Sourdough: Day 7 - Everyone loves a floater... when it comes to sourdough starter anyway!
Before using your starter to make your loaf, the best way to test its progress is the float test!
Drop a small amount of starter into some water, if it floats, it’s ready to use.
It’s a slight understatement to say I’m just a bit excited to have this years first loaves proofing! I’ve got a white loaf using a white starter, and a 50/50 rye and white loaf going using my rye starter... I can’t wait to see how they turn out - this is where patience really comes in.
Our first proof will be for around 3-4 hours, before knocking back, shaping and doing her final proof for another 3+ hours (the longer it proofs at low temperatures, the more sour the flavour profile)
