Yesterday I packed the car 🚗 for a day out, pram, picnic & enough stuff to see me & 3 boys through the whole day - 🎉 everyone was looking forward to our adventure at a farm with friends & their children. 🦌🐑👨👩👦👦👶🏻 get in the car and the thing wouldn't bloody start !!! Cut a long story short - we went in a friends car. So have bitten the bullet and entered our local show. Not with produce from my plot but just with my fruit loaf/ brown bread and white bread. This is huge for me because my anxiety is already kicking in and I automatically assume everyone’s is better than mine. Yesterday’s sourdough baking. No knead method with 12hr cool bulk proof and an 8hr retard in the fridge post shaping. Dough was 75% hydration. Messing around with some different scoring styles with very variable success.
I know a frosted layer cake is more traditional for a birthday, but one of my Dad’s favourite things to eat is my spiced fruit loaf, slathered with Irish butter and served with a mug of steaming hot Yorkshire tea... even though he’s a Lancashire lad. 😆

Fruit loaf: surprisingly hard to find in Dubai. Oscar’s fav in the morning with jam or lemon curd. So I decided to make my own. Haven’t worked with yeast much but this was not tricky at all with instant yeast. The best bit was the grand reveal to see if it had risen and Oscar’s face!
Ingredients: 450g strong white flour, 1 sachet of instant yeast (11g), 50g unsalted butter, 50g caster sugar, 150ml milk, 1 egg, 1 tsp cinnamon, 1 tsp ground ginger, 50g each of fruit of choice (I used raisins and dates but you can add sultanas, glacé cherries, dried apricots), juice of 1 orange.
Method: in a bowl mix the flour yeast and spices. Soak the fruit in orange juice for 15 mins then add to the bowl. Melt the butter in the milk in the microwave for 1 min until warm. Add to the bowl with the egg. Knead in the liquid to make a dough and turn out onto a floured surface. Continue kneading until dough is soft and stretchy. Put back in the bowl, cover, and leave for 1 hour in a warm place. It should double in size.
Remove from bowl and knead briefly and mould into two loaves and put into two loaf tins. Leave again for 30 mins to rest in a warm place. Put in oven at 180 for 30 mins.
