You know how I knew this vegan chili was a winner? When my husband said, “Mmm, this is so good. Does it have meat in it?”😋
Sorry, but no, Amigo. It’s just a hearty, warming, vegan, chipotle chili that I made in the Instant Pot. 🥣
I pre-cooked 1 lbs of dry black beans in the IP and set aside 4 cups. Then I roasted 1 bag of organic riced cauliflower and 2 cups of walnut pieces at 350 degrees for ~10 minutes. I added beans, cauliflower mixture, 1 container of organic Baby Bella mushrooms (chopped in thirds), and 2 cups of de-seeded, de-skinned Delallo tomato purée to the IP with 2 cups water along with sea salt, garlic powder, 4 chopped garlic cloves and 1 1/2” of chopped fresh ginger and cooked on high pressure for 10 minutes and then let it naturally release pressure for another 10 before venting. Once finished, I added chipotle chili powder to taste (maybe 2 tsp), rice vinegar and topped with chopped green onions, squeezed lime, and olive oil. 
And I served it with some @simplemills grain-free bread I baked earlier. 
Definitely will have this on repeat this winter!❄️

Chicken taco salad. Satisfying even on a rainy day. I came home late from riding and didn’t have much time. I used the lime honey chicken I made yesterday, added yams, peppers, tomatoes, avocado, goat cheese and salsa instead of dressing over mixed greens. Veggie mix:
1/2 red bell pepper-diced
1/2 yellow squash-half moons
1/2 zucchini squash-half moons
1 1/2 cups mushrooms-sliced
2 cups fresh spinach 
Sauté in avocado or coconut oil until caramelized and soft.

Sauce:
1 tsp peanut or almond butter
4 TB coconut aminos
2 TB sriracha sauce
1 tsp Dijon mustard 
1/4 tsp salt
1/2 lime-juiced
1 tsp turmeric

Blend until smooth.

Add grain-free yam noodles to veggie mix, pour the sauce in and stir until heated through. 
SO GOOD.

Coat your chicken with the cheese mixture and put on a butter greased sheet pan. 425 for 45 minutes. Tastes like fried chicken! 🍗 .

The chicken tenders were dipped in homemade almond flour and egg and fried in butter.
The steak was cooked in butter.

The cauliflower was cut up and put in a crockpot with heavy cream, a tbs of sour cream and 2 tablespoons of butter and cooked for 4 hours. You could add garlic or cheese to make it even tastier!

The peas were totally microwaved! Lol #grainfreeliving #grainfreedinner @wheat_belly #wheatbelly

Last nights dinner! Bake chicken tenders, asparagus and homemade biscuits recipe from @californiacountrygal grain free cook book! My son said this was the best bread he has ever had and wants me to make it every day lol 🤗 .

. 2 med. carrots cut up, add to a sauce pan add just enough water to cover the carrots. Add 2tbsp coconut sugar, 2-3 tsp garlic powder chop and Add 2 very small beets (size of golf ball the other was a little smaller) boil till the veggies are really soft. .

. Let it cool few min pour into blender and add 1 garlic clove 1-2 tsp chili powder, 1/4tsp mustard powder, 1-2tbsp  honey, 1/3 cup apple sauce , pinch of salt you can add pepper my kids don’t like pepper in it makes it “spicy” .

. Blend till texture is really smooth I did have to add a little more water and blend again. .

It has a little sauce under the cheese that was supposed to have mayo. I made a #healthyalternative and did Greek yogurt and a Korean BBQ Rub that added the perfect tangy flavor. Paired this delicious side with baked chicken thighs and a green salad. It was quite yummy!

The sauce is made with only a few ingredients you likely already have on hand and you can really use whatever veggies and beans you have on hand.

Sauce ingredients: 👇 🔅1 can (13.5 oz) coconut milk, full fat (don’t be afraid of fat 😉) 🔅 1 can (14.5 oz) diced organic tomatoes 🍅 🔅 1 T coconut aminos @bigtreefarmsbali 🔅 1/2 tsp minced garlic
🔅 2 heaping tablespoons tahini butter
🔅 1 tsp fresh minced ginger 🔅 2 tsp turmeric 🔅 2 tsp curry powder
🔅sea salt, cracked black pepper, and Italian seasoning
Place sauce ingredients into a pot, heat over medium, and whisk until everything is well incorporated. ↩️ add in veggies and beans: 🔅 1 can of organic chickpeas
🔅 3 small organic sweet potatoes 🍠, chopped 🔅 1 cup green beans or peas (frozen and organic work just fine 👍)
🔅 1 chopped organic zucchini 🆗 simmer 👩‍🍳 until veggies are cooked throughout ✅ Serve over a bed of steamed cauliflower rice 🍚 and top with fresh chopped cilantro, mint, and cashews. Enjoy ‼️😋💯 #vivbuzz .

I saw some organic chicken legs in my freezer so I popped them in the crockpot with some primal paleo adobo seasoning. 🍚 cauliflower rice 🍠Japanese sweet potato fries 🥕 carrot mash with cinnamon and a little honey 🥒 pickle 🥗Yellow bell pepper(she wouldn’t touch this🤷‍♀️)
I’m trying to do more veggie abundant dishes lately and keep the grains and meat to a minimum. But sometimes the rest of my family and I have to go in slightly different directions. Swipe left to see my quick fix for my meat lovers. Tonight we had sautéed okra and carmelized onions in almond meal with Hain’s iodized sea salt, and garlic. On the side, cauliflower rice with rice vinegar, salt and walnuts with a squeeze of 🍋. Then, I added a few slices of uncured Salame from Italy to the side. I trust meats, especially pork, from Italy far more than I do from mass produced U.S. meats. But truthfully, I should be getting any meat from a local farmer to ensure it’s quality and nutritional density.

Mix it up in a tacoless taco bowl, top it with marinara and sausage, smother it with homemade coconut curry 😋, turn it into riceless fried rice, OR try this tasty Greek-inspired dish I made the other night:

Cook ground turkey, beef, or lamb in a skillet and season with 5-spice powder or your favorite Greek seasoning, set aside. Add cauliflower to the skillet with a touch of olive oil, garlic, and lemon juice, then sauté until just tender. Add meat and stir to incorporate, add spinach or arugula and stir to let it wilt.

Top with chopped cucumber, tomatoes (I skipped the tomatoes cuz we’re not getting along right now 🤨 and it was still good!), and hummus! 👌🏻

Pictured is a home-made turkey burger with stuffed cheese, a spicy dip made with avocado mayo and  siracha sauce, a humble salad with lemon and olive oil as a dressing and some home-made fries shallow fried in coconut oil (I prefer ghee/avocado oil but ran out).

We have an over abundance of peppers from our garden, which isn't anything to complain about especially when you can make Philly Cheesesteak Stuffed Peppers for dinner!! ⠀⠀⠀⠀⠀⠀⠀⠀⠀
To make this easy quick dinner, I simply halved & roasted the peppers at 350° for 15 minutes. Then sauteed 1/2 lb grass fed ground beef with onions, @traderjoes cauliflower rice, garlic powder, salt and pepper. Lastly, I stuffed the peppers with the filling, topped them with shredded organic grass fed cheddar & some sharp provolone, and baked them until the cheese melted. Easy peasy! Hubby loves ketchup so he doused his in @mycadia organic ketchup, as shown here! 😋

Butternut Squash Cheeseburger Casserole

This grain free casserole fuses your favorite cheeseburger fixings with fresh veggies for a lighter, healthier meal. We added a sprinkle of cheese to the top and the whole family LOVED it! .
We have made this recipe in the past using spiralized sweet potatoes but to save time I opted to use the spiralized butternut squash that came in the zucchini noodles pack from Costco! The result was delicious and we would totally do it again! .
Ingredients
 2 packages spiralized  butternut squash  1 T extra virgin olive oil
 1 medium onion, finely chopped
 1 medium carrot, chopped
 1 lb ground turkey
 1 t dried oregano
 ½ t garlic powder
 1 t smoked paprika
 ½ t chili powder
 1 ½ cups chicken stock
 1 cup crushed tomatoes
 Chopped tomatoes. grated white cheddar cheese and green onion to garnish
Salt and pepper to taste

Instructions
 Heat extra virgin olive oil in a large skillet over medium-high heat; add onion, carrot and celery. Cook for 3 minutes until onion is translucent and veggies are softened.
Increase heat to high and add ground turkey. Cook for 5 minutes, breaking meat up as it cooks, until turkey has browned and is no longer pink. Add oregano, garlic powder, smoked paprika and chili powder. Season with salt and pepper, to taste.
Stir in the chicken stock and the crushed tomatoes. Reduce heat to medium-low and bring to a simmer; add spiralized butternut and cook for another 10 minutes until they are slightly softened and sauce is reduced. Remove from heat and top with grated cheese, chopped tomatoes and spring onions. Serve warm.

Sausage meat sauce with spiralized sweet potatoes for dinner. It was leftover from Friday night and I love recreating leftovers. I made it for myself, but everyone wanted in on it. We got the sausage from a local farmer which made it extra good.

The two older males of the house are out for the night leaving me with the place all to myself once the littlest is in bed & asleep 💤 .
I’ve been wanting to make a cauliflower crust pizza for weeks now and I finally made the time to craft this beautiful piece of work. .
Cauliflower Crust
.
1 head of cauliflower 
1/2 cup white cheddar cheese
1 egg 
1/2 tsp dried basil
1/2 tsp oregano 
Salt and pepper to taste .
Rice the cauliflower.
In a microwave safe bowl, heat cauliflower for 4 minutes on high until cooked. 
Let cool and then, when you are able to handle it, put the cooked cauliflower rice into a dish towel and ring out all the access liquid over the sink. 
Into a medium sized bowl add cooked and dried out cauliflower rice with the other Ingredients. Mix to combine and transfer to a parchment lined baking sheet. 
Pat crust down flat and thin then bake in the oven at 350 until golden brown.
Remove from the oven and top with whatever toppings you like. 
Place it back into the oven at 425 to finish baking. .
On mine I put marinara sauce, white cheddar, cooked chicken breast, mushrooms and spinach. .
Take about veggies most!!! Oh and cheese too! Lots of cheese! .

Roasted broccoli and zucchini and topped on banza pasta tossed in a kale-tahini sauce that my sweet vegan roommate made 🤗 added some of the everything but bagel seasoning from @traderjoes to my broccoli - really lives up to the hype! #realfood

I love getting the seasonal wild mushrooms (this time i got morels) and the sausage is a chicken sausage with feta and spinach 😍
We reduced chicken stock that we got from another farmers market meal, then we cooked the mushrooms in the stock and butter, added kale from the market and when that was tender I added some sour cream. 
So tasty!
Also I'm almost down 50lbs!
