long time no post!! currently eating the ugliest/dullest/least inventive meals (and a shameful amount of eating out lol) so since it’s lunchtime and there’s good light in the kitchen here’s some leftover thai curry from my freezer stash!!
This is my lovely #breakfast this morning. I forgot to eat dinner last night because I got sidetracked, so I woke up starving this morning and needed something a bit more substantial than my normal corn cakes and soft cheese.
Today will be chore day, and I'll be making another batch of apple wine and some more apple and caramelised onion chutney. I think that it's the first day in ages that I have no plans to go out, and I don't feel dire. We've had loads of appointments lately, and a few with two in a day. We have a couple next week, but I think that it's slowing up a bit. That means that my diet will improve again, because it's been pretty appalling lately. I'm at least keeping up with the #gym four times a week.
Here we have a bowl of curry and rice 🍛 with a side of @marksandspencerfoodpr ‘made without wheat’ naan bread. I couldn’t be bothered to cook the curry from scratch so I bought a jar of Asda’s own jalfrezi curry sauce (it was gluten free, I checked). The curry tasted nice but it could’ve done with more heat 🔥🔥 The sauce certainly wasn’t worth the 3 chillis on the label!
All I did for the curry was fry an onion in some olive oil. Then I added frozen spinach to the pan and poured in the sauce. I let it cook for a few minutes before adding a tin of chickpeas (rinsed) and voilà. As for the naan bread, it was ok. Gluten free naan breads will never be the same experience as normal naan. That being said, these are the best gf naans I’ve tasted so far and they’re decently priced ⭐️

Made a risotto last night with basically everything that needed using up in my fridge, made it up as I went along and it turned out so yummy 😍 amongst all the usual bits it has loooooads of garlic, red and yellow pepper, loads of white wine, sage, nutritional yeast, the last scrapings of green pesto out of the jar, also I roasted one butternut squash and boiled half of another, then puréed the boiled squash with salt, pepper, sage, chilli flakes and veg stock and stirred it in when the risotto was nearly done and topped my plate with the roasted squash 😍 sounds more complicated than it was! I love risottos because they always taste so fancy but they’re actually so easy, just time consuming!

This year Katie insisted on making my birthday cake for me (double chocolate, of course!). ...
I decided to film her cooking so she can practice cooking on camera (since she always wants to be in my videos). .
This clip made me laugh out loud because:
1️⃣ It goes to show how well she knows her Mother +
2️⃣ I couldn’t agree with her more about the oil.
I mean jeez! It was my birthday after all!! One should ALWAYS eat the cake in their birthday (even if it does have vegetable oil in it). ....

You know what’s cool? Taking charge of your health👏🏻👏🏻 Whether that be mental/physical, both are equally as important.
While being involved in the fitness industry is super rewarding I often find myself and others becoming too absorbed in the negative physical/mental effects of it. Poor self esteem, strict diets, binge eating, over exercising, loss of focus on life’s opportunities, and for some the extreme including steroid use and/or eating disorders.
Did we all forget why we started this journey in the first place? For health, for confidence, for happiness, for sports, for fun, for a LONGER and more FULFILLING life. -
While setting a goal to achieve a certain physique can be exciting, don’t let the media suck you into a toxic relationship with yourself. Take charge of your physical and mental health and keep that as your primary focus along your journey. The process may be long but having your health along the way will make it worth your while. #Balance#SometimesIEatHealthy#SometimesIEatATrayOfCookies#MentalHealthAwareness :)
An avo a day keeps the doctor away? 🤣
I swapped toast for a @traderjoes Norwegian crisp bread - they are super crunchy and delish! Topped with a little cream cheese, avocado, cherry tomato, and everything but the bagel spice. 🥑🙌🏼😍 #avocadonotoast#avoaddict#paperplategamestrong
These Braised Lamb Shoulder Chops were legit out of this world delicious, and the really crazy thing is I grabbed what I had and went with it! Used my @lecreuset braiser which is one of my favorite pans to make this dish. Started by heating up some @fourthandheart ghee and sautéing onion, carrot, celery, and then garlic. To that I added some @primalpalate Amore seasoning. I removed the veggies from the pan and then browned the lamb shoulder chops which I simply seasoned with salt and pepper. Once those were browned I deglazed the pan with 1/2 c. of white wine and 1/2 c. of bone broth. Added everything back to the pan and covered with the lid. Put it in the oven at 300 for about 3 hours. It was the most fabulous meal and you’d never know it was so easy. Plus my house smelled amazing while it was cooking. Love recipes like that!

side note tonight I learned parmesan was made with animal rennet which is the stomach of calves, lambs or goats 🤢 And therefore not #vegetarian right in the nick of time before he put it on my pasta. The more you know 😯
If anyone's interested the options for GF & V -as they dont have a GF or V menu online-are; Minestrone soup, mushroom risotto, pasta dish, Mediterranean salad, ice cream-with raspberry sauce- or panna cotta 🙂
Review would be: good service, the pasta tasted nice, nice sauce but there was about a total of one mushroom in there and some peas but a LOT of pasta so it wasn't the most well balanced or healthy dish could have done with more veg IMO but as I said it was tasty. .
The vanilla ice cream & raspberry sauce were delicious but I wasn't a fan of the chocolate ice cream- but that's not really a negative as I'm not a big chocolate ice cream person i just wanted to try it and it wasn't for me it was very rich and chocolatey so if you usually like chocolate ice cream you'll like it 🙂
And all the gluten & meat eaters enjoyed their meals too 🙂 💕
