Onto dessert, part one. Jelly & cream. Raspberry jelly with whipped cream, raspberry glass & basil foam. Can you tell I just acquired a foamier!! It’s just a canister for making whipped cream really but you can foam anything in it. I need to hone my foaming skills. I’m a bit trigger happy so it was basil foam everywhere last night. Luckily some got as far as the table. The basil foam was coconut yoghurt(what would I do without it?), purées basil and maple, foamed. Great with the raspberry. The raspberry glass is made with isomalt and is really simple. Huge fun to make, like doing science at home.
Total calls for a nice vegetable soup with homemade kale pesto. I managed to snatch almost all of the ingredients @irmadanmark over the past few days. Did I already mention how much I love this #stopmadspild concept? #waterfrontshopping
When we were growing up as kids I use to admire my mom's creativity in preparing a well balanced meal even on a small budget. Sardines was a cheaper version of fresh fish in our house and are an excellent source of vitamin B12 and selenium. They are a very good source of phosphorus, omega-3 fatty acids, protein and vitamin D. Additionally, they are a good source of calcium, niacin, copper, vitamin B2 and cholineit especially when eaten with the bones in. My favourite breakfast was mom's sardines omelette or sardines fritter. Such an easy dish to prepare and very tasty.
Sardines & Cheese Omelette
Ingredients: ( makes two omelettes)
2 free range eggs beaten
I tin sardines drained & crushed
Shredded mozzarella cheese
1tbsp coconut oil or 1tbsp unsalted Kerry gold butter
1 dash of cayenne pepper
1. Mix together beaten eggs, sardines and cayenne pepper
2. Melt butter & coconut oil over medium heat
3. Pour in half of mixture in hot oil and fry on one side
4. Add cheese cook for 1 min then fold omelette and seal edges.
5. Repeat process for 2nd portion
6. Serve hot with avocado slices

mexican quinoa with allll the veggies 💥 so quick and easy (i think by now we have established i’m not a fan of long recipes😂) cook some quinoa and mix with smoked paprika, cumin and fresh garlic (also added some coco aminos because we also know i put them on eveerrrything) then mix in corn, peas, purp cabbage, carrot, fresh tomatoes and top with fresh coriander for allll the colourful anti-aging phytonutrient goodness add as many different coloured veggies that you can! Purp cabbage also has a compound called sulforaphane which is a super potent inflammation killer which may help ease inflammatory conditions, as well as being really high in Vitamin C and Vitamin K so get it into ya 💜
