A (seriously) super simple, vegan quick bread!!! ;) This recipe is easy to play with. My measurements are all quite loose as this recipe is hella forgiving. I'd say the texture is like a cornbread. 🌽 It pairs beautifully with avocado and soups, and can make yummy sandwiches.
🔥1.5c chickpea flour (easy found in indian/ethnic grocers or at the health food store)
🔥Mixed with enough water to form a thick batter (I'd say a consistency between peanut butter and tahini if you know what I mean)
🔥2-4Tbsp avocado oil (can be substituted with applesauce/pumpkin/banana puree. Amount can also be adjusted according to your dietary needs)
🔥1Tbsp apple cider vinegar or lemon juice
🔥1tsp baking soda (if you are following the dr.sebi protocol, leave out the baking soda and substitute the water with carbonated water- ie. Perrier)
🔥Spices (its up to you to get savory or sweet with this easy recipe - I used tumeric, a chana masala spice mix, and cumin)
💫Heat a cast iron pan (I used a mini one. You can adjust the measurements to whatever size pan you've got) in the oven until hot (please be careful I almost burned myself twice)
💫oil the pan lightly
💫pour batter into pan
💫stick in a preheated oven at 350° for 20-25 min, or until a toothpick comes out clean.

No more dry & crumbly texture, this recipe turns out perfectly moist, fluffy, and is easily the tastiest cornbread you will *ever* eat. 🤤
Andy and I have been eating this GF cornbread for breakfast, snack, and with lunch/dinner, sooo basically any meal possible. With all the flour Allergics in our family, I'm going to try making GF Pumpkin Gingerbread to keep some traditional Thanksgiving flavor on our holiday table. Topped with whipped cream for grandpa, of course. The Normals might even like it... I'm finding that quick breads using GF flour are easier on the taste and tummy if there is another fiber added, like pumpkin, banana, or zucchini. #GFbaking#GFholiday

Only a week & a half away from Thanksgiving break so I whipped up these bites of heaven to get me through this last stretch of tests! They’re loaded with healthy fats, protein & complex carbs to keep you full, making them a perfect grab-n-go study snack! .
Pumpkin Pie Energy Bites
Ingredients: . - 1/4 cup nut butter - 1 tbsp coconut oil - 3 tbsp honey or maple syrup - 1/2 cup pumpkin puree - 1.5 tsp pumpkin pie spice
- 1 tsp ground cinnamon - 1/4 tsp salt
- 1 tsp vanilla extract
- ~2 cups gf oats (or until you can roll into balls) - 1/4 cup raisins - 1/4 cup pumpkin seeds (pepitas) - 1/4 cup white chocolate chips (optional)
Directions: . - Add first 3 ingredients to a small pot & melt over medium heat, stirring until smooth. - Remove from heat & stir in pumpkin, spices & vanilla. - Fold in remaining ingredients & form into balls!
This is incredible. I need to try this with gluten free bread and see if it turns out! 😬😝⠀
I made vegan gf bread for the first time today. It’s rising for 2 hours before I put it in the oven. Say a little prayer for me! 😳⠀
Accidentally used 1.5x the ingredients and my wonderful husband (who is an aerospace engineer) had to do the math to fix everything right again 😂⠀
