Do you cook with fresh or dried herbs?
I typically use dried because it is easier and keeps things simple. But whenever I do use fresh it really makes a difference!
If you want to really wow your Thanksgiving crowd it may be worth the investment to use fresh herbs to make those flavors pop!
And if you are looking for a unique side dish that is warm and comforting but still healthy try these Mushroom and Thyme Savory Oats!
3 cups Bone Broth
1 cup Steal Cut Oats
1/4 c Sautéed Red Onion
8oz Sautéed Mushrooms
Salt, pepper and garlic to taste
Quick meal: “chicken pot pie.” Left over chicken(about 1-2 cup), add whatever veggies you have on hand (I’m in a freezer clean out kick so I used up some veggie medley I had and chopped and sautéed a small onion), 2 cups chicken broth, and thickener - I used instant potato flakes. I seasoned heavily with pepper and oregano. Salt to your tasting.
I was going to do drop biscuits but I didn’t have enough flour for the pie crust I want to make tomorrow and that. Sooo since I’m in freezer clean out mode, I decided to use up the huge bag of rainbow cauliflower I had.
I riced the cauliflower, microwaved for 5 minutes and let it cool enough to handle- squeezed out the liquid. I added a flax egg, and some cheese to try and hold it together. Sprayed my muffin tin and attempted to make cups of this concoction. 🤷🏻♀️
Baked 400* for 25 minutes.
They were very hard to get out. They tasted damn good, just didn’t hold up. Honestly, I’ll probably make this again but maybe throw some flour and butter in with the cauliflower mix.

As promised (a week late lol) - the best low-carb/GF pumpkin bread recipe I have found! I And I just made them into muffins today. Perfectly sweet, dense but not doughy or crumbly. 🤤
My mom tried this and had no idea it was low-carb 👏🏼😉

GF roasted veggies and chicken with peanut sauce and fresh cilantro. Coconut rice on the side. I like to use GF low sodium Tamari as a replacement for soy sauce, which is made up of about 40% wheat. Next recipe was a cranberry orange bread recipe I've used with traditional flour, but changed it to #glutenfree . These were not healthy, with plenty of sugar and butter, but they were so, so good. It's a great holiday bread, even if you don't use gluten free! Here's the recipe:
3/4 cup granulated sugar
1 tablespoon orange zest. About 1 large orange. Make sure and wash your your orange before zesting.
1 1/2 cups gluten free flour
1/2 teaspoon salt
1 teaspoon baking powder
3/4 cup buttermilk
1/2 cup butter, melted
2 large eggs, slightly beaten
1 tablespoon fresh orange juice
1 teaspoon vanilla extract
1 cup fresh cranberries, chopped
Combine your orange zest with sugar and mix well. This works so well to distribute the flavoring of the zest throughout the bread 😍. Don't skip this step. Add dry ingredients and mix well. In separate bowl combine wet ingredients. Combine the 2 and mix until combined. Fold in chopped cranberries. Bake at 350°for about 10 to 15 minutes, depending on what pan you choose to bake in. After you bake let it cool, then top with an orange glaze. I used about 1/2 cup powdered sugar, 1 teaspoon grated orange zest and enough orange juice to the thickness you want your glaze. .I used @sacopantry powdered buttermilk , It's so convenient. I rarely buy regular buttermilk these days.
These mini loaves were a hit in the class and at home. Try them! .

Today was a busy #glutenfree baking day for me. I have several of my girls I teach in church who have #celiacdisease and I try to make sure they have yummy food too. I know there are so many things they feel like they miss out on. I don't want them to feel like that in my class. I'm still struggling to learn how to bake gluten free, but I'm getting better.
I'll share these 3 recipes in 3 separate posts. The first was these tasty gluten free brownies. It was a recipe from @kingarthurflour and it was different from any other brownie recipe I've made. It was so, so good though! Here's the link. I won't post all the instructions here because it was pretty lengthy. https://www.kingarthurflour.com/recipes/gluten-free-brownies-recipe. I used the @bobsredmill gluten free flour, it's easier to find than the King Arthur flour mix. I made one pan of regular brownies and one s'mores. For the s'mores I baked the brownie. After they were baked, I cut marshmallows in half and spread them across the top of the brownies. I set my oven on broil, but set the pan in the middle of the oven, I didn't want the marshmallows to burn! Once the top is lightly browned, pull it from oven. I smashed the tops of the brownies just a little, drizzled with melted chocolate and sprinkled with smashed gluten free graham crackers. This also works for full gluten brownies as well. .

I’m grateful for nourishing food. And I’m grateful that it doesn’t have to taste like cardboard to be good for me!
At this point in my health journey, making good choices doesn’t mean depriving myself of my favorite foods. Through years of trial and error, I know what makes me feel good - so I choose to eat that.
I choose to drink almond milk because it makes me feel better than cow’s milk. I bake with coconut flour because gluten makes my brain foggy. I decide that my well-being is more valuable than fitting in with what everyone else is doing. .
Taking the time to figure out what does and doesn’t work for my body has changed every aspect of my life. I’m healthier, happier, and more balanced 👌🏻

Sweet potato hummus + @traderjoes everything but the bagel seasoning, sprouts and watermelon radish. Middle: yogurt, banana, @jemorganics hazelnut chocolate butter, cacao nibs and chia seeds. Last: I added some @pearlbutter blue coconut butter to my yogurt + pomegranate, edible flowers and shredded coconut.

I made a big batch of these today and froze them in ziplock bags. In the mornings when she begs for pancakes I don’t have to make them 🙌 just pop them in the microwave. Makes our mornings wayyyy less stressful.

Been hiding out recharging my batteries this weekend following the vendor fair and came up with this little gem of a recipe because well, us gluten free kids get the shaft a lot and I love making kitchen creations that taste as good as their gluten-y counterpart.
So I introduce to you... Bubble kid bread crumbs...better than storebought!
Have you ever bought gluten free breadcrumbs? I have and...🤮. Not very good.
I think I cracked the code with these babies here.
5 cups rice chex
2 tsp. dried oregano
2 tsp. dried rosemary
1 1/2 Tbsp sea salt
1 tsp. Black pepper
1 tsp. Garlic powder.
Combine all ingredients in a food processor and pulse into bread crumbs
They. Are. Amazing. And gluten free. Try them and let me know what you think

Tonight was a plate full of pasta kind of night!
Going vegan was such an eye opening experience to go from thinking vegans “give up” eating so much, to realizing how to use so many other uses for foods I’ve been eating the same way for years. Like hummus for instance- 9 months ago, it was just a dip I ate with carrots. Now it’s so much more- like a creamy, protein packed sauce for pasta for instance.
For this dish this is what I did for this flavor and protein packed delicious pasta—- Gluten free spaghetti noodles
Zest from 1 lemon
1/2 cup hummus
1/8-1/4 cup pasta water
I just sautéed everything then threw in the hummus, pasta water, season with some salt and pepper, parsley, toss sauce in noodles and top with @violifeamerica vegan Parmesan. Plus when you have a gardener of a mom who gives you fresh salad for dinner you have a pretty darn good meal. Lesson learned- vegans “give up” nothing. .
