Russ first introduced me to this dish a few years ago. Then, when I was completing a #Whole30 round, I knew it was a dish that I could make compliant. Lomo Saltado is strips of sirloin, peppers, onion, and tomato wedges served over French fries and/or white rice. I make it healthier by omitting the rice and baking my own crispy potato wedges. Well I’ve heard so much about them I decided to make them using my dōTERRA essential oils......I bring you LETTUCE TACOS!!!
Oh my sweet heavens! Where have these been all my life?? I used a toothpick to dip out some dōTERRA Cilantro and then added four drops of dōTERRA Lime oil to the entire batch which was two pounds of burger along with some Epicure Fajita spice. All gluten free. The flavour was incredible.  We ate three each. Four would have been just greedy....but there is enough left to have the same thing for supper tomorrow night so that’s something exciting to look forward to for sure! I workout 5-6 days a week because I love lifting, I love CrossFit metcons for cardio, I love gymnastics, I love walking, I love yoga.. you get the point. But if I’m sore or on vaca or SUPER busy I don’t force a workout. 
I eat lots of meat and veggies and things that come from the earth, but when I really want cheesecake or a burger and fries, I have that. 
Moderation. That’s how.

Fresh greens and beets from the farm made for a yummy lunch. The vegan zucchini bread on the side is dangerously tasty 😋 .

Zucchini bread:
Combine--
1/3 C melted coconut oil
1/2 Maple syrup
2 flax eggs
1/2 C unsweetened vanilla almond milk
1 1/2 C grated zucchini (strain out extra liquid on paper towel)

Separately combine:
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
1/4 tsp nutmeg 
1 3/4 C gluten free flour
.
.
Slowly add you let dry ingredients to your wet then fold in 3/4 C chopped walnuts. .
.
Bake at 350 for an hour. I highly recommend vegan butter on top! I baked mine in a loaf pan, but I think I will try muffin tins next time.

De cada vez hay más opciones aptas para celiacos en bares y restaurantes, al igual que veganas o vegetarianas. Pero encontrar ambas ya es más complicado. Cuando como fuera con familia o con amigos siempre me suelo asegurar que tengan al menos opciones celiacas, que es lo más necesario para mí, ya que si no hay opciones celiacas, por muchas veganas que haya no podría comer nada. ☀
A veces es complicado, se siente responsabilidad si con quien vas le apetece ir a cierto sitio y no hay opciones para mi. Con mi familia o amigos solemos buscar sitios dónde pueda comer bien. Pero no todos los sitios tienen, y no siempre se tiene la opción de asegurarse que hay ambas opciones. Para ello, yo tengo varias elecciones:
🔸Siempre intento llevar conmigo una bolsita con frutos secos, fruta... por si no hubieran opciones.
🔸Pregunto siempre en el restaurante qué opciones puedo tomar. Si hay posibilidades de combinar platos o preparar uno desde zero.
🔸Busco restaurantes del lugar dónde estoy en @tripadvisor. Suelen tener muchas opiniones y siempre suelen poner si tienen opciones celiacas y veganas o vegetarianas.
🔸 Pregunto siempre si tienen pan sin gluten. En algunos sitios no lo anuncian y suelen tener. Eso puede salvar alguna comida.

• 1/2 scoop of vanilla protein powder ⠀⠀⠀⠀⠀⠀⠀⠀⠀
• 1/4 teaspoon Moringa leaf powder (or matcha)⠀⠀⠀⠀⠀⠀⠀⠀⠀
• 1/8 teaspoon spirulina powder ⠀⠀⠀⠀⠀⠀⠀⠀⠀
• coconut flakes as garnish⠀⠀⠀⠀⠀⠀⠀⠀⠀

Pineapple matcha nicecream 🍦 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ This was surprisingly amazing!! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ • 1 banana ⠀⠀⠀⠀⠀⠀⠀⠀⠀ • 1.5 cups of frozen pineapple ⠀⠀⠀⠀⠀⠀⠀⠀⠀ • 1/2 scoop of vanilla protein powder ⠀⠀⠀⠀⠀⠀⠀⠀⠀ • 1/4 teaspoon Moringa leaf powder (or matcha)⠀⠀⠀⠀⠀⠀⠀⠀⠀ • 1/8 teaspoon spirulina powder ⠀⠀⠀⠀⠀⠀⠀⠀⠀ • coconut flakes as garnish⠀⠀⠀⠀⠀⠀⠀⠀⠀ 👉🏼 slowly blended in my #vitamix

Scotch Egg Recipe: (Per egg) - Boiled, peeled and cooled eggs - 1.5 low fat sausage. - 2 tbsp of ground almond - 1 tspn mixed seeds - 1 tbsp grated Parmesan 🧀
- 1 tspn mixed herbs 🌿 - Beaten egg 🥚
- 1 tbsp corn flour 
Method: 
1. Mix together Parmesan, ground almond, seeds and herbs. 
2.  Dust egg in corn flour. 
3. Take sausage meat and wrap evenly around egg. 
4. Coat sausage covered egg in corn flour. 
5. Coat in beaten egg. 
6. Dip into ground almond mixture. 
7. Oven bake for 20mins.

This is quite possibly the easiest (and cheapest) gf pizza base and although some may think that using yoghurt seems odd, it really works! I am mighty proud of my latest creation, especially as I had doubled my dessert challenge:
A Sugar Free AND Gluten-Free Plum Tart!
Oh, and did I mention it had to be delicious too? Duh! I have been recently devoting some real quality time to super healthy desserts that we can all enjoy. While I have no gluten problems, I do deplore the near-total absence of nutritional value of all wheat products (breads, pasta, pizza. Whole wheat products are a drop better but not much) and look to explore with the same items, only much more nutritious. Likewise, I stepped up my search for naturally sweet treats when I decided to drastically reduce my already reasonable sugar intake. Aren’t we all in a war of attrition with sugar, to some degree? @mamalealulu -

Last week I got to explore the local farmers market and fisherman’s wharf with Leif’s mom in Newport, Oregon 😊 I had the best time seeing what produce they are able to grow in the Pacific Northwest 🌲👩🏼‍🌾❤️ I learned Oregon is known for their berries ~ marionberries, boysenberries, blueberries + all the wild blackberries 🍓 I made a lil video as I walked through the markets to share what I found with you 🤗 I’d love to hear what you think! Happy Sunday friends! Hope you’re all having a restful and sun-filled weekend. I took a morning flight to MN today, my first time! I’m super jazzed to present at a nutrition education conference for work 💪🎉.

Per my trip prep MO, I hit the grocery store and loaded up my fridge. Work is going to be nutty as soon as I get back, so it’s one less thing I’ll have to do later. Check out my week’s meal plan☝️. 3 full days (short wk) of healthy eats for 1 = $48.

Breakfast
1) Chia yogurt bowls (dairy free) - Digging these creamy, filling bowls on repeat. Almond milk yogurt by @kitehillfoods, chia seeds, a scoop of almond butter, frozen peaches and coconut flakes.

Lunches and Dinners
2) Pasta with squash, kale and sardines - Using @eatbanza chickpea pasta, tossed in a punchy artichoke-garlic-shallot olive oil sauce. Not into tiny tinned fish? Sub in sautéed shrimp or chicken, or chickpeas for vegan/vegetarians!
3) Black bean and fresh corn salad - no cook, super quick and refreshing. 🌽can be cut in raw (much sweeter) or sautéed quickly with cumin. Adding 🥑, jalapeño, onion and a gorgeous purple pepper. Everything is tossed in a scallion lime vinaigrette.
4) Fried eggs and baked sweet potato - either one will be a side for the bean salad. They are so clutch for filling up a meal!

4) Carrot sticks (from whole carrots), blueberries (in season!), and @siggisdairy yogurt (dairy full).

I’ve gotten a couple questions about the produce I buy. I opt for organic or locally/regionally grown whenever possible, I’d say about 80% or so, which does add to the bill. For me, shopping this way is part of my food values, and I’m comfortable with spending $50-75 on a week’s groceries bc I know it’ll get me 5-6 days of tasty, nourishing meals that I certainly wouldn’t get if I ate out for those days on the same budget. If you go with similar menu plans as my posts but you prefer conventionally grown produce, you may spend even less.

I've been like Goldilocks when it comes to trying different diets to try and make my stomach feel better -- vegan, vegetarian, pescatarian, paleo, ketogenic...And guess what? None of them worked.

Each of these diets restricts you in some way and doesn't leave room for adjustments per individual. How does this make sense?? We each have unique genes, bacteria, and enzyme production that make us different in the way that we process foods.

The truth: there is no single diet that will work for everyone. No single diet that will help everyone to lose weight, keep it off, and feel vibrantly healthy.

The good news is that there is a way to have these things, and that's by building an eating style that works for you! Tuning into what types of proteins you can easily digest. A piece of chicken or beans? Do you run better on glucose or fat for fuel? Does it feel better to eat multiple small meals or 3 large ones?

Start asking yourself these questions and if it helps, keep notes! When you eat a meal, put your phone aside, turn off your TV, and slowly enjoy the meal. Connect with what you're eating and get real about how it makes you feel.

Who else loves Pesto? Store bought varieties usually have some kind of cheese and since I can't eat dairy, I whipped up my own! Pesto is one of those things you really don't need to measure... I just throw in whatever I have and pray for the best 🤣

Kale
Basil
Nutritional yeast
Salt and pepper
Water 
Walnut and pumpkin seeds toasted
+olive oil (add last)
Blend all the ingredients in a blender, once you have a good consistency, add some Olive oil while the blender is running and you're gold☄

Being from Southern California, breakfast burritos are a way of life. From my teens going to my local spot next to my high school and into my adulthood giving other spots a try or making them on my own, they are a way of my life! For many down here in Southern California, it’s a meet up with friends, a post surf refuel, just a regular morning, a Sunday brunch treat (🙋🏻‍♀️). Living the way I live now, I leave the real deal breakfast burritos for a special occasion and make the healthier version at home. My version is non-meat, non-cheese, non-egg, and you’d think non-fun but try it and see for yourself! Recipe 👇🏼 Happy burrito-ing! 🌯

Recipe:
-Potatoes: Dice 1 russet. Put on a parchment lined baking sheet. Drizzle with olive oil and toss to coat. Season with salt/pepper. Roast at 450 for 20 mins or until golden brown. -Tofu Scramble: Drain one pack of firm organic tofu. Wrap in a paper towel and set between two plates. Give a light squeeze to remove excess water. Add tofu to non stick pan and a dab of vegan butter + 1/2 tsp. Onion powder and 1/2 tsp. Garlic powder, 1/4 tsp. Turmeric. Cook at medium heat using a spatula to break up into a scramble. Add 1 tbls. Almond milk and simmer until absorbed. Cool for another 5 mins. Remove from heat and set aside. Salt/pepper to taste. -Meat: Heat soyrizo or choice meat. (P.S. I don’t love meat substitutes because they can be packed with hidden bad things. So choose wisely) -THE BURRITO: Heat tortilla of choice (I go @sietefoods for mini burritos as shown or for bigger ones @followyourheart) and layer with all components + your choice of cheese. Optional: Add avocado for creaminess or some Salsa for a kick! .

Here is another wonderful recipe featuring courgettes. Courgettes are abundant during the summer and go so well in #italianfood that we’re sure to see them even more on this blog over the next few months. Courgette and ricotta is a classic pairing – both are so delicate that neither overpowers the other – and this particular recipe originates from Campania in the south. Traditionally, this recipe features a short tubular #pasta called ditali, however, I haven’t come across a gluten-free version here in the UK (even the regular wheat version is relatively rare) so I have substituted penne, which works just as well. If you wanted to, you could use more #courgette than I’ve suggested in this recipe but this quantity is just right. Buon appetito!

I know it’s probably not the healthiest thing in the world to plunge your entire dinner into hot oil 🙈 But meals like this are soooo necessary every now and then when your life is controlled by food intolerances. Not only does it remind me of fish Fridays as a kid, but it also isn’t something I ever thought I’d be able to eat again once upon a time 😥 So being able to eat this is like a big 🖕🏻to how food intolerances can take over your life. I think it’s mentally healthy to enjoy food that makes you happy as often as poss! 👌🏻 (just please don’t call it a cheat day because you shouldn’t have to feel bad or feel like you’re cheating just to eat food you like. When you can make gluten free beer battered fish chips like this at home, why even bother to leave the house?! 😆🐟 I made this using @daura_damm gf beer and it the batter was soooo light and crispy! Check the link on my profile for the full recipe (or just be lazy and tag someone who will then be legally obligated to make this for you 😂) Does your local chippy serve gluten free? 🤷🏼‍♀️ Everyday or just one day a week? Had the best time looking round the stalls & being a proper south west resident trying all the ciders (& attracting all the wasps!) As someone who can’t eat gluten, festivals can be a bloody nightmare and to be honest there wasn’t a whole pile today that I found. However it’s lucky I like chips as I came across a “chips and cheese” van (dream), and got these triple cooked chips with 2 cheeses. Absolutely delicious 😍😍😍

2 bananas 
2 eggs 
1 1/2 cup rolled oats (gluten free) 
1/2 cup cashew milk (or milk of choice) 
2 tbs organic maple syrup 
1 tsp vanilla extract 
2 tsp baking powder 
Pinch of salt 
Some chia seeds & flax seeds.
. 
Blend it all together & cook on a skillet at a low temp until cooked through!.

Topped with cashew butter, agave nectar, chia seed, & raw almonds. 🥞🍌💛

Behold a vision of grilled beauty - peaches, corn, zucchini, onion, shishito peppers over arugula with a balsamic reduction. It hits you in all the right places with its sweet, salty, grilly, spicyness. And bonus: peaches are high in vitamin A/C/E/K, fiber, and potassium making them cancer fighters, amazing for skin and eyes, heart health, digestion, and lowers blood pressure. Recipe: -Grill corn in the husk for 30 mins. Set aside and let sit.
-Cut additional veggies and toss with olive oil and salt/pepper. Grill to a slight char. Set aside. -Take husks off the corn and throw back on grill to brown. Cut corn off the cob. Set aside. -Halve peaches and throw on grill as-is. Keep and eye for any burning. Set aside. -Toss arugula or greens of choice in olive oil and salt/pepper. -Plate all veggies and peaches over greens. - Top with as-is or reduced balsamic or buy the reduction already made! •
