Saturday night means another delicious low FODMAP barbecue in the garden. I don’t want to jinx it but loving this weather ☀️we had some frozen onion free burgers I found in @sainsburys, homemade @grassrootsbake rolls, @sainsburys cumberland chipolatas (a couple of these burnt a little 😂), piri piri chicken skewers (recipe on the blog), leftover sweet potato, quinoa and a homemade slaw!

What do you do with your left over salad ? 
I turn mine into rice paper rolls. If your wanting to save money and cut down on waste, save your left over salad from the night before and put into a rice paper roll, cook up a source of protein (chicken , tempeh, prawns) and have for lunch the next day. 
Mine have purple cabbage, cherry tomatoes, cucumber, avocado, coriander, carrot w/ pan fried black sesame seed chicken breast cooked in garlic olive oil , salt and pepper drizzled with tamari 👌🏽

I know that this looks a bit weird, but hubby made it for me for the first time a few weeks ago, and oh my goodness it’s delicious!! It’s called egg drop soup. He said it was literally one of the easiest things to make and it’s low FODMAP too! It’s probably not filling enough by itself to have as a meal, but it’s a lovely warming entree or snack! Who’s tried it before?! Do you like it?

Ingredients
4 cup Massels7 vege stock or any other low FODMAP stock 
1/2-1 tsp fresh grated ginger
1 Tbs soy sauce
2 Tbs water
2 Tbs cornstarch
2 eggs beaten
3 spring onions (green tips only) chopped
Salt and pepper

Method:
1. In pot on stove add your stock, ginger and soy sauce and bring to a boil.
2. Mix together your water and cornstarch and add to boiling stock and stir, reducing heat to medium.
3. Using a whisk slowly pour in your beaten eggs into your broth and stir until all eggs are added.
4. Whisk in your chopped spring onions, salt and pepper.

As the weather is starting to to warm up again I thought it was time for a healthy, warm salad. Here I’ve served baked salmon with boiled eggs, @merchantgourmet champagne lentils, rocket, tomato and avocado. Such a tasty plate of food, especially when the eggs are a little runny!

Made this super yumm egg dish with leftover CSA veggies and it's so quick to reheat in the mornings. Plus eggs are great brain food!

[Whisk:
8 eggs with s&p
Sautee: 
Veggies in OO & set aside.
(We used fennel,bell pep,kale,beet stems)
Crust: 
Sautee frozen hashbrowns in pan to remove moisture, but not cook through.
Press in cast iron, up sides and covering bottom.
Mix:
Eggs, sauteed veg, green onion, cherry tomatoes, s&p.
Pour into potato crust. 
Bake @ 400F 25min
Slice N serve!]

Pulled herbed chicken ✔️ Your protein source doesn’t have to be boring and the same every night, change it up with some different flavours and ways of cooking . Slice organic chicken breast , place in a pan with garlic infused oil, add 1/2 -3/4 of white wine and let it simmer away all the alcohol. Add a bottle of good quality passata , tsp of vegetable stock and freshly chopped chives, thyme and green end of spring onion and let it simmer until chicken is cooked through. Pull chicken apart , turn off the heat, add half bag of spinach/ rocket and serve of bed of zoodles, whole wheat pasta, spelt pasta or good quality gluten free pasta topped w/ freshly grated parmesan or nutritional yeast ☺️

It was really tasty and surprisingly filling, I topped mine with a little Parmesan too, because why not 🧀

We had homemade beef burgers with @scharglutenfreeuk buns, marinated chicken, lamb, sausages, roasted vegetables, veggie burgers, steak and corn on the cob with salads galore. Nothing better than a big bowl of pho on a freezing cold night! And I managed to keep this one low FODMAP, but so full of flavour! I simmered my master stock for 2 hours with yummy flavours like star anise, cloves, ginger, coriander and fennel seeds, so good!! Some thinly sliced beef, rice noodles, bean shoots, lime, chili and beautiful fresh mint and coriander. My tummy is warm and full!

This week I’m reintroduction garlic. Check out my story to get regular updates on how it goes 😄 Anyway, I’m not too bad actually. Besides garlic breath (which I heard is apparently normal when you eat garlic - it’s just been too long for me... 🙈) I was fine yesterday night. Today I’m feeling a bit shaky and light headed as well as foggy. Not sure if this is the weather (it’s raining non stop today) or the garlic. That’s why I probably just give it another go tonight and have the same (leftovers ahoi). To see how I feel tomorrow. The weather is supposed to be better, so if my head is still the same, it’s most likely the garlic 🙄

This is how I had my first garlic in ages:
- roasted zucchini, red pepper & chickpeas with #garlicfree pesto + garlic (it’s a strange feeling adding garlic to a #lowFODMAP pesto)

- plus a hard boiled egg

Tonight we had @sainsburys 21 day matured beef escalopes (really tasty, lean steak!) with @mashdirect mashed turnip and their incredible beer-battered chips. This range makes low FODMAP meals so easy after long days at work! Can’t wait to share all my different @mashdirect meals on the blog soon 😊

Fun Facts (Not-So-Fun-Facts): I have IBS. I have been living gluten-free, onion-free and garlic-free for 4 years. In that time I’ve followed a very strict plant-based diet.
Recently I’ve been dealing with frequent digestive upsets (nausea, headaches, bloating, stomach pain, and anxiety)
After long thought, research, my wellness consulting background, speaking with all natural doctors, homeopaths, my boyfriend and my doctor, I’ve decided to go back onto the FODMAP diet. This is an elimination diet which takes out ALL possible food groups that can be triggering these digestive upsets. Phase one, elimination, lasts about four weeks. It’s hard, and at times it’s truly exhausting.
Today I felt defeated.
But I know I can do this, I’ve done it before, and I know it will be worth it. Food is medicine, but certain food is also like poison to other people. A diet and lifestyle that fits perfectly for you may not work perfectly for someone else. Nutrition is definitely NOT one-size-fits-all.

• • Fun Facts (Not-So-Fun-Facts): I have IBS. I have been living gluten-free, onion-free and garlic-free for 4 years. In that time I’ve followed a very strict plant-based diet. Recently I’ve been dealing with frequent digestive upsets (nausea, headaches, bloating, stomach pain, and anxiety) After long thought, research, my wellness consulting background, speaking with all natural doctors, homeopaths, my boyfriend and my doctor, I’ve decided to go back onto the FODMAP diet. I was talking to a client recently about challenging FODMAPs. We were discussing the need to challenge larger portions of fodmaps, particularly if we typically ate large portions. For example with milk - if you would usually have 1 cup or milk with your cereal and a cappuccino with breakfast, you should ensure that when you challenge lactose that you at least challenge 2 cups (and perhaps more if your coffee is in a mug m). If you only challenge 250ml, then you won’t know whether you can tolerate more. Have any of you done this? Did you discover that you can tolerate a quite a large serve of a particular FODMAP, but not what you were consuming pre- low FODMAP?

Wowza! The past 5 weeks have been insane. Between travel and a series of unfortunate medical anomalies (none of which are #hEDS related), I've barely been able to keep it together. The past six days alone I spent fighting a stomach flu-gallbladder attack combo of hellish proportion ... Today is really the first day of me wanting and coping with food. Yay, food!

I also had an incredibly productive day at work today, so I took this productivity straight home, whirled around the house, garden and kitchen to cook up something the Northerner and I could eat litres of: my #lowfodmap Thai chicken curry.

Today's version (every version is different as I make the paste from scratch) is particularly punchy. Nom!

Throwback to that time I went to an Italian restaurant and asked them to make their seafood pasta #glutenfree #onionfree and #garlicfree for me 🙈 To my amazement, they did it very happily and it tasted incredible. God knows how they did it! A great example of how it definitely pays off to have the confidence to ask for a #fodmapfriendly meal. It also really helps when you can find a local, family run restaurant where they cook from scratch..they couldn’t have whipped me up an onion & garlic free sauce if they didn’t. @viapre_kl - what a find 🍝
