I am so drained after our morning rock climbing in Railay Beach. 😴 I haven't done it since secondary school but I was still expecting it to be a lot easier than it was. Physically it wasn't too bad, but mentally - the height really freaked me out a few times. At one point I actually felt like I was going to be sick out of pure fear and had to come down! But I'm feeling super proud of myself now for going back up and facing it. I reached the top second time round. 😊💓💪🧗🏼♀️ Wish I could say the view was fab but I was like "Ok I made it, let me down right now!!" 😂😋
This recipe is healthy too incredibly, vegan and just 5 ingredients 😍👌🏽 One of the toughest parts about being an expat is missing out on the holidays. This will be another Thanksgiving without stuffing and mashed potatoes BUT I’m going to have that cranberry sauce!!! Even for those of you that aren’t fans, you’ll like this one!
*2 cups (200g) fresh cranberries
*Juice from 4 oranges
*1/2 cup (100g) chopped pineapple *1/2 cup (125mL) water
*4 tbsp (80g) maple syrup
Bring everything, except cranberries, to a boil in a saucepan. Stir in cranberries and reduce heat to medium, cooking for 10 - 12 minutes. You’ll know it’s ready when most of the cranberries have “popped.” Let it cook for at least 30 min before serving.
