Pumpkin pie pancakes.
1/2 cup pumpkin purée
1/2 cup coconut flour
1/2 cup tapioca flour
2 tbsp maple syrup
1 tsp baking soda
2 tsp pumpkin pie spice (otherwise a blend of nutmeg, cinnamon, allspice and ginger will do)
Pinch of salt
Coconut oil to fry .
Combine the coconut flour, tapioca flour, salt, pumpkin spices and baking soda in a bowl and mix well. Then blend the maple syrup, pumpkin and eggs in a blender and add the dry ingredients and continue to blend until fully mixed. Melt the coconut oil on a heated griddle (I used @chosenfoods oil spray) then add small spoons of pancake batter. Fry for about 2 minutes each side on a medium heat, until cooked through. Serve with chopped nuts and maple syrup.

This photo may not seem like a big deal to you, but it IS to me for the following reasons:
1) I found a spot downtown that carries gluten-free, corn-free, and egg-free bread. Shoutout to @forthrightcafe. 🙌🏼So, I got a SANDWICH. I very rarely get to eat bread when I go to restaurants unless I consciously choose to eat my allergens (which I do sometimes n' deal with the consequences 🤷🏻♀️).
2) I ate all of the tomatoes 🍅and didn't hate it. After 26 years, and I finally starting to like tomatoes???
3) We dropped Luna 🐶off at doggy daycare, so I had the entire day to myself free of doggy duties. I was able to bike downtown, work from a cafe, and not worry about having to go home and let Luna out. SUPER PRODUCTIVE DAY.
IN CONCLUSION: While I love working from home, it's really important for me to take time for myself *outside* of the home office. I'm going to start dedicating one day a week to doggy daycare (probably Fridays), so I can work from a cafe for as long as I want and just enjoy myself. It's an expense that is SO worth it for my personal happiness.

Had a really easy dinner tonight, chicken stir fry with plum sauce 🍜🍜 bought the Tesco stir fry meal deal for £5, which is such good value 🌞 I miss egg noodles so much but using the stir fry sauce makes rice noodles way better! Surprised and happy to see the plum & hoisin sauce is GF 😍😍
Super Moist Gluten Free Banana Bread via #gimmedelicious#lifeafterroti approved! This was so good!
2 cups gluten free flour flour of choice
4-5 very ripe bananas mashed (1 1/2 cups)
1/2 cup sugar
1/2 cup butter 1 stick, softened
2 tablespoons milk
1/2 teaspoon vanilla
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1/2-1 cup chocolate chips (I used 1 cup)
1. Preheat pan to 350F, Mix wets (cream butter and sugar etc.)
2. Mix drys
3. Mix both, stir just to moisten. Pour batter into prepared loaf pan.
4. Bake in preheated oven for 50 to 55 minutes, until a toothpick inserted into center of the loaf comes out clean.

Chicken and prawn substituted with courgette and carrot noodles. And just as tasty! .
2 litres chicken stock
300g boneless and skinless chicken thighs, chopped
300g raw king prawns
4 boiled eggs, peeled and halved
150g mushrooms, sliced
150g pak choi, shredded
1 sweet pepper, sliced
2 medium carrots, spiralized
1 courgette, spiralized
1 chilli, sliced
1 inch piece of ginger, grated
3 garlic cloves, crushed
4 tbsp soy sauce or liquid aminos
1 tsp fish sauce
1 tsp Chinese five spice
1 tsp coconut sugar .
Add the chicken stock to a pan and bring to the boil. Add the coconut sugar, Chinese five spice, fish sauce, soy sauce, garlic, chilli and ginger and simmer for around 5 minutes to merge the flavours. Add the mushrooms, peppers and chicken thighs and simmer for a further 10 minutes (depending on size of chicken chunks) until cooked through. Add the king prawns and pak choi and cook for a further few minutes. Place a portion of spiralised courgette and carrot in a soup bowl then ladle some broth over the top. Add a halved boiled egg on top and serve!
I had a lovely time at The Happy Tummy event last night at Powder & Magazine. Which coincidentally is my local restaurant so it was amazing that this event was here!
It was such an informative and welcoming event, listening to Lottie and the IBS clinic talk was so interesting and relatable, I’ll be checking out more of their work!
All food prepared was Gluten Free, Dairy Free and Low Fodmap and we got to try some cocktails! I can’t wait for them to bring the menu out officially as I’ll be there straight away 😂
2nd pic: This was a Raw of the Wild Kambucha gin cocktail, I’ve never tasted something quite like it before but it was nice!
3rd pic: little nibbly bits on the table, the bread was soaked in olive oil and salt and was probably the tastiest bread I’ve had in an extremely long time! There were also these seeds which were so nice but I don’t actually know what they were 😂 There were also olives to try but I’m not a massive fan of them so left them.
In the bottom of the pic you can also see my passionfruit martini which was so good!!
4th pic: These were the starters there was mackerel on the left with Kentish tomatoes, tempura squid in the middle which was just incredible, red pepper dip and shaved beef fillet. I’m usually not a fan of beef but this was delicious and really rare which is how I have liked it before!
5th pic: Raw of the wild Kambucha drink
6th pic: vegan fish and chips (tofu in gf batter with chips and sweet potato fries) I’m not a fan of tofu so I did try it but it still does nothing for me the same with sweet potato fries to be honest but the normal fries were lovely!
7th pic: Salmon chargrilled with carrot purée.
Oh my god this Salmon was so soft and full of flavour! I loved it!
8th pic: Chicken breast with oyster mushroom jus. The mushrooms were lovely and peppery and the chicken was lovely.
9th pic: Venison with warm puy lentil salad and berry compote. The compote went so well with it!
10th pic: Cranberry jelly with summer fruit which was so yummy! Blood orange sorbet which was 🙌 and chocolate brownie which reminded me so much of these brownies a girl at uni used to make which were vegan and gluten free as well!

I’ve been battling a tummy bug, fevers, aches and pains for 2 days now, and there’s a gaping hole where he should be holding me - which makes it all the more torturous 😫
His love fills me with so much joy and courage to do amazing things and to keep on evolving in my journey. .
Our relationship, the intimacy and communication is incredible .... a 10/10 😜 but it wasn’t always like this. .
When I started to work on me, our relationship got better. .
When I got more honest with my behaviours and actions, our relationship got way better.
When I kept going even when I thought I couldn’t, I unlocked a higher version of me .... our relationship ROCKED 🤩

Accountability. Leland knows I've been working hard. We've had some pretty serious health concerns going on over the last several years, and he's always worried when mom doesn't feel good.
Today, I felt like hell. Woke up with a nasty headache and I knew better than to do my exercise right away. I took the morning to get myself together so we could have a good day with my Mom. Did a bit of walking in Birch Run and Frankenmuth, and I was definitely tired tonight!
Leland and I were chatting, and I slumped over and told him I still hadn't done my workout yet. He said "I'll tune in!" And that's all I needed to jump right into it. I have an amazing community of people who have my back and some pretty great friends who hold me accountable. Leland though. He's my #1 pusher. He told me months ago, "You don't have to be good to get started, Mom. You just have to start." Every time I lose sight of the big picture, or I don't quite believe in myself, I remember this. You should too. Don't let fear or doubt run your life. We tried out Unleavened Fresh Kitchen. The service was amazing and the food was crazy good! For starters we ordered spicy avocado dip with gluten free flatbread. I got the The Weekender wrap. It has gf fried chicken, bacon, lettuce, tomato, carrot, green onion and ranch.🥙I chose a fruit cup as my side. After dinner we walked down the street to Penne Pomodoro for dessert. They offer a variety of gelato options that are gluten free. I went for the chocolate gelato and do not regret it! It was so rich and creamy.😋🍨

And by doing just that, I went from burnt out, negative, insecure girl working ALL the part time jobs, to a DRIVEN, POSITIVE, CONFIDENT, full time online fitness coach and biz mentor. •
