At first I wasn’t too sure if I liked them...but then I quickly jumped on the cauliflower gnocchi bandwagon. They have been very difficult to get ahold of, every time I have gone to @traderjoes they’ve been completely sold out, but finally had some luck in my favor. I cooked them with some mushrooms and kale and added pesto. Definitely going to work on creating a plant-based red sauce gnocchi dish soon 😋
Dinner. Keto gnocchi over pasta sauce. The gnocchi is made by melting 2 c mozzarella and 1/2 t garlic powder in the microwave for 1 minute then mixing in 3 egg yolks one at a time. Mix thoroughly. It will be sticky. Cut the “dough” into fourths and roll each fourth into a long rope and place on parchment. Put in fridge for 10 minutes. Here's how to make the cilantro cashew cream sauce:
-Soak one cup of raw cashews for 20 minutes with enough water to cover.
-Add to food processor or bullet with 2 cloves chopped garlic, a handful of fresh cilantro roughly chopped, 2 tablespoons chopped scallions, juice of one lemon, 1/2 tsp. sea salt, ground black pepper and 1/2 cup water (leftover soaking water).
-Blend until creamy.
-Pulse in extra water if needed to desired consistency. Adjust seasoning as necessary to taste.
-Store in a container in the fridge for a few days then heat and toss with Nuovo Pasta #GlutenFreeGnocchi !

Yum Pumpkin Gnocchi is so easy and so yummy 😋 i find it works best with roasted pumpkin 🎃 then add enough gf flour make a sticky dough ( with nutritional yeast and salt.)..... if the dough is alittle sticky this keeps the gnocchi soft ( too much flour and over working will make them tough) ..... then roll into ropes on a floured board....portion into little pillows ... drop into pot of boiling water and wait for them to rise to top then wait a few minutes and remove from water ... drain .. carefulnot to over crowd the pot .. and cover the ones with a tea towel that are still waiting to be cooked xxxx
ROASTED #VEGAN POTATO GNOCCHI...pronounced as NAW-kee are various thick, small, and soft dough dumplings that may be made from semolina, wheat flour, egg, cheese, potato, breadcrumbs, cornmeal, or similar ingredients. The dough for gnocchi is most often rolled out, then cut into small pieces of about the size of a cork. They are then pressed with a fork or a cheese grater to make ridges which hold sauce. Alternatively, they are simply cut into little lumps. ✨Recipe✨
500g baking potatoes
1/3 cup arrowrroot starch
1/2 cup red rice flour
1/2 cup gram flour/besan
1/2 tsp sea salt
🔸Cook potatoes in boiling water in their skin and drain. Let cool only till it's easy to handle.
🔸Peel the potatoes and mash them. 🔸Add flour gradually and rest of the ingredients and form a stiff but slightly sticky dough. Use just enough flour needed. Too much flour will make the gnocchi dense. 🔸Dust some rice flour on a clean surface. Divide the dough into several parts, roll them into 1/2 inch diameter long cylinders. Cut them into 1/2 inch nuggets. You can either cook them this way or create the distinctive ridges by placing the nuggets at the top of the fork tines and gently pressing down, rolling it across the fork with your thumb. It will be slightly curled with the indentations on the opposite side. 🔸Place a pot of water and bring to a boil. Reduce the heat and let the water boil gently. Slowly drop the nuggets one by one, not more than 20 at a time. The nuggets will slowly start coming at the top. Remove them with a slotted spoon and place them in a colander for excess water to drain. Don't overcook the nuggets. Your gnocchi is now ready. 🔸I wasn't in a mood to make a sauce. So, I heated a tablespoon of coconut oil, added a tablespoon each of minced garlic, dried herbs, chilli flakes, lemon juice, 3 Tbsps of nutritional yeast, handful of sun-dried tomatoes and salt and sautéed for a couple of minutes. Then, I added the gnocchi, tossed well and had a lip-smacking dinner.

I cooked (I mean I heated up 😂) fake gnocchi tonight. These are made from cauliflower and completely gluten-free! Oh my, they tasted like the real thing and believe me, I KNOW gnocchi.😋 I bought them at Trader Joe’s, just put them in a pan with some water and lots of butter, done. Nothing beats a bit of alfresco dining in the summer 🌞 especially when it’s in the rustic backstreets of Hvar Town AND you have a huge plate of #glutenfree truffle gnocchi in front of you (and wine of course).
I dubbed this night DEATH BY GNOCCHI. A little dramatic I know, but it literally resulted in me being so full my boyfriend had to order us a (v expensive) taxi to get back to our apartment instead of what should of been about a 5 minute walk because I literally couldn’t move🤣. Not to mention the food coma that followed🐽😴.
Jokes aside, it was epic and the best gnocchi I’ve ever had by far. SO if your in Hvar don’t miss Dalmatino restaurant - it’s the most reviewed restaurant in Hvar on @tripadvisor and conveniently they are amazing at catering for allergies. I also had a meat and cheese board to start with #gf bread. They even offered me a #freefrom gluten cake for dessert but I think that would have seriously tipped me over the edge!!
