Saturday night means another delicious low FODMAP barbecue in the garden. I don’t want to jinx it but loving this weather ☀️we had some frozen onion free burgers I found in @sainsburys, homemade @grassrootsbake rolls, @sainsburys cumberland chipolatas (a couple of these burnt a little 😂), piri piri chicken skewers (recipe on the blog), leftover sweet potato, quinoa and a homemade slaw!
Last night I made a quick bowl of veggie goodness using up some leftover sweet potato (which I roasted), avocado, tomato, quinoa and @mashdirect carrot and parsnip fries served with fried halloumi. 🥑🍠🥕🍅Simple but delicious.
Today’s plans are to clean the house, catch up on some blogging (are there any recipes you’d like to see?!) then chill in the garden for a barbecue and some Hortus rhubarb and ginger gin👌🏼How’s your Saturday looking?
What do you do with your left over salad ?
I turn mine into rice paper rolls. If your wanting to save money and cut down on waste, save your left over salad from the night before and put into a rice paper roll, cook up a source of protein (chicken , tempeh, prawns) and have for lunch the next day.
Mine have purple cabbage, cherry tomatoes, cucumber, avocado, coriander, carrot w/ pan fried black sesame seed chicken breast cooked in garlic olive oil , salt and pepper drizzled with tamari 👌🏽
As the weather is starting to to warm up again I thought it was time for a healthy, warm salad. Here I’ve served baked salmon with boiled eggs, @merchantgourmet champagne lentils, rocket, tomato and avocado. Such a tasty plate of food, especially when the eggs are a little runny!
Curry night! For dinner I made the chicken korma recipe from my blog using the low FODMAP korma curry powder from @sainsburys... Such an easy, tasty curry, served with a bowl of mini poppadoms. Now to catch the last two episodes of Staircase... Another @netflixuk Making A Murderer style documentary which is worth a watch!
Pulled herbed chicken ✔️ Your protein source doesn’t have to be boring and the same every night, change it up with some different flavours and ways of cooking . Slice organic chicken breast , place in a pan with garlic infused oil, add 1/2 -3/4 of white wine and let it simmer away all the alcohol. Add a bottle of good quality passata , tsp of vegetable stock and freshly chopped chives, thyme and green end of spring onion and let it simmer until chicken is cooked through. Pull chicken apart , turn off the heat, add half bag of spinach/ rocket and serve of bed of zoodles, whole wheat pasta, spelt pasta or good quality gluten free pasta topped w/ freshly grated parmesan or nutritional yeast ☺️
After a busy day work, I went for a run (tried to shake off the stresses of the day!) and fancied a really quick, easy dinner. So I had the @tidefordorganics low FODMAP soup (which is now available through Ocado) with @scharglutenfreeuk ciabatta rolls (baked with garlic infused oil). It was really tasty and surprisingly filling, I topped mine with a little Parmesan too, because why not 🧀

Do any of you that have food restrictions or #foodallergies want a salty snack but can't find that right one? I do and it kept leading me to eating things I shouldn't and it's very frustrating and sad and overwhelming!! But not anymore!! Father’s Day barbecue cooked by the man himself! My parents catered for my low FODMAP, gluten free diet, but also for other vegan & gluten free family members too! We had homemade beef burgers with @scharglutenfreeuk buns, marinated chicken, lamb, sausages, roasted vegetables, veggie burgers, steak and corn on the cob with salads galore. The new potato, avocado and cress salad was a particular favourite!🥑How have you spent your Sunday?
Another #lowfodmap Sri Lankan meal made specially for me! This one wasn’t quite as impressive as last night’s but I can’t complain - a #fodmapfriendly curry is not a short order.

What a dinner! I used up all the leftovers to make crispy piri piri chicken (using the piri piri spice mix from my low FODMAP barbecue blog post), stuffed aubergine and a quick potato salad. So many epic flavours on one plate, yet still tummy friendly! What’s your Friday night dinner?! Now to continue watching Staircase on @netflixuk...
A #garlicfree#onionfree#lowfodmap spread...ordered the ‘Curry and Rice’ from the menu at Ella Village Restaurant and look what came
I told the owner I couldn’t have a curry with any garlic or onion in it and was there anything he could offer me. He said “I’ll see” and this is what he came back with...not bad 😍
Aubergine curry • pumpkin curry • chicken curry • mini poppadoms • brown rice • green beans • lentil dhal. All in small amounts so even the high FODMAP bits were in small enough quantities that they are low FODMAP
Proof that having the confidence to ask for a low FODMAP meal pays off. If you don’t ask, you don’t get!
Crispy skin barramundi w/ roasted potatoes and broccolini was too die for 🤤 Though it was rather devastating i couldn’t taste the golden pillows of goodness they called pumpkin gnocchi, apparently that was even better.. Thanks for my specially made meal with #nogarlic 🙌🏽
Hump day calls for a comforting roasted vegetable frittata! Courgette, aubergine, cherry tomatoes and mixed peppers, served with thin slices of baked potato and a little salad. So tasty, with lots of leftovers for lunches too👌🏼

Quick dinner tonight so I can catch up on marking, lesson planning and if there’s time I might even watch an episode on @netflixuk (has anyone got any new series recommendations?!) Tonight we had @sainsburys 21 day matured beef escalopes (really tasty, lean steak!) with @mashdirect mashed turnip and their incredible beer-battered chips. This range makes low FODMAP meals so easy after long days at work! Can’t wait to share all my different @mashdirect meals on the blog soon 😊
Monday night dinner in the garden featuring all my favourites: @sainsburys low FODMAP beef steak burger, round lettuce, beef tomato, @heinz mayonnaise, ketchup and @Violife_foods vegan mozzarella cheese served in a @scharglutenfreeuk hamburger bun. We also had some delicious sweet potato fries from @mashdirect. Perfect summer dinner ☀️
Dinner tonight at @visitcove to celebrate my other half’s birthday. Everything here is made fresh so I could choose pretty much anything from the menu. I’m a huge fan of seafood so went for the mussels which were prepared without onion or garlic. Delicious!! If you’re local to Southampton I’d definitely recommend it.
Wowza! The past 5 weeks have been insane. Between travel and a series of unfortunate medical anomalies (none of which are #hEDS related), I've barely been able to keep it together. The past six days alone I spent fighting a stomach flu-gallbladder attack combo of hellish proportion ... Today is really the first day of me wanting and coping with food. Yay, food!
I also had an incredibly productive day at work today, so I took this productivity straight home, whirled around the house, garden and kitchen to cook up something the Northerner and I could eat litres of: my #lowfodmap Thai chicken curry.
Today's version (every version is different as I make the paste from scratch) is particularly punchy. Nom!
