’s going to be done, leave it in the oven with the oven off, go to CrossFit, hope the bread can continue baking when we come home. 1/2 cup ghee from grass fed cows
1 cup organic coconut sugar
2 @vitalfarms eggs
1 tsp organic vanilla extract
1/2 cup organic sour cream from grass fed cows
1 cup very ripe mashed bananas
1 1/2 cup @kingarthurflour gluten free all purpose flour
1/2 tsp baking soda
1/4 tsp pink Himalayan sea salt
1 tsp aluminum free baking powder
1/4 cup organic chopped pecans
Pour in a greased a loaf pan (I used glass) and bake for 1 hour at 350. 🍌
This is a beautiful creation by our cheese maker @jgavellan who created a naturally blue cheese.

It’s so impressive to see the improvements my friend and colleague Donna is making on the Heifer Ranch. All this land was recently acquired back from a longtime lease. On the right is the land as it was reacquired - brown, neglected, overgrazed. On the left is the land Donna is revitalizing - green cover crops, increased diversity, rotational grazing for the grass-fed South Pole cows come spring.
Today as we picked up our raw milk, one of the #cowgrrrls who runs this grass fed dairy was heading out to canvas ahead of Election Day. We are super grateful for our farmer friends who raise good food and advocate for everyone. Sam is also grateful for a guaranteed weekly visit to see the cows. 🐄🐄

(may be useful for UK ketoers) - UK ethical and small-scale Hook & Son sell beautiful, honest 100% grassfed butter which you can order online and have shipped to you at a relatively small cold courier fee. It's the dairy we use and it is so very much worth it!! They normally stock raw (ie not pasteurised) grassfed dairy (GF for grassfed) but at the moment, until feb2019, all their dairy will pasteurised BUT NOT HOMOGENISED.
Y'all know that Kerry gold butter is not actually GF and Anchor butter, the only alternative, is mass produced on an industrial scale and obviously pasteurised and homogenised.
Unpasteurised raw milk obviously has countless benefits over pasteurised (therefore no longer raw) milk. Raw milk (from TRUSTED, safe farm sources) contains the enzymes which the gut requires to digest the difficult substrates in the dairy. We know that the homogenising process causes additional inflammation - so this GF pasteurised non homogenised butter, milk and creme are the ones we use in the absence of their better, raw companion products.
