Here we go with the work week thing again. So it’ll be nice to relax a bit. 😂 I gave away a bunch of my garden produce this week. I got some baskets at the dollar store and shoved them full of potatoes, carrots, winter squash, sweet potatoes, mini cabbages, hot peppers, herbs and I can’t remember what else. My mom and sisters each got a basket. I grew so much squash I could probably start a self help group. My go to recipes for squash are ravioli and a delicious squash and apple soup but beyond that ... well, I need to expand my squash repertoire or I’ll be drowning in liquified rotten squash juice in April. I’m going to make a big batch of my pumpkin (squash) soup tomorrow but any other ideas are welcome. I’m currently sitting on around .. ahem ... 120 lbs of squash. I fully acknowledge I have a squash problem.
Crispy corn. One of my favourites! This one is a simple salt and pepper crispy corn. Recipe on my blog right now. ..NOTE- The sweet corn kernels tend to pop in the hot oil. Do read instructions before making this to avoid any injuries.
