Loads of slowly cooked onion and pig lard made the base of these delicious meaty muffins today using @cleaversorganicmeat mince and a few eggs from our chooks and rosemary and parsley from the garden. Served with chilled cucumber & radicchio from the garden too and fermented veg.

More information on the gluten-free foods at the @Coconut Creek casino,Fl. There was an entire salad bar with gluten free foods such as chicken salad, tuna salad, potato salad and lots and lots of vegetables.
Gluten free at the Seminal hard rock casino in Coconut Creek, Florida. I was amazed to see everything signed GF I was even more amazed to see desserts that said GF. I’m so grateful to companies that make an effort to include people like at a buffet and make sure that foods are labeled 😱❤️
Crumble de pêssego 🍑 uma óptima sobremesa para um jantar de Verão não achas? . . .
Precisas de 5 pêssegos maduros;
Gotas de sumo de limão;
2 c.sopa de tapioca @tapioca_tapiofit ;
2 c.sopa de xarope de agave @celeiro_viverdecorpoealma ;
Canela a gosto;
Pitada de sal rosa;
150g de amêndoas (em farinha);
4 c.sopa de farinha de aveia;
6 tâmaras medjool;
1 c.sopa de óleo de côco;
Canela a gosto;
Pitada de sal rosa;
4 c.sopa de claras de ovo @prozisportugal; .
Basta cortar os pêssegos às fatias finas e dispor num pirex de ir ao forno. Juntar a tapioca e o xarope de agave, o sal e a canela e as gotas de limão e deixar repousar por uns minutos. Entretanto aquece o forno a 175graus.
Prepara a cobertura do crumble e tritura as amêndoas juntamente com as tâmaras sem caroço. Depois de ficar bem picado, junta a aveia, a canela e o sal e o óleo de côco e tritura novamente. Por fim adiciona as claras e tritura uma última vez. Basta espalhar sobre os pêssegos aleatoriamente e levar ao forno por 35/40 minutos. É provável que seja necessário tapar com papel de alumínio ao fim de 25 minutos para não queimar a cobertura e acabar por cozinhar a fruta. .

One pan breakfast of dreams! Saw this recipe Instagram a couple of weeks ago and have been dying to make it since. I edited it slightly, the original recipe called for 1/3 tin of tomatoes but I had some fresh tomatoes going off (see previous post for food guilt) so did a swap. I also used four sausages instead of two because, well, gains. And finally I am the worlds most useless egg baker and always overcook them in the oven so I stuck to cooking this on the stove and only putting in the oven for a minute at the end. Either way this recipe is pretty flexible! Baked beans aren't paleo so you can omit these from the recipe if need be, but I figured it's Sunday so why the hell not
4 @heckfooduk sausages
100g bacon lardons
3 medium vine tomatoes, chopped
1/2 tin baked beans
1 tsp chilli flakes
1 tsp paprika
1 tsp thyme
1 tsp sage
Splash Tabasco .
Fry the sausages and lardons in a pan for about 10 minutes until cooked (try not to eat allllll the bacon before it's finished cooking). Then add the tomatoes, beans, paprika, chilli flakes and herbs and stir well. Make two wells in the pan and crack the eggs into them. Allow to simmer for a further 5 minutes until the egg white has cooked then place under a hot grill for 1 minute to semi-cook the yolk. Season with salt, pepper and Tabasco.

I started baking just because I enjoyed making muffins, especially banana ones with nuts or chocolate chips, i used to take them to work for colleagues and friends and somehow started experimenting with more flavors and different types of baked goods. Baking became my night hobby after a busy day at work and the gym.
One day I decided I'm enrolling for pastry classes, just couple of them to learn new stuff. Half way through the classes, i changed my plan and committed to a one year professional pastry course, which I was doing in parallel to my corporate job and all the other activities that keep adding up because i want to learn and do everything!
As a pastry chef student we learn how to do almost all types of baked goods with all the butter, sugar, heavy cream, icing, thickeners, colouring, etc... I used to make them when i have to but what I really enjoyed is creating new recipes similar to what the rest of the class is doing but with different ingredients and i was lucky that my teacher did not kick me out of the class for this, she allowed it throughout the whole year except final exam (and probably thats why I failed the first time)
So whats next for me.... keep on learning, experimenting, testing new recipes ; allergy-friendly, plant based and gluten free and do it as long as I enjoy it!

Of course I was spoilt for choice so had to cram as much as I could into my pot! I went for 3 scoops of Icecream, Banoffee, Double Choc Cookie and Cookies and Cream and topped it with some Strawbs 🍓, Chocolate Sauce 🍫 and two Cookies - Double Choc and a Lemon 🍪
This was honestly so delicious, and it was so good to just order whatever you wanted. It’s all completely Gluten, Dairy, Egg and Soy Free! What more could you ask for?!

Today feels like a gluten free salted caramel and toffee popcorn cheesecake kinda day, doesn’t it? 😆👌🏻 (is there ever a day that doesn’t?!)
