Good morning friends! I’m home sicky today so I decided to treat myself to a plate of pancakes 🥞 I had breakfast already prepped for the week, but since I’m not feeling amazing, why not give my body something extra sweet for breakfast?? I had a little leftover @simplemills pancake mix so I mixed it and added in @traderjoes pumpkin spice seasoning and grated carrot for all the fall feels today 🍂 I topped them with @lovvelavva yogurt, @purely_elizabeth pumpkin spice granola, and @loving_earth chocolate because chocolate for breakfast is never wrong 🍫 If you guys have any good ways to heal a bad cold, let me know! As much as I love the extra rest, I don’t want to miss too much school. Have a great Tuesday ❤️

This is seriously my go-to meal.  It’s so nutritious and comforting at the same time.  What?  Comfort food that’s good for you?  YES!

If you have a chopper, you can make this soup in no time.  Otherwise, it’s quite a bit of cutting for prep.  Here is my recipe.  I hope you try it!

Ingredients:
(in order of appearance - haha)
- 2 Tbsp EVOO
- 1/2 diced medium onion
- 1/2 thinly sliced leek
- 2 chopped large carrots
- 2 chopped celery stalks
- 2 C dice green beans (1 inch)
- 1 chopped large potato
- 1 C chopped butternut squash
- 1 chopped zucchini
- 1 chopped yellow squash
- 1 C chopped chard
- 1 C chopped spinach
- water
- 1 small parm reggiano bark (optional)
- 1 C canned crushed tomato
- 1 C beans (pinto, white or light red kidney)
- salt/pepper to taste
Sauté the onion and leeks in EVOO for about 5 minutes on medium heat.  Add the carrots, celery and green beans and allow to cook for 3-5 minutes.  Add the potato, butternut squash, zucchini and yellow squash.  Mix well and let cook for another 3-5 minutes.  Add the chard and spinach and mix until wilted.  Fill the pot with water until just covering the vegetables.  Add the parmigiano reggiano bark if you are using it and salt generously.  Cover and let simmer on medium heat for 20 minutes. (regulate the heat so that the soup is at a slight boil - not rolling)  Add crushed tomato and beans and check for salt.  Let simmer again for another 10-15 minutes.  Final check for taste.  Add more salt if needed.  Serve with crostini and fresh cracked pepper!

This past weekend I have been away doing a sales show with work 👩🏻‍💼 It can be so hard when your Gluten Free and fancy a snack but have no shops near by ☹️ Thankfully the show had a couple food stalls and I came across these crips by @ten_acre_snacks 😍🥔 They where super tasty, my favourite was the When Hickory got BBQ’D 🤤 ( I love the name of the flavour 😂) I would definitely recommend if you come across them 👍🏼 All the flavours they had available at the show where also Milk Free🥛❌

🤤Receta en las historias 🤤Una de las primeras cosas que pensé no volver a comer cuando me detectaron la intolerancia al gluten fueron las tostadas francesas y casi me da algo... porque me encanta!!! Además que pienso que son un desayuno completo jejeje... Pero bendito Dios, dimos con @papuglutenfree y pude por fin volver a comerlas... 😍 Pd. El pan a veces se deshace un toquecito pero les recomiendo abrirlo con cuidado, partirlo bien uds y guardarlo en bolsitas ziploc y lo metes en la refrigeradora... y ya luego puedes tostarlo y usarlo... 😎👌🏻🤤 y al menos en las tostadas me quedan súper bien... nuevamente gracias a todas las marcas y personas que se dedican a hacer productos para nosotros... 🙏🏻 Espero disfruten las tostadas tanto como yo! #vidasingluten #glutenfreeclub #glutenfree a#glutenfreerecipes #singluten #gfree_lifeclub

A bit obsessed with peaches at the moment, so I’m trying to put them to good use. 🍑✨This morning I layered them on top of some creamy coconut yogurt ... then squeezed in a warmed sweet potato muffin, raspberries, turmeric & pumpkin spice, more coconut, and a big spoonful of @sunbutter for protein. Super simple, super satisfying, and tastes even better when you’re bundled up in a sweater.👌🍂 Happy Tuesday Everyone! #hanmadebyhg

Mám moc ráda přirozeně bezlepková jídla. Tohle pohankové "rizoto" je navíc super jednoduché, zdravé a moc dobré! Použila jsem jen pár surovin a skvělý, chutný oběd je na světě. 
200g pohanky loupané
2 jarní cibulky
3 tenčí stonky řapíkatého celeru
1 větší nastrouhaná mrkev
8 kusů sušených rajčat
400g kuřecích stejhenních rízků

Pohanku vařte 3 minuty v osolené vodě s olivovým olejem a pak nechte 30 minut odstát. Na olivovém oleji osmažte nakrájené kuřecí stehenní řízky a pak je vyndejte. Zpátky do výpeku v pánvičce dejte pokrájenou cibulku, nakrájený řapíkatý celer, nastrouhanou mrkev a orestujte na nejvyšším stupni. Pak stáheňete oheň na střed a přidejte nakrájená sušená rajčata, vraťte maso, přidejte sůl a pepř a promíchejte. Slejte zbylou vodu z pohanky a pohanku přidejte k zelenině a masu, zasypte parmezánem a promíchejte. Můzete podávat! Dobrou chuť 😍

1 small apple 
1/2tsp.-1 tsp. @primalpalate apple pie spice
1/4 cup @bobsredmill quick cooking oats 
2 tbsp @kingarthurflour almond flour 
1/2 cup unsweetened almond milk
DIRECTIONS:
Sauté apples with apple pie spice in a little oil (I used @thrivealgae ), then add in other ingredients, stir, and cover for 5 minutes to allow the liquid to absorb and get a little crispy. It’s super simple & no waiting around required. | For tonight’s shredded chicken ( serves 4-6 ) : place 2 chicken breast in your crockpot + 1 cup chicken broth + drizzle with olive oil + liberally sea salt each chicken breast + 1 tbsp of taco seasoning + 2 crushed garlic cloves | cook on high for about 3 hours ( should have an internal temp of 165 ). | then shred ( I use 2 forks to shred ). | stir the chicken in with the sauce that’s in the crockpot.| ✔️

Happy evening guys and thanks to you all lovely people who wishes me personally yesterday on my birthday. 
Last week had been really hectic, as kiddo exams are happening and I had to rush to mumbai for a day in emergency. 
Came back home Sunday night. But, cooking happened today only. It was a simple comfort meal of delicious chilled refreshing Pineapple Raita with some khichdi achaar and papad. 
Dinner will be again this raita, roti and sabzi.

Quick Baked Cinnamon & Raisin Bagels (using a silicone doughnut mould)

Sometimes (ok occasionally) at the weekend I'll have a sudden burst of energy in the morning and jump out of bed and make something delicious for everyone while they're still asleep. So the other morning that happened and I decided cinnamon and raisin bagels topped with cream cheese was the way to go.
When I say these are quick... I mean in comparison to making real boiled bagels. These probably took 40 minutes start to finish including baking. All you need to do is mix the ingredients together and cook in a silicon doughnut mould.

Quick Cinnamon & Raisin  Bagels (Makes 6-8)
•250g gluten-free flour
•1 tsp baking powder
•½ tsp xanthan gum
•2 tsp sugar
•1 tsp cinnamon
•1 tsp salt
•50ml olive oil
•120ml dairy-free milk or cream
•3 medium eggs
•Handfull of raisins

Preheat the oven to 180 degrees C. Spray a silicone doughnut mould with oil and dust lightly with flour.

In a large bowl mix the eggs, oil & milk/cream until smooth.

Add in the dry ingredients and mix well.

Put the mixture into the silicone doughnut mould, filling each about ¾ full. Bake for 30 minutes until golden.

I toasted mine and topped it with cream cheese and figs. (Best eaten same day, or extras can be frozen)

Mark’s been feeling pretty rough recently (not sure if you knew but he’s had a hernia since like the beginning of this year!!) 😭 He was down to have an op to repair it, but an ultrasound showed that it’s very minor so he’s trying to see if it’ll recover on its own... but sadly he’s aggravated it a bit recently 🤕 So I thought I’d make him this to try and cheer him up! The ‘Nutella’ is actually @natures_store chocolate and hazelnut spread and the whipped cream is the @instafoodheaven vegan/dairy free version 👍🏻 100% dairy free! Needless to say, he was jumping for joy! (not literally 😂 he is injured after all!) Anyone here had any experience with hernias? Will he ever get better?! It’s coming up to a year now!! Any advice much appreciated by me and Mark 💕
Gluten free Nutella waffles 😍💥🥊 Made using my 4 ingredient waffle recipe! Check my story for the recipe and make your own, it’s perfect for sweet or savoury toppings 👌🏻 Tag someone who needs to make this for you (preferably someone with a waffle maker 😂) Would your mind be totally blown if I said this was 100% dairy free too?!! 🤭🤭🤭! . Mark’s been feeling pretty rough recently (not sure if you knew but he’s had a hernia since like the beginning of this year!!) 😭 He was down to have an op to repair it, but an ultrasound showed that it’s very minor so he’s trying to see if it’ll recover on its own... but sadly he’s aggravated it a bit recently 🤕 So I thought I’d make him this to try and cheer him up! The ‘Nutella’ is actually @natures_store chocolate and hazelnut spread and the whipped cream is the @instafoodheaven vegan/dairy free version 👍🏻 100% dairy free! Needless to say, he was jumping for joy! (not literally 😂 he is injured after all!) Anyone here had any experience with hernias? Will he ever get better?! It’s coming up to a year now!! Any advice much appreciated by me and Mark 💕

PEANUT BUTTER PUMPKIN COOKIE DOUGH BITES! Yes, please! 🙋🏻Love love love these on so many levels! 😎NO BAKE, VEGAN, GLUTEN/GRAIN FREE, & DaYUM GOOD! 🙅🏻
Hope ate half the dough before we even finished putting them on the cookie sheet! 👧🏼 She was born a pumpkin fan! Which isn't surprising 👩‍👧
Here's the DeAts👇🏼
1 cup chick 🐥 peas 
2 small ripe bananas 🍌 
1/3 cup organic punkin @pacificfoods 
5 dates 
1/2 cup pb @crazyrichardspb 
1/3 cup coconut butter @artisanaorganics 
1/2 teaspoon vanilla powder 
1 teaspoon cocoa powder @sunfood 
1/2 teaspoon each cinnamon & apple pie spice 
1/4 teaspoon ginger 
Process in food processor. 
Stir in desired amount of 
88% dark chocolate chips (I used a handful) 
Drop 💧a tablespoon of dough onto parchment paper on cookie sheet. Top with few more chocolate chips. 
Refrigerate 2 1/2 hours to set and harden. Or enjoy the dough immediately! 😋You're welcome! 😉

Fusilli zucchine, pancetta e sottiletta! 🥒🥓🧀🍝 Fame, ma poco tempo per preparare?!
Tagliare una zucchina e cuocerla in un filo d'olio mentre mettete sul fuoco la pentola per la pasta. Tagliare della pancetta se come me avete la fortuna di averla perché fatta in casa (da vera calabrese) o se usate quella confezionata va bene ugualmente 😉;mettetela direttamente nella padella con le zucchine quando quasi cotte!
Dopo aver scolato la pasta aggiungerla alle zucchine 🥒 e alla pancetta 🥓 e infine aggiungete la sottiletta. Se serve tenere da parte un goccio d'acqua di cottura per renderla più cremosa nell'insieme!

I will show the picture of the completed pizza in the evening. I cannot wait to eat this. It sseems easy enough to cook these the only thing I would change is flip it over midway so the front and the back are crispy.
