We are making ‘Raungi’ (black eyed beans curry) as one of the dishes on our vegan Thali platter tonight. A Punjabi favourite, this is a dish Jasmine’s Dadima (granny) made so well that she says she can still taste the flavours just thinking about those times! #vegan#grannysfood
As we embark on a new culinary journey at #whiskysamba , which stands on the 3 pillars - Quality of ingredients, bolder flavours which match the huge array of fabulous Whiskies and evoking nostalgia, here’s for the very first time introducing one of its dishes.
I am hugely excited with this menu because apart from doing the kind of food that people have seen me cook earlier, me and my team have tried to push our boundaries a lot more this time and tried to offer you a much more sustainable experience, with huge emphasis on the supply chain and quality local and global produce.
The second and the much exciting part for me personally is the “Nostalgia” section of the menu where for the first time ever I am doing food from my memory with my own twist and personality incorporated. The food that I have grown up eating from my Mom, Grand mom, my mom’s friends, my travels and personal experiences.
Here’s introducing “My Grandmom’s Pumpkin” - Garlic oil compressed Pumpkin from the farm of Anantara, sous vide and finally toasted with a chilli & spice rub, served with a sauce made of onion seeds, roasted onions, candied mango and my Granny’s spice mix. We are serving this with fresh goat cheese, beet crisps and a delicious Avocado flatbread.

Veganized my granny's recipe for this delicious tenderized steak stew she makes and serves with pasta or mash. I always loved loved this dish, it's actually a tomato base sauce that makes it so delish. But since going vegan I assumed I would never have it again. Boy was I wrong! I made the stew exactly like she would but instead of steak I threw in some garlicky veggies. Obvi it doesn't taste exactly the same 😂 But it was absolutely delicious and reminded me so much of the original dish! Try veganizing something that you love, it's so easy! Granny’s infamous Big and Mini Lamb Moussaka- all ready for a fun filled, fantastic family night!!! Big thanks to the @hairybikers for their delicious recipe! I always find that lamb mince is a great alternative to beef mince- for the children’s pie I always do 1️⃣50:50 mince: lentils, 2️⃣use homemade stock, and 3️⃣use water/ extra stock and tomatoes instead of the red wine
