The best Gluten Free Muffins with blueberries and almonds. Ingredients
Almond Streusel Topping
1/4 cup good all-purpose gluten-free flour blend
2 Tbsp. softened butter
2 Tbsp. sugar
2 Tbsp. almond slices
2 cups (8 1/2 oz.) Namaste gluten-free flour blend
2/3 cup sugar
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
2 large eggs
1/2 cup melted butter
1 cup buttermilk (cashew milk + vinegar/lemon juice
1 cup blueberries
Use paper liners.
Preheat oven to 400°.
In a small bowl mix together flour, butter, sugar and almonds until crumbly. Set aside.
In a medium bowl, shift together flour, sugar, baking powder, baking soda and salt. Set aside.
In a large mixing bowl whisk the eggs, melted butter, and buttermilk together. Add the dry ingredients to the wet, mix with a spatula. Do not overmix- keep batter lumpy.
Add a few blueberries in each liner, scoop batter into muffin tin, no more than 2/3. Add more blueberries into each. Spread almond streusel topping evenly.
Bake at 400° for 18-20 minutes, do a toothpick test.
