Tak trochu jiné muffiny 🍎🍏🍥
Před časem jsem dostala knihu "Bez cukru, v pohodě a napořád" od Sarah Wilson a tak chci omezit cukry úplně. Bílý cukr nepoužívám už dlouho, ale hnědý nebo kokosový často a chci to změnit 😶
Dnes přišel na řadu první recept a to takové dětské muffiny, které teda chutnají i mě 😁
2 + 1/2 šálku mandlové mouky
1/4 šálku bramborového škrobu
2 KL kypřícího bezl. prášku
2 KL mleté skořice
2 oloupaná domácí jablka bez slupky
4 PL chia semínek
1 šálek vody
1/2 šálku rýžového sirupu
1 PL jablečného octa
1 šálek mandlí nebo pekanových ořechů
Chia semínka se smíchají s vodou, octem, sirupem a nechají chvíli odstát a vytvoří náhradu za vajíčko.
Ostatní suché suroviny se smíchají v druhé misce a přidají se i nakrájená jablíčka na kostičky, aby se v sypké směsi dobře obalila. Pak už smíchám oboje směsi do sebe a plňím do formiček na muffiny vyloženými papírovými košíčky.
V receptu je uvedeno, navrch přidat pekanové ořechy smícháme s rýžovým sirupem, já použila mandlové plátky a švestkový sirup 😉

I’m so happy that the rain came and we got a reprieve from the hot spell. I took the opportunity to bake some apple muffins as well as the choc chip muffins. Easy one bowl muffins with easy clean up. About all I’m up for right now.
I usually don’t let someone finish the question“oatmeal raisin or chocolate chip?” Before yelling “OBVIOUSLY CHOCOLATE CHIP!”. Raisins have just never been my jam so this snack was a no brainer. @mikeys chocolate chip muffin top, @tedpeanutbutter , and @enjoylifefoods chocolate chunks👌🏼👌🏼

Das schöne am Reisen ist es unter anderem auch immer wieder neue glutenfreie Produkte zu entdecken. Im "Baguette" im M-Preis gibt es seit kurzem in eizelnen Filialen in Salzburg, Tirol und Vorarlberg die Genius Produkte. @geniusglutenfree Ich hab mich mal durchgekostet. Das Rosinenbrot, und die Zitronen-Mohn Muffins sind schon mal seeeehr zu empfehlen! Und das obwohl ich gar kein großer Fan von Mohn bin. Die Schoko Muffins werden demnächst getestet.
Das einzig komische ist, dass die Produkte alle kein richtiges Ablaufdatum haben? Ist das bei euch auch so?
So yesterday after making all the plans to have an epic meal prep (which included these awesome coconut quinoa muffins), we discovered the air was out in our downstairs.
Our new home ownership journey has not been kind to us this past few weeks. We’ve had a roof leak, the dishwasher started leaking, and our air cut off. I’m exhausted just thinking about it!
But the great news is that Dave and I have lots of experience with air conditioners after living in Texas and owning the gym. Turns out it was an easy enough fix and we were back running after an hour.
I made it to the store (3 hours later) and meal prepped from 6pm-8:30 or so last night off and on, as I did some other things around the house.
Why am I sharing this? Well the journey with our house is a lot like my plans for how I expect my health journey to go vs how it actually goes.
Life gets in the way. We have to make adjustments, call experts and troubleshoot all the things. And eventually we get to move forward, soon forgetting there was even an issue.
But many of us stop at the first sign of trouble or resistance. It’s too hard, it’s not worth it, it shouldn’t be this hard. Yup I was thinking the same thing as we were stuck in the attic sweating our faces off fixing the a/c yesterday.
But it felt great when we were done and now we know to look for that issue going forward.

I know myself and so many others share some amazing places to eat out across the UK and more, but @wearefarmstand are honestly such a good pick of the choices we have.
Not only for its amazing range of allergy friendly food, but I actually managed to meet the Founder, Steven, yesterday. I wasn’t aware of the fact he based the restaurant around his diet when he had Cancer, and honestly the staff are always so so friendly. Their story, their mission and their service is incredible, the food is just an added bonus.
I was unfortunately not able to have any of the Mains due to my intolerances but they try their best to Cater for as many allergies/intolerances and people as possible and allowed me to try these Muffins as an apology. Not that an apology was needed.
Anyway my paragraph summarised? Read their story, make a visit, get to know the amazing staff and, eat delicious food... especially the Cinnamon Swirl Muffin 😉🤤

This recipe was originally featured in My Father’s Daughter. As far as fruity baked goods go, these are def worth whipping up a second batch. ✨
Recipe adapted from My Father’s Daughter:
1 sticks unsalted butter, melted and cooled
2 large organic eggs
1/2 cup whole milk
2 cups unbleached all-purpose flour
3/4 cup plus 1 teaspoon granulated sugar
2 teaspoons baking powder
1/2 teaspoon kosher salt
2 1/2 cups fresh blueberries, rinsed and dried
1. Preheat the oven to 375ºF.
2. Bake them for about 25 to 30 minutes, or until a cake tester comes out clean.

2 yumurta, 100 gr kadar beyaz peynir, dereotu,zeytin, zeytinyağı, biraz sucuk,kırmızı biber,kekik,tuz,2 kaşık dolusu yoğurt, yarım su bardağından biraz fazla glutensiz un. Malzemeyi karıştırıp muffin kaplarına koydum. 180 derecede pişti. Kaşıkla yağsız tavaya döküp pankek gibi de pişirilebilir. Afiyet ve sağlıkla...
