🍌 Monday bowl 🍌
Pour un lundi au soleil 😎, un beau plateau de fruits 🍓🍌🍋 préparé avec amour ❤ ! Et comme nous sommes d'humeur Mangue aujourd'hui, ce beau plateau se mariera très bien avec un petit Bombinhas mangue, carotte, banane, ou avec un délicieux Copacabana mangue, pomme, banane 🍌 😋! As a kid my mum always made these really delicious cheese scones/puffs. They were always a crowd pleaser, but up until now, it wasn’t really something I could make for my boys because they contain gluten and dairy. I decided last night to try making a healthier and allergy friendly version and I have to say, they turned out pretty good.
I asked her last night if I was able to share her recipe with you and she agreed. I will post both versions down below as I know most of you still bake with regular flour and use dairy.
Out of interest, do you or your kids have any dietary restrictions? Also, are your schools nut free? I can post some more nut recipes if you are interested? I am leaving them out because of nut-allergies at schools, but this may not be an issue for most of you?
Today the boys are having:
🧀 “Cheese” puffs with spinach, capsicum and grated carrot
🍫 Healthy Puffed Millet and Chocolate Bars
🍖 Champagne Ham
Fruit – 🍊, 🍎, 🥝, 🍇, 🍍, raspberries

Traditional Cheese Puffs
🔺 1 Cup Flour
🔺 1 TSP Baking Powder
🔺 1 Cup Milk
🔺 1 Cup Grated Cheese
🔺 A pinch of salt
Healthy allergy-friendly Version
🔹 1 Cup Buckwheat Flour (or All Purpose GF Flour) (The buckwheat flour is healthier, but the all purpose GF flour will have a nicer taste and be closer to the original)
🔹 1 TSP Baking Powder
🔹 1 Cup Plant Milk (I used Coconut)
🔹 1 Cup Grated Vegan Cheese
🔹 A Pinch of salt
You can make this a savoury puff by adding in capsicum🌶, grated carrot🥕, zucchini, chopped spinach, ham🍖, bacon🥓, roast chicken🍗, etc, etc.
I also added ¼ TSP curry powder and some dried parsley for some extra flavour.
🔸 Combine the flour, baking powder, salt and milk and stir until well combined.
🔸 Now add the cheese and any other savoury ingredients you like.
🔸 Transfer into a mini muffin tray
🔸 Bake at 180°C/350°F for 12-15 minutes
🔸 Remove from the oven and leave to cool a little.
🔸 Enjoy 😊
I finally switched it up and made a blueberry smoothie bowl today 😋 This one has:
• 2 frozen bananas
• Handful of frozen blueberries
• 1-2 scoop @vega_team vanilla protein
• 1 tsp ashwagandha powder
• Splash of cashew milk
Blendy blendy and top with your faves! (I used my go-to toppings: coconut, cacao nibs, buckinis, and berries).
Have you ever had yellow 🍉?! This was the best melon I’ve ever had. A client brought me this from a family farm.
It’s amazing how a food can leave a lasting impression, especially when it’s a fruit that has been unspoiled by pesticides!
