2 cups almond flour
1/4 cup tapioca flour
1. Mix dry ingredients
2. Beat eggs
3. Blend it all together
4. Roll out on parchment paper
5. Cut into small pieces (roll into balls if you like the look or fork print them)
6. Put into boiling water till they rise to the top and cook 2 more minutes.
7. Eat with garlic oil, sauce, butter, in soup, fried :)

I went to the cutest cafe the other day and had the most amazing meal 😍 @fettle in Leeds does lots of gluten free options which they made sure were coeliac safe for me 🙌🏻! I had the toasted gnocchi on cashew nut cream with edamame, green beans, spinach & basil pesto, with feta and chorizo ♥️. It was honestly dreamy and I could not fault it and I can not wait to come back and try their other options! Who else has been here or would love to try it? ☺️
Idk how people make this look good but I tried @traderjoes #cauliflowergnocchi and lemme tell you...the hype was right. It’s so good and all around surprising especially considering I don’t think I’ve ever had real #gnocchi I paired it with broccoli which basically means I just ate broccoli and cauliflower for dinner and I can already feel how it’s affecting my tummy. Oh well pretty worth it!!!
This is probably the best tomato sauce I’ve ever made! We canned tomatoes at my Nonna’s house on Sunday and I made some sauce out of those tomatoes. The tomatoes were so meaty and sweet. The sauce was even better the next day when we made this rice gnocchi!

Vegan, gluten-free gnocchi I found at the markets yesterday, pan-fried in a homemade tomato veggie sauce - 1 can diced tomatoes, 1 leek, 3 garlic cloves, 1/2 chopped eggplant & 1 cup sliced mushrooms, handful cherry tomatoes, Italian herbs, salt & pepper sautéed with a little olive oil. When soft, pulse in a blender/food processor to make it chunky yet still saucy. Stir through parsley 😀🌿 Easy!

It's the weekend! The first week of school is done, 12 weeks to go! 💪🏽 my first week was interesting... hehe but I'm SO glad I got to see familiar faces in between classes or just randomly meet people I know. 💕 THIS was the gnocchi pesto lunch I made a few days back. Guys, I think my new favourite pasta is gnocchi. It's my first time trying this & I am so obsessed with this it tastes SO goooood 😭 I bought this gluten-free gnocchi from London, and the vegan pesto I used was also from London 😆 It was worth it using up 1/2 of my baggage space for food 😎 I've been thinking of making my own pesto for some time... which I think I will one day insha Allah - I've looked it up and it looks pretty easy! But here's how I made this easy meal:
Ingredients I used: GF gnocchi, vegan pesto, spinach, garlic powder, chilli flakes, homemade meatballs by mum, grass-fed butter, salt & pepper.
What I did:
Boil the gnocchi according to the packaging directions. Melt a blob of grass-fed butter on a heated pan. Add in the gnocchi, meatballs, and stir fry. Add in the pesto, garlic powder, chilli flakes, and stir until well coated. Stir in spinach. Season with salt & pepper. Enjoy!! 🙌🏽
Didn’t know what I was going to make for dinner last night, but luckily came up with this! Pan-fried gluten-free gnocchi with roasted tomatoes and fresh corn. It was delicious! 😋🌽🍅🌿
I made this up as I was going along, so I don’t have an exact recipe, but here’s how I made it: First, I roasted cherry tomatoes and a bulb of garlic - just placed them on a baking dish and drizzled with avocado oil, seasoned with sea salt, black pepper, oregano, and basil; roasted at 400 for about 15-20 minutes. Meanwhile, I boiled some corn-on-the-cob. Next, I sautéed sliced red onion in a pan until they became translucent. Then I added in the roasted tomatoes, two cloves of garlic, the corn niblets (I just cut it off the cob) and fresh basil. Seasoned it with some sea salt, black pepper, oregano, and parsley. Combined it well and then removed it from the pan. I took the cooked gnocchi and added it to the pan with a drizzle of avocado oil. Turned up the heat and let the gnocchi turn golden and crisp. Then added back the veggie mixture and a little pasta water. Mixed it all together and served! 😮Homemade 2 ingredient CAULIFLOWER GNOCCHI y’all! @matcha_and_margs took @lilsipper’s Trader Joe’s look-a-like recipe and pan fried it to make this plate of goodness right here! (sautéed yellow onions, mushrooms with some thyme, salt, pepper and @chosenfoods avocado oil also make an appearance) Recipe below!
1 medium head of cauliflower
1 1/2 cup Otto’s Cassava Flour
1.Steam cauliflower until tender, then transfer to a blender (do not add any liquid) while still hot and puree until creamy.
2.In a large bowl, mix 1 cup of cauliflower puree ( reserve the rest for another dish / eat it as “mashed potatoes” or use to make @lilsippers Cauliflower Cheese) with Otto’s Cassava Flour. Use hands to knead until a dough ball forms. IMPORTANT: This step must be done while cauliflower puree is still hot / warm.
3.After you have a large ball, form into desired shape. You can cook immediately or store in fridge to cook at a different time / day.
To cook, drop gnocchi in boiling water. When they float to the top you know they’re done!
Pan fry or simply serve with favorite sauce and enjoy!

Nhoque de Batata Doce Roxa ao Molho de Sálvia 💜
- 400g de batata doce roxa assada/cozida
- 8 col. sopa rasas de farinha de arroz ⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 8 col. sopa rasas de polvilho doce
- 1 ovo
- Sal a gosto
Amasse as batatas já assadas/cozidas até o ponto de um purê uniforme. Misture os demais ingredientes até obter uma massa homogênea que não gruda nas mãos. Pode ser necessário colocar mais farinha se a massa estiver muito úmida, o que, é relativo ao cozimento, à temperatura etc. Em uma superfície enfarinhada, modele pequenas porções da massa em formato de cobrinha na espessura de um dedo e corte pequenos pedacinhos. Em seguida, em uma panela com água fervente e uma pitada de sal, despeje os nhoques. Primeiro, os nhoques afundam e depois sobem para a superfície quando estiverem prontos. Retire da água delicadamente com uma escumadeira e disponha num refratário. Sirva com o molho e folhas de sálvia para decorar.
Para o molho 🍃 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀
- Creme de leite ou Nata (pode ser sem lactose)
- Folhas frescas de Sálvia (seja generoso)
- Sal e pimenta do reino a gosto
Em uma panela aqueça o creme de leite até levantar fervura e acrescente as folhas de sálvia rasgadas grosseiramente, abaixe o fogo e deixe cozinhar até que as folhas estejam bem murchas, liberando o sabor, mexendo para não grudar no fundo. Acerte o sal e a pimenta do reino e sirva banhando o nhoque. 💜🍃 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Obs.: para assar as batatas eu apenas as enrolei em papel alumínio e levei ao forno pré-aquecido a 200° por cerca de 60 minutos, sendo que ficaram super macias. O tempo depende do tamanho das batatas. Garanto que dessa forma se torna mais prático e as batatas não retém água como no cozimento comum, sendo ideal para o preparo do nhoque. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Marinara cauliflower gnocchi with mozzarella and basil 🌱 ...to tell you the truth not a big fan of the cauliflower gnocchi from Trader Joe’s..it’s a bit too soft/mushy for me! Still tasted good though!
