Easy peasy LEMON squeezy! 🍋🙌🏻 Whipped up this creamy lemon pasta in under 10 minutes!! 👏🏻 I usually spend more time than that contemplating what I actually want for dinner 🤣 now to go grocery shopping and stock up my fridge for the next 3 days and then I’m off again! ✈️
Creamy lemon sauce 🍋 mix 1/4 cup plain whole milk Greek yogurt + 1tbls nutritional yeast +big squeeze of lemon + salt to taste. Used it to top @traderjoeslist red lentil pasta + sautéed mushrooms + arugula
This tomato peach avocado salad is the perfect way to pack in all that late summer produce. It’s a little sweet and spicy but overall fresh and delicious! I’m working on getting the recipe up by the end of the week!! 🙌🏼
You can toss it with chickpeas and hemp seeds and serve it with some leafy greens to make it a meal or pair it off with a protein of your choice. Salmon would be lovely!
Wow another salad. Shocking right? I eat a salad of some sort every day for lunch during the work week. Why? Well for starters I do love salads. Always have. But they are easy to throw together and pack up great for toting along to work. I also love how they are super customizable to what’s in season. It also ensures that I get my greens in at least once each day so it’s a no brainer for me.
My formula for the perfect salad is to have a good base of greens, something crunchy like nuts or seeds, lots of vegetables (cooked or raw), herbs, and a simple homemade vinaigrette of olive oil, some type of vinegar, and salt and pepper.
If I had one tip to give anyone who was looking to cook for themselves more or add in a few plant based meals is to always make extra roasted vegetables. Carrots, sweet potatoes, zucchini, broccoli, whatever you’re making always cook a little more. These are perfect additions to have on hand to throw into salads or serve over brown rice or even toss into tacos. I had leftover roasted sweet potatoes from last night and in less than 5 minutes I threw together a delicious salad of butter lettuce, roasted sweet potatoes, pepitas, green onions, radish, avocado, cilantro, and green onions all tossed in a simple vinaigrette made of olive oil, lime juice, and salt and pepper. Eating healthy doesn’t have to be complicated or time consuming!

I threw together this Chicken Ranch bowl for lunch today and it hit the spot! This is an easy meal prep idea for quick lunches throughout the week- Spinach, leftover jasmine rice (sub caulirice for #Whole30 and/or #keto ), @traderjoes chili lime chicken burger, tomato, avocado, and a hefty drizzle of @tessemaes ranch! You can cook the chicken burgers & rice/caulirice ahead of time and make a bunch of bowls to bring to work, or to have at home for an easy dinner. Feel free to get crazy and add some bacon, too! 😍

Good morning fellow humans 🍵✨
Slow matcha mornings have become my new norm. No rushing out the door for a run, no early morning yoga classes, no errands, no obligations. I spend my entire morning tuning into my body & my symptoms. Sometimes it’s more sleep, sometimes it’s a magnesium salt bath, sometimes it’s an extra cup of matcha...
My schedule is at the mercy of Lyme disease & I am slowly learning to slow down and really go with the flow. I can’t plan my days out as I used to because I have no way of predicting when I’ll have a burst of energy or when I’ll be overwhelmed with fatigue & pain. The lack of planning goes completely against my Capricorn tendencies, but I think it’s a valuable lesson for me to learn.
Yesterday I felt really good. I knocked a lot off of my to-do list, I went to the gym, and I felt more accomplished than I had in awhile. Today I’m beyond tired, super foggy, & every muscle aches. So, today I will rest. It’s that simple. The concept of listening to your body is easier said than done. It’s an ongoing practice and self-dialogue. Notice your body’s queues, listen to your gut intuition, and don’t be afraid to go with the flow. Whatever is on your to-do list today will still be there tomorrow. Nothing is as urgent as your health and well-being #nativegrace

Did you know that when the sunset turns beautifully pink like this (or red, orange, etc.), it is because when the sun is closer to the horizon during sunrise & sunset the light has a longer way to travel and gets scattered by all the nitrogen & oxygen particles in the air. Pollution, eh? I don’t think most of us look up at a cotton candy sunset and think, “yikes, we should do something about the air quality here!”
On an individual level that idea is daunting. That’s why I am here. To create a movement of change in the way we treat our bodies & the earth. The holistic wellness trend is on the rise, but we need not forget to treat our greatest Mother with the same level of mindfulness and care.
