Insanely good millet cornbread. 1 C millet flour (you can grind it yourself in a blender); 1/3 C sweet potato flour and arrow root flour (half and half of each or just choose 1 to use); 1/3 C sourgum or cassava flour; 2 tsps backing powder; 1/2 tsp salt; 3 tbsp date sugar; 1 tbsp agar agar (optional); 2 eggs; 1 C unsweetened hemp milk; 1 tbsp lemon juice; 3 tbsp melted coconut oil. Mix dry ingredients; mix wet ingredients; mix both together; bake in skillet at 425 until top cracks. Betabel asado con aderezo de tahini 😛 * 3 betabeles grandes, partido en 4, pelados
* Sal
* 2C aceite de oliva 
Para aderezo:
* 1/2c ajo en polvo
* 1/4T aceite de oliva * 2C vinagre de vino tinto
* 2C tahini
* 1C agua tibia
* 1c sal * Perejil (opcional)

Precalienta el horno a 400F. Pon los betabeles en un payrex con aceite de oliva y sal. Tapa con aluminio y hornea 20 minutos; voltéalos y hornea otros 20 min. Licúa el ajo, vinagre, tahini, agua, aceite y sal. Parte el betabel en cuadritos y adereza. Corona con perejil. It’s absolutely true that most of America eats 5-6 times their daily recommended portions of carbs. And don’t get me started on processes sugar! Sadly, most people have no idea what three-four servings of carbs even looks like! .

But not all carbs are bad!!! And our bodies actually function and regulate blood sugar better with a limited amount of high fiber carbs and natural sugar.

I make a double batch of these mouth watering gluten and dairy free banana oat pancakes every week because I live in a house of carboholics and I have to keep them in check! .

I feel great about providing them with a high fiber, high protein, low sugar, delicious breakfast, and they feel good having balanced sustained energy through lunch. .

I've had some surplus veggies lately and I'm determined to make every homemade veggie chip I can! Up this week: zucchini! Place parchment paper on cookie sheets, brush with olive oil. Slice zuchini as thin as possible, place single layer on cookie sheets. Brush lightly with olive oil, sprinkle with salt and pepper. Bake at 200 for 2-2.5 hours, until crispy. Best eaten the same day!

I used 2 cups GF flour, quarter teaspoon xanthum gum, half tsp baking powder and baking soda, a little milk to mix and then in the freezer for ten minutes unless you want to wear it. Baked at 175 degrees having topped with GF pesto and cheese...and then a little more cheese to hide the burn marks - I’ve also learned today that GF flour cooks in no time at all so best to stay close by the cooker during these rookie days.

I consider myself very lucky when I was first diagnosed with hypothyroidism in 2011.

Firstly, I was lucky because it runs in my family & I knew that it was likely I would have it. We call it a family curse because my grandmother struggled for years before she was diagnosed back in the 60s & my sister was struggling before she was diagnosed right before I was.
.
Secondly, I didn’t think I was displaying symptoms at the time of diagnosis (although in hindsight my muscular spasms, digestive issues, inability to stabilize my weight regardless of how little I ate, & hair falling out was probably due to Hashimoto’s).
.
& thirdly, 2011 was around the time that gluten-free living went mainstream. At the time, I did not want to take medication everyday if I could help it & I had done research that suggested that a strict diet change could reverse thyroid disorders.
Did it reverse the family curse? No. I now take very high doses of medication to feel like a human being everyday. It took 3 & a half years to find the right dose & balance.

What I’ve found going gluten-free (& subsequently corn & soy free) has done over the years is it slowed the progression of the condition & it now helps to make my medications work optimally. Did I mention that I battled digestive problems since I was a baby that cleared up when I eliminated gluten? I can now eat without the help of Pepto-Bismol.
My point is that I am grateful that it was a painless experience to go gluten-free & I actually think back at the time fondly.

At the time, I went back to Northern BC to visit one of my favourite restaurants of my childhood & the owner made me a dahl soup. It has to be one of my fondest memories. It was one of the most exceptionally balanced, simple, & delicious soups. The owner made me feel normal & she was so open about discussing how she made it.

I recently made it for myself to remind myself of that time. It’s just stewed lentils with garam masala, garlic, ginger, & a flavourful broth. It’s pureed & topped with an oil made with freshly toasted spices & chili.
It wasn’t exactly like the original. I’m not sure I will ever be able to recreate that moment. But this was pretty darn close.

This cake is easy to make and when cut into squares is terrific in a school lunch!

Breakfast Cake

2/3 cup gluten free flour blend (I used  @sobeys Compliments but @bobsredmill 1 to 1 works great)
1 tsp baking powder
3/4 cup brown sugar 
1/2 cup @becelca soft sticks 
2 large eggs
1 tsp good quality vanilla
1 cup @stokedoats Stone Age Oat Mix
1 Tbsp @bobsredmill flax seeds
1/2 cup @enjoylife mini dark chocolate chips
1/4 cup raw walnuts 
Preheat oven to 325 degrees.
Line a square pan with parchment paper.
In a stand mixer add the bevel soft stick plus the brown sugar. Mix. Add the eggs and vanilla  and mix well. In a small bowl whisk the oats, gf flour, flax seeds, walnuts and baking powder.
Add the dry ingredients plus the chocolate chips and mix.
Spread the batter into the lined square pan and bake in oven for 20-22 minutes.
Remove and cool before cutting. ....

This cake is easy to make and when cut into squares is terrific in a school lunch! 👇🏼 Breakfast Cake 2/3 cup gluten free flour blend (I used @sobeys Compliments but @bobsredmill 1 to 1 works great) 1 tsp baking powder 3/4 cup brown sugar 1/2 cup @becelca soft sticks 2 large eggs 1 tsp good quality vanilla 1 cup @stokedoats Stone Age Oat Mix 1 Tbsp @bobsredmill flax seeds 1/2 cup @enjoylife mini dark chocolate chips 1/4 cup raw walnuts Preheat oven to 325 degrees. Line a square pan with parchment paper. In a stand mixer add the bevel soft stick plus the brown sugar. Mix. Add the eggs and vanilla and mix well. In a small bowl whisk the oats, gf flour, flax seeds, walnuts and baking powder. Add the dry ingredients plus the chocolate chips and mix. Spread the batter into the lined square pan and bake in oven for 20-22 minutes. Recipe of the day!
Acorn Squash Soup 
Ingredients: 
2 medium acorn squash
1 Tbsp extra-virgin olive oil
1 medium carrot, chopped
1 stalk celery, chopped
1 small onion, chopped
1 tsp ground cumin
1/4 tsp chile pepper
1/4 tsp ground cloves
4 cups low-sodium chicken broth 
1 Tbsp maple syrup
1 tsp salt
¼ tsp ground pepper
6 tablespoons sour cream (optional)
1/3 cup chopped fresh chives (optional) 
Instructions: 
1. Preheat oven to 375 F
2. Lightly coat a large baking sheet with cooking spray
3. Cut squash in half horizontally
4. Scoop out and discard seeds
5. Place the squash, cut-side down, on the prepared baking sheet
6. Bake until tender, about 45 minutes
7. When cool enough to handle, scoop out flesh
8. Heat oil in a large saucepan over medium heat
9. Add carrot, celery and onion and stir to coat
10. Cover, reduce heat to medium-low and cook, stirring frequently, until soft, 8 to 10 minutes
11. Stir in the squash flesh, cumin, chile pepper and cloves
12. Add broth and bring to a simmer
13. Reduce heat to maintain a simmer and cook, covered, until the vegetables are very tender, 25 to 35 minutes
14. Puree the soup with an immersion blender or a regular blender (in batches) until smooth
15. Season with maple syrup, salt and pepper
16. Garnish each serving with a dollop of sour cream and a sprinkling of chives
17. Enjoy!

I never feel guilty about a big ol bowl of soup, and even less guilty when that bowl contains a big ol serving of vegetables!

A cross between a cabbage and a turnip, rutabagas are synonymous with the autumn harvest and pair wonderfully with other root veggies such as parsnip and butternut squash but are often forgotten or overlooked. Maybe because it kinda looks like a brain? 🤔 It can a little intimidating so start small and why not make it into a soup?
The good people at @canadianliving did just that and it totally works! Invest a little bit of extra time and make the basil-chive oil to swirl on top, it compliments the soup beautifully. Tasty meal for tonight's dinner 😍

Tried the chicken @heckfooduk sausages for the first time and was pleasantly surprised. Grilled them and had them with a @bfreefoods baguette which was amazing. Also had sides: a small sweet potato, red pepper and tenderstem broccoli.

One of the tastiest and newer meals I've had in a while 😊

Si perché... Cioccolato-pistacchi è un abbinamento che è un’esplosione di gusto, non trovate? E a ogni cucchiaiata pensi solamente: “non finire, ti prego, non finire!” 🙏🏻😂
Poi ho comprato per la prima volta la farina di teff che è senza glutine e ha un basso indice glicemico, ed ero super curiosa di sperimentarla.
Ah, chiaramente il mio dolcetto è senza zucchero e cuoce in microonde in un solo minuto, resta morbido e all’interno ha un cuore ancor più tenero, fondentissimo che ti ci perdi dentro! Niente scuse quindi, fossi in voi correrei subito a prepararla 😉

Ingredienti ➡️: 45 gr di farina di teff (o altra farina) . 4 gr di farina di carrube . 20 gr di cacao amaro . 10 gr di stevia . 10 gr di olio di cocco . 1 uovo @lenaturelleofficial . 50 gr di latte di soia light @alpro . 10 gr di acqua fredda . 1 pizzico di sale . 4-5 gr di Frizzina . 5 gr di pistacchi . 5 gr di gocce di cioccolato bianco . un pezzetto di fondente .

Czekoladowy chleb z cukinii jest genialny! Pochodzi z bloga @kingaparuzel Zamiast mąki gryczanej użyłam ryżowej i skrobi z tapioki. Dodałam ksylitol zamiast cukru i wodę zamiast mleka 👍 Mój P. jest wprost oczarowany, bo to przecież takie fit brownie, a on kocha brownie 😍
Do tego konfitura z malin i chia z sokiem z limonki słodzona ksylitolem ❤️ Pyszny duet! 🤤💕

Chocolate zucchini bread from @kingaparuzel is amazing! My P. love it because it is so chocolate and tastes so delicious with #raspberry chia jam ❤️
▪️1 ¾ glass buckwheat flour (I added rice flour and some tapioca starch)
▪️⅓ glass cocoa
▪️1 ½ tsp psyllium seed husks or ground linseed
▪️1 ½ baking powder
▪️½ tsp baking soda
▪️½ tsp sea salt
▪️¾ glass cane sugar (I added more xylitol)
▪️¼ glass chopped dark chocolate 70%
▪️2 eggs
▪️¼ glass water
▪️½ glass rapeseed oil
▪️2 glasses grated zucchini (medium size)
▪️1 tbsp lemon juice
Mix flour, cocoa, psyllium seed husk, baking powder, baking soda and salt and chopped chocolate. Mix eggs, xylitol, lemon juice, water and oil for 7 minutes. Add dry ingredients to wet ingredients and mix fast. Add grated zucchini and mix. Bake in a mold 10x25 cm lined with a baking paper. Bake for about 1 hour in 180 ºC.
