Last nights dinner! Bake chicken tenders, asparagus and homemade biscuits recipe from @californiacountrygal grain free cook book! My son said this was the best bread he has ever had and wants me to make it every day lol 🤗 .
. Also made homemade nomato bbq sauce i have not had bbq sauce in a long time! It was amazing!
. 2 med. carrots cut up, add to a sauce pan add just enough water to cover the carrots. Add 2tbsp coconut sugar, 2-3 tsp garlic powder chop and Add 2 very small beets (size of golf ball the other was a little smaller) boil till the veggies are really soft. .
. Let it cool few min pour into blender and add 1 garlic clove 1-2 tsp chili powder, 1/4tsp mustard powder, 1-2tbsp honey, 1/3 cup apple sauce , pinch of salt you can add pepper my kids don’t like pepper in it makes it “spicy” .
. Blend till texture is really smooth I did have to add a little more water and blend again. .
It’s all about balance right? Tonight we used our 3 remaining #butcherbox#grassfedbeef patties, roasted up some radishes, potatoes, sweet potatoes, and red onions (compliments of @crajevac) and tossed a salad with greens from @freedomfarmersmkt with walnuts, lemon juice, olive oil, ACV and sea salt. My carnivores were happy. ☺️
Sometimes the unplanned dinners are the best! I saw some organic chicken legs in my freezer so I popped them in the crockpot with some primal paleo adobo seasoning. 🍚 cauliflower rice

🥕 carrot mash with cinnamon and a little honey
🥗Yellow bell pepper(she wouldn’t touch this🤷♀️)
I’m trying to do more veggie abundant dishes lately and keep the grains and meat to a minimum. But sometimes the rest of my family and I have to go in slightly different directions. Swipe left to see my quick fix for my meat lovers. Tonight we had sautéed okra and carmelized onions in almond meal with Hain’s iodized sea salt, and garlic. On the side, cauliflower rice with rice vinegar, salt and walnuts with a squeeze of 🍋. Then, I added a few slices of uncured Salame from Italy to the side. I trust meats, especially pork, from Italy far more than I do from mass produced U.S. meats. But truthfully, I should be getting any meat from a local farmer to ensure it’s quality and nutritional density.
Whole 30 day four dinner courtesy of a juicy and delicious @butcher_box ribeye, broccoli salad from @primalpalate and a good, old fashion cucumber tomato salad with @primalkitchenfoods Italian dressing. Side note: I’m definitely in the “kill all the things” stage. But a day at the jersey shore made it a little less brutal 🌊

Last nights dinner was so easy to throw together because I used the crock pot! Threw it together in the morning and by dinner time a delicious smell was all throughout the house. Here is what’s on our plates.
🍖Bison Roast seasoned with primal palate adobo seasoning
🥙lettuce with avocado,apples, walnuts and EVOO
🥗peas with ghee and sea salt
🥕🥔carrots and potato from roast

(I know. You wish you could claim this illustrious title for yourself. It’s the stuff we dream about as kids. 😜)
But my #grainfree journey this past year really made me appreciate how wonderfully versatile this stuff is!
Mix it up in a tacoless taco bowl, top it with marinara and sausage, smother it with homemade coconut curry 😋, turn it into riceless fried rice, OR try this tasty Greek-inspired dish I made the other night:
Cook ground turkey, beef, or lamb in a skillet and season with 5-spice powder or your favorite Greek seasoning, set aside. Add cauliflower to the skillet with a touch of olive oil, garlic, and lemon juice, then sauté until just tender. Add meat and stir to incorporate, add spinach or arugula and stir to let it wilt.
Top with chopped cucumber, tomatoes (I skipped the tomatoes cuz we’re not getting along right now 🤨 and it was still good!), and hummus! 👌🏻
Would be great with tzatziki sauce if you’re not #dairyfree !

LASAGNA!!! VEGAN + GRAIN-FREE! A friend gave us a freaking huge zucchini!!!! So we sliced it thin for the “lasagna noodles” and I made some almond ricotta (by @minimalistbaker) and then tomato sauce, mushrooms, broccoli.... prolly could of had it raw! Between giving them up for gut healing purposes and learning to cook veggie-based meals in my mindset nutrition program, I honestly don’t miss them!
The truth is, it’s much more fun to see how creative you can get with grain-free meals—like the other night when I roasted this spaghetti squash with coconut oil and cumin, then served it atop some turkey burgers with black beans, salsa, raw milk cheese, and green beans from my mom’s garden. 💛❤️💚🖤
When you’re forced to think outside the box, you realize that you never really needed the box to begin with. 😉

Butternut Squash Cheeseburger Casserole
This grain free casserole fuses your favorite cheeseburger fixings with fresh veggies for a lighter, healthier meal. We added a sprinkle of cheese to the top and the whole family LOVED it! .
We have made this recipe in the past using spiralized sweet potatoes but to save time I opted to use the spiralized butternut squash that came in the zucchini noodles pack from Costco! The result was delicious and we would totally do it again! .
2 packages spiralized butternut squash 1 T extra virgin olive oil
1 medium onion, finely chopped
1 medium carrot, chopped
1 lb ground turkey
1 t dried oregano
½ t garlic powder
1 t smoked paprika
½ t chili powder
1 ½ cups chicken stock
1 cup crushed tomatoes
Chopped tomatoes. grated white cheddar cheese and green onion to garnish
Salt and pepper to taste
Heat extra virgin olive oil in a large skillet over medium-high heat; add onion, carrot and celery. Cook for 3 minutes until onion is translucent and veggies are softened.
Increase heat to high and add ground turkey. Cook for 5 minutes, breaking meat up as it cooks, until turkey has browned and is no longer pink. Add oregano, garlic powder, smoked paprika and chili powder. Season with salt and pepper, to taste.
Stir in the chicken stock and the crushed tomatoes. Reduce heat to medium-low and bring to a simmer; add spiralized butternut and cook for another 10 minutes until they are slightly softened and sauce is reduced. Remove from heat and top with grated cheese, chopped tomatoes and spring onions. Serve warm.
Dinners will be quick and easy now as I hurt my hand and cooking will be limited. See what you can do with limited cooking? That is a vegetable stirfry with fresh garlic and coconut amino’s and I threw in hard-boiled eggs for protein👍You can always throw in sunflower seeds or any other kind of nut for a vegan dinner.

The two older males of the house are out for the night leaving me with the place all to myself once the littlest is in bed & asleep 💤 .
I’ve been wanting to make a cauliflower crust pizza for weeks now and I finally made the time to craft this beautiful piece of work. .
1 head of cauliflower
1/2 cup white cheddar cheese
1/2 tsp dried basil
1/2 tsp oregano
Salt and pepper to taste .
Rice the cauliflower.
In a microwave safe bowl, heat cauliflower for 4 minutes on high until cooked.
Let cool and then, when you are able to handle it, put the cooked cauliflower rice into a dish towel and ring out all the access liquid over the sink.
Into a medium sized bowl add cooked and dried out cauliflower rice with the other Ingredients. Mix to combine and transfer to a parchment lined baking sheet.
Pat crust down flat and thin then bake in the oven at 350 until golden brown.
Remove from the oven and top with whatever toppings you like.
Place it back into the oven at 425 to finish baking. .
On mine I put marinara sauce, white cheddar, cooked chicken breast, mushrooms and spinach. .
Take about veggies most!!! Oh and cheese too! Lots of cheese! .

I try and stay stocked up on @eatbanza (via @thrivemkt ) because it’s my fave and so easy to create a meal out of. Roasted broccoli and zucchini and topped on banza pasta tossed in a kale-tahini sauce that my sweet vegan roommate made 🤗 added some of the everything but bagel seasoning from @traderjoes to my broccoli - really lives up to the hype! #realfood
Company is coming and they are not vegetarians😱I asked what they wanted for dinner and they said lamb chops, a vegetable and a salad. That is what they got and I got fish. Everybody gets the grilled asparagus and salad.
Gluten free@ Against the Grain bread made into garlic bread with melted goat butter and freshly chopped garlic. I will be taking this to the restaurant with me tonight so I can be like everybody else👍They have garlic bread and now I do too.
Dinner date @tocayaorganica with @marilyndesesa! I try to eat most of my meals at home because I can control everything that's going into them but it's nice to get a little change. This was arugula topped with seasoned grilled chicken, quinoa, pico de gallo, avocado, and a side of cilantro lime dressing! Love this place!⠀
Wowza - 500 posts?! That seems like a lot of pics of food over the last year and a half! I‘ve been meaning to do an intro/fun facts post for awhile, as there are many new faces, however my captions paint a pretty vivid picture of my life, my family, what I eat and who I am so I’m not sure what to add, and I obviously struggle with any form of brevity.
So let's try something different and instead of sharing a story today, I will answer any questions you guys might have about me, my food, my kiddos, my job, my exercise routine, etc. Everything within reason + a little outside of reason is valid! Please don't leave me hangin - even if you’re more of a silent scroller than a commenter, shoot me a message with a question and I'll answer!

In exchange for your participation + feeding my fragile ego, I give you a standard 7 min fridge cleanout lunch between conference calls! Leftover chicken tossed in some @primalkitchenfoods caesar dressing atop @organicgirl greens, surrounded by some @lodgecastiron + @chosenfoods avocado oil action by way of these goodies added in succession of about 1 minute a piece (a trick I use when I know one thing might cook more slowly than another like adding onions before peppers when making fajita veggies) - broccolini, asparagus, @muccifarm tomatoes, a lemon slice, and some leftover roasted potatoes. Salt, pepper and garlic were applied all around.

Buffalo Chicken Mini Meatloaf 🤤 •
Paleo and whole 30 approved ☺️ •
One pound ground chicken
@traderjoes 21 seasoning
1/3 cup almond flour (I use @bobsredmill )
1/4 cup @franksredhot
One cup spinach
1/2 onion chopped finely
Olive oil •
1. Preheat oven to 375.
2. Grease muffin tin with olive oil.
3. Mix all ingredients in a big bowl.
4. Scoop mixture into muffin tin. Drizzle extra red hot on top of mini meatloafs.
5. Cook for 20-25 minutes. Enjoy!
