Breakfast, lunch or even a quick dinner? I had this as a late brekkie this morning after a much needed sleep in.
Featuring 2 eggs, 2 handfuls of torn cavolo nero, left over potatoes (great source of resistant starch to feed the gut) and a 1/2 tsp of curry powder (maybe even less).
Into the pan went some EVOO, the potatoes, kale and I let that wilt and heat through. Then I beat the eggs with some curry powder and poured them into the pan. A bit of salt and pepper and my meal was ready. So quick and easy!!!
Did you know that eggs are a good source of choline which is a much needed nutrient in pregnancy (esp in the 3rd trimester).
Hey guys! So, I realize it's been forever since I've posted! But, here's my recipe for juicy, tender beef brisket! So simple.
All you need is the brisket, (mine came with a seasoning pack and it's GF), 1/2 cup Apple cider vinegar, and an entire bottle of barbecue sauce. It doesn't matter what kind of bbq sauce you choose, but I used hickory bbq. Add meat to crock pot, pour in vinegar, bbq sauce and seasoning pack if your meat came with it (always read the labels!) And cook on low for 10-12 hours! Delicious! Cuts with a fork!

These are the BEST Veggie Tacos I have ever had (You need to try them!) Ingredients
3 small zucchini, sliced lengthwise
2 small yellow squash, sliced lengthwise
1 small eggplant, chopped
3-4 tbsp extra virgin olive oil
Salt and pepper, to taste
1 tsp chili powder
1 tsp cumin
Pinch of cayenne
1 avocado, pitted
Juice of 1 lime
1/2 red onion, thinly sliced
2 tbsp cilantro, chopped
1 lime, cut into wedges
8 Paleo tortillas
1. Place the zucchini, squash, and eggplant into a large bowl. Drizzle with olive oil and sprinkle with chili powder, cumin, cayenne, and one teaspoon of salt. Add pepper to taste. Toss to coat.
In a small bowl, mash the avocado with the lime juice and a dash of salt. Set aside.
2. Heat the grill to medium-high. Place the zucchini, yellow squash, and eggplant onto the grill and cook for 8-10 minutes, turning once, until slightly softened but still crispy.
3. To assemble, top each tortilla with a few pieces of squash or eggplant and red onion. Spread the avocado mixture over the vegetables and garnish with cilantro. Serve with lime wedges.
Such a great gluten free menu @leadbellysbar @ Canada Water. 95% of their menu is gluten free including loads of things that are normally off limits for coeliacs. Highlights for me were the Calamari, a really light and crispy batter and the Halloumi fries 👌! The charred broccoli was also a favourite! It was busy and he service was a bit hit and miss but we were sitting in the sunshine and in no rush. All of their burgers and sandwiches could be adapted too. Great work 😉
Frittata for lunch today! I packed it with Coca Cola cooked ham, salami, onions and broccoli 🥦 . Topped with sprinkled cheese to crisp up under the grill 😍 I had it with some salad leaves and balsamic glaze 🥗. I always forget how easy to make, yet absolutely delicious these are ♥️ What has everyone else had for lunch?
Chilli and tomato baked cod with crispy kale. .
1 cod fillet
5 cherry tomatoes, sliced
1 clove garlic, sliced
1 tbsp lemon juice
1/2 tsp chilli flakes
Salt and pepper
1 tsp coconut oil .
Place the cod in a baking dish and add all ingredients (minus kale and coconut oil), cover with foil and bake for 20 minutes on 170C. Ten minutes before the fish is ready place the kale on a baking tray, rub with coconut oil and season with salt and pepper and bake for the remaining time the cod is cooking.
Well we thought this week might have been fairly chilled, what with us having been off the previous one and it being bloody roasting but no, clearly Scotland isn’t willing to give up the title of world’s biggest consumers of soup lightly. I’m not aware of a cake index but I’m quite sure Cathcart has that one nailed down all on their own.
Big deal Delia is off galavanting down south just now so there will be no deliveries available today but it shouldn’t affect normal service as she seems to spend most of her time gabbing these days anyway, it’s almost like she only turns up to collect leftover cake. Don’t worry, she’s not reading this - she still doesn’t trust the internet.

Summer is in full force here in the Pacific Northwest with 90+ degree days 🤩 and I'm finding ways to cool off. I decided to go for a dip in a bowl full of super-blue-foodie deliciousness. Summer berry salad 🥗 😎. It has been hottt here and I have not felt like heating up my little apartment by turning on the oven...so I have to find other options for meals. Threw together this salad with spinach, sauteed sweet potato, chopped red bell pepper, strawberries, blueberries, pepitas, avocado, and topped with a lemon tahini dressing...This was so refreshing and filling!
