People often say that eating healthy is expensive, and my response is always, try being sick.
An extra $50 a month for most is easy to set aside to ensure you have good quality, nutrient dense foods.

A Gut Feeling Pumpkin Protein Pancakes 🥞
1 cup pumpkin puree
1⁄4 cup unsweetened almond milk
3 large egg whites (1⁄3 cup)
1 tsp pure vanilla extract
1 cup quick cooking oats
1 scoop whey or vegan protein powder, vanilla flavor
1⁄2 tsp ground cinnamon
1⁄2 tsp ground nutmeg
1 tsp baking powder
nonstick cooking spray
2 Tbsp coconut yogurt
Combine pumpkin, almond milk, egg whites, and extract in a medium bowl; whisk to blend. Set aside.
Combine oats, protein powder, cinnamon, nutmeg, and baking powder in a medium bowl; mix well.
Add oat mixture to pumpkin mixture; mix until just blended.
Heat large nonstick skillet lightly coated with spray over medium heat. Ladle about 1⁄4 cup batter for each pancake; cook for 2 to 3 minutes, or until bubbles form on top.
Flip. Cook for 90 seconds, or until golden brown and cooked through.
Top with yogurt, pecans and grass fed butter!! ENJOY!
Yields 6 pancakes

I haven’t had a fully loaded breakfast like this one in sooo long! When we are excited & happy to eat our food, we are making it much easier for our digestive system to do its job. Eating when you are stressed out or anxious inhibits your bodies ability to absorb the nutrients in your food.
👉🏻 #whatsonmyplate : vegetable tofu scramble, cooked in turmeric, nutritional yeast, garlic, onion, shiitake mushrooms, & pea shoots. On the side are organic baby potatoes & a gluten free vegan english muffin from @mariesguiltfreebakery.
🌱I went to a market yesterday & I stumbled across her table where she was selling various gluten free & vegan baked goods. She has stores in Langley & New Westminster, so if you live in the lower mainland I would definitely take the time to check out her bakery. I was blown away at how amazing this english muffin was. I normally cannot eat the gluten free items from the grocery stores because they are too processed & they upset my tummy. Her flour base is made out of:
-brown or white rice
It was really nice to actually be able to eat some white bread with (vegan) butter!! Happy Sunday 🤗
