You know how I knew this vegan chili was a winner? When my husband said, “Mmm, this is so good. Does it have meat in it?”😋
Sorry, but no, Amigo. It’s just a hearty, warming, vegan, chipotle chili that I made in the Instant Pot. 🥣
I pre-cooked 1 lbs of dry black beans in the IP and set aside 4 cups. Then I roasted 1 bag of organic riced cauliflower and 2 cups of walnut pieces at 350 degrees for ~10 minutes. I added beans, cauliflower mixture, 1 container of organic Baby Bella mushrooms (chopped in thirds), and 2 cups of de-seeded, de-skinned Delallo tomato purée to the IP with 2 cups water along with sea salt, garlic powder, 4 chopped garlic cloves and 1 1/2” of chopped fresh ginger and cooked on high pressure for 10 minutes and then let it naturally release pressure for another 10 before venting. Once finished, I added chipotle chili powder to taste (maybe 2 tsp), rice vinegar and topped with chopped green onions, squeezed lime, and olive oil.
And I served it with some @simplemills grain-free bread I baked earlier.
Definitely will have this on repeat this winter!❄️
Not the best lighting, but definitely the best dinner. 💁🏼♀️Whipped up an easy but flavorful grain-free spicy Asian noodle dish after yoga tonight. It’s packed with veggies and anti-inflammatory turmeric. Swipe to see the noodles I use.
1/2 red bell pepper-diced
1/2 yellow squash-half moons
1/2 zucchini squash-half moons
1 1/2 cups mushrooms-sliced
2 cups fresh spinach
Sauté in avocado or coconut oil until caramelized and soft.
1 tsp peanut or almond butter
4 TB coconut aminos
2 TB sriracha sauce
1 tsp Dijon mustard
1/4 tsp salt
1 tsp turmeric
Blend until smooth.
Add grain-free yam noodles to veggie mix, pour the sauce in and stir until heated through.
Zucchini Boats topped with ground turkey sauce for dinner!!! And I made Tinkyada pasta (#swipeforpackage ) for the kids. I baked the Boats with @daiyafoods cheese and topped with sauce for me and this is my Dad’s topped with Parmesan!
Made homemade pasta and nomato sauce, meatballs and grain free garlic bread with broccoli salad. Fun fact-I hate my food touching! Specially pasta sauce in my salad 😝🤣. .

. The nomato pasta sauce! In pan add 2-3 small beets 3/4- 1cup baby carrots, 1 chopped onion, 1 3/4cup water 3 celery chopped, 1tbsp fresh basil, salt to tastes
Boil till everything is tender and blend. I added fresh minced garlic (1clove) stir and done. .
. Meat balls: 1lb ground beef, 1lb ground pork, I added dry basil, oregano, garlic powder, salt, pepper. Mix, shape, bake 350 30 min.
Dinner tonight was a hit on all fronts! .

All the cheesy goodness of Mac and cheese minus the Mac! Cause you don’t really need the energy you get from carbs at dinner, but you do want to fill up and stay full 💁🏼♀️
Plus going back for seconds is no prob here 🧀🥦🍗

Last nights dinner! Bake chicken tenders, asparagus and homemade biscuits recipe from @californiacountrygal grain free cook book! My son said this was the best bread he has ever had and wants me to make it every day lol 🤗 .
. Also made homemade nomato bbq sauce i have not had bbq sauce in a long time! It was amazing!
. 2 med. carrots cut up, add to a sauce pan add just enough water to cover the carrots. Add 2tbsp coconut sugar, 2-3 tsp garlic powder chop and Add 2 very small beets (size of golf ball the other was a little smaller) boil till the veggies are really soft. .
. Let it cool few min pour into blender and add 1 garlic clove 1-2 tsp chili powder, 1/4tsp mustard powder, 1-2tbsp honey, 1/3 cup apple sauce , pinch of salt you can add pepper my kids don’t like pepper in it makes it “spicy” .
. Blend till texture is really smooth I did have to add a little more water and blend again. .
#meatlessmonday Noshed these Broccoli Balls 🥦 like they were meatballs. And the marinara dipping sauce was the perfect compliment. My husband dug them too. I would absolutely make these as an appetizer for a party or serve them with rice noodles for a fun Asian inspired dish. But, my bad, I tried serving them with a lasagna style #kongac noodle (it’s a starchy root that enhances weight loss) and my girls wouldn’t touch it. (Want to see what that looks like? Check out my Stories!🤦♀️) So that was a fail. But do the Broccoli Balls. They are really delicious and a fun way to get your veggies! 💚
I also ate this at Mulligans on the beach in Lauderdale by the Sea, Florida. I must admit that their clams with butter , white wine and garlic is as good as mine😱I also ate this for part of my breakfast.
It’s all about balance right? Tonight we used our 3 remaining #butcherbox#grassfedbeef patties, roasted up some radishes, potatoes, sweet potatoes, and red onions (compliments of @crajevac) and tossed a salad with greens from @freedomfarmersmkt with walnuts, lemon juice, olive oil, ACV and sea salt. My carnivores were happy. ☺️
Sometimes the unplanned dinners are the best! I saw some organic chicken legs in my freezer so I popped them in the crockpot with some primal paleo adobo seasoning. 🍚 cauliflower rice

I’m trying to do more veggie abundant dishes lately and keep the grains and meat to a minimum. But sometimes the rest of my family and I have to go in slightly different directions. Swipe left to see my quick fix for my meat lovers. Tonight we had sautéed okra and carmelized onions in almond meal with Hain’s iodized sea salt, and garlic. On the side, cauliflower rice with rice vinegar, salt and walnuts with a squeeze of 🍋. Then, I added a few slices of uncured Salame from Italy to the side. I trust meats, especially pork, from Italy far more than I do from mass produced U.S. meats. But truthfully, I should be getting any meat from a local farmer to ensure it’s quality and nutritional density.
Whole 30 day four dinner courtesy of a juicy and delicious @butcher_box ribeye, broccoli salad from @primalpalate and a good, old fashion cucumber tomato salad with @primalkitchenfoods Italian dressing. Side note: I’m definitely in the “kill all the things” stage. But a day at the jersey shore made it a little less brutal 🌊
Sometimes the best nights are eating alone, on your balcony, in your sweats, eating tacos🌮. What more could I ask for?! I had the best first day working for @vitalproteins. Mix it up in a tacoless taco bowl, top it with marinara and sausage, smother it with homemade coconut curry 😋, turn it into riceless fried rice, OR try this tasty Greek-inspired dish I made the other night:
Cook ground turkey, beef, or lamb in a skillet and season with 5-spice powder or your favorite Greek seasoning, set aside. Add cauliflower to the skillet with a touch of olive oil, garlic, and lemon juice, then sauté until just tender. Add meat and stir to incorporate, add spinach or arugula and stir to let it wilt.
Top with chopped cucumber, tomatoes (I skipped the tomatoes cuz we’re not getting along right now 🤨 and it was still good!), and hummus! 👌🏻
Would be great with tzatziki sauce if you’re not #dairyfree !

LASAGNA!!! VEGAN + GRAIN-FREE! A friend gave us a freaking huge zucchini!!!! So we sliced it thin for the “lasagna noodles” and I made some almond ricotta (by @minimalistbaker) and then tomato sauce, mushrooms, broccoli.... prolly could of had it raw! The truth is, it’s much more fun to see how creative you can get with grain-free meals—like the other night when I roasted this spaghetti squash with coconut oil and cumin, then served it atop some turkey burgers with black beans, salsa, raw milk cheese, and green beans from my mom’s garden. 💛❤️💚🖤
When you’re forced to think outside the box, you realize that you never really needed the box to begin with. 😉

Butternut Squash Cheeseburger Casserole
This grain free casserole fuses your favorite cheeseburger fixings with fresh veggies for a lighter, healthier meal. We added a sprinkle of cheese to the top and the whole family LOVED it! .
We have made this recipe in the past using spiralized sweet potatoes but to save time I opted to use the spiralized butternut squash that came in the zucchini noodles pack from Costco! The result was delicious and we would totally do it again! .
2 packages spiralized butternut squash 1 T extra virgin olive oil
1 medium onion, finely chopped
1 medium carrot, chopped
1 lb ground turkey
1 t dried oregano
½ t garlic powder
1 t smoked paprika
½ t chili powder
1 ½ cups chicken stock
1 cup crushed tomatoes
Chopped tomatoes. grated white cheddar cheese and green onion to garnish
Salt and pepper to taste
Heat extra virgin olive oil in a large skillet over medium-high heat; add onion, carrot and celery. Cook for 3 minutes until onion is translucent and veggies are softened.
Increase heat to high and add ground turkey. Cook for 5 minutes, breaking meat up as it cooks, until turkey has browned and is no longer pink. Add oregano, garlic powder, smoked paprika and chili powder. Season with salt and pepper, to taste.
Stir in the chicken stock and the crushed tomatoes. Reduce heat to medium-low and bring to a simmer; add spiralized butternut and cook for another 10 minutes until they are slightly softened and sauce is reduced. Remove from heat and top with grated cheese, chopped tomatoes and spring onions. Serve warm.
Dinners will be quick and easy now as I hurt my hand and cooking will be limited. See what you can do with limited cooking? That is a vegetable stirfry with fresh garlic and coconut amino’s and I threw in hard-boiled eggs for protein👍You can always throw in sunflower seeds or any other kind of nut for a vegan dinner.

The two older males of the house are out for the night leaving me with the place all to myself once the littlest is in bed & asleep 💤 .
I’ve been wanting to make a cauliflower crust pizza for weeks now and I finally made the time to craft this beautiful piece of work. .
1 head of cauliflower
1/2 cup white cheddar cheese
1/2 tsp dried basil
1/2 tsp oregano
Salt and pepper to taste .
Rice the cauliflower.
In a microwave safe bowl, heat cauliflower for 4 minutes on high until cooked.
Let cool and then, when you are able to handle it, put the cooked cauliflower rice into a dish towel and ring out all the access liquid over the sink.
Into a medium sized bowl add cooked and dried out cauliflower rice with the other Ingredients. Mix to combine and transfer to a parchment lined baking sheet.
Pat crust down flat and thin then bake in the oven at 350 until golden brown.
Remove from the oven and top with whatever toppings you like.
Place it back into the oven at 425 to finish baking. .
On mine I put marinara sauce, white cheddar, cooked chicken breast, mushrooms and spinach. .
Take about veggies most!!! Oh and cheese too! Lots of cheese! .

Roasted broccoli and zucchini and topped on banza pasta tossed in a kale-tahini sauce that my sweet vegan roommate made 🤗 added some of the everything but bagel seasoning from @traderjoes to my broccoli - really lives up to the hype! #realfood
Company is coming and they are not vegetarians😱I asked what they wanted for dinner and they said lamb chops, a vegetable and a salad. That is what they got and I got fish. Everybody gets the grilled asparagus and salad.
