Quick and easy but enchanting, the mix veggie pulao is a timeless classic of Indian cuisine. 💖
It's a delicious medley of basmati rice, spices and vegetables. Simple and flavorful lunch.
And I have paired it with beetroot raita to give it a twist with lovely and colourful taste.
1 cup basmati rice
2 cups chopped mixed vegetables. I chose carrots, cauliflower, peas, paneer, onions, tomatoes, potatoes, beans and capsicum
1.5 cup water
1 tbsp ginger garlic paste
2-3 green chillies
1 tbsp oil
1/4 cup mint leaves
2 tbsp pav bhaji masala
1 tbsp cumin seeds
1 bay leaf
1-2 star anise
1/2 inch piece cinnamon
Salt to taste
Wash and soak rice in water for 15-20 minutes.
In a pressure cooker, heat oil. Add cumin seeds, bay leaf, star anise, cardamom, cinnamon, cloves. Fry for a minute.
Add ginger garlic paste, green chillies and all other vegetables with mint leaves to it and saute for 3-4 minutes.
Add salt and pav bhaji masala.
Drain the water from rice and add rice to the cooker, and give a quick stir.
Add water and pressure cook for 2-3 whistles. Once pressure releases, open and carefully mix the rice and fluff it up.
Serve hot!! .
I paired this pulao with beetroot raita!! 💕
And this raita is scrumptious Yumm and lovely.
I roasted the beetroot, which gave immense flavor too to this raita.
To roast the beetroot, wash and dry thoroughly and brush the beet with oil. Line them on a baking tray and bake for 15-20 minutes at 180°C.
And puree the baked beetroot and add to the curd with salt, pepper and chaat masala and garnish with pomegranate seeds and mint leaves!! 💓
How’s this for a yummy summer dessert?? I sure loved it! 🖤🖤🖤Grilled peach, blueberries, vanilla ice cream, caramel, sea salt and basil! So good, so fresh, so delicious!! Eating it on a patio makes it even more delicious 😍

Sadly it all tasted super weird and too sweet, because likely they used kettle corn... >_>;
Okay so after years of snobbery about both *not needing coffee to feel perky in the morning* AND *not being willing to put unnecessary chemicals in my body* I stopped being a freaking dick and learned that DUNKIN DONUTS IS SO GOOD I LIKE IT SO MUCH AND I LOVE THEIR UNNATURAL FLAVORS. These cookies are my D&D shoutout: coffee shortbread with caramel coffee icing. Calling them iced coffee cookies BECAUSE THEY’RE ICED, get it??
