So, first post, first piece of info. I think what I'm really getting at in this account is a need for things to be simple/easier for people. I read so many books, recipes, posts and blogs about how people should live their lives this way or that but really nothing that makes it simple.
Pick up any cook book and it all looks perfect (perfectly placed mess is my particular favourite). Not many people have prefect homes, mine certainly isn't.
Taking some steps towards your fitness levels. More to come on this.
I'm hoping that in sharing what I do gives people some ideas on how to make their lives healthier in a simple way and so that it doesn't feel like an insurmountable task.
The recipe above is a simple as it comes from my wife's Nan.
4oz/115g All Bran (Asda £1.55 /750g)
10oz/285g mixed dried fruit (Asda £1/500g)
4oz/115g self raising flour wholemeal or plain (had some at home but it is pretty cheap at asda)
1/2 pint/265ml milk (I'm non diary so almond milk is £1/litre at asda but normal milk is fine)
Mix All Bran, fruit and milk together.
Leave to stand for 30 mins
Mix in the flour
Put in a loaf tin
Cook for 1hr - 1hr 30mins @ 170°C/350°F
I'll post a photo of the final product. So simple, great for snacks, lunches etc I take it to work for an afternoon snack.
R E C I P E ~ Banana, Strawberry and Almond Loaf.
This delicious loaf was absolutely perfect for tea time this afternoon. I had a handful of frozen strawberries in my freezer and a couple of ripe bananas that I wanted to use 🍓🍌👌🏼. Try it!! We promise it will become a family favourite.
1. Preheat oven to 150C and grease and line a 4 x 8 inch loaf pan.
2. Add 75g melted butter to a mixing bowl. Add 150g raw sugar, 2 ripe bananas (cut into pieces) and 1tsp vanilla extract.
3. Blend for 30 seconds on medium speed and add 1 egg to mixture during mixing process.
4. Add 190g plain flour and 1tsp bicarbonate of soda and pinch salt.
5. Blend until mixed through being careful not to over mix batter.
6. Add 50g almond meal and a handful frozen strawberries and stir through mixture with a spatula.
7. Pour mixture into a prepared loaf tin and bake for 1 hour or until skewer comes out clean.
I’ve put myself under pressure this week. The Meigle SWI groups starts back this week and after attending four meetings I somehow ended up as secretary. Not only that but I am down as the hostess for our first meeting back! I’m trying to plan ahead so I’ve made a fruit loaf and for the first time ever millionaires shortbread - all before 9am! Not sure that either are up to WI standards but hopefully they will taste ok. I have such a busy week work wise this week with client meetings and I’m doing a webinar for business tomorrow on optimising your business Facebook page for @growbizperthshire Doing the presentation doesn’t faze me too much but as a complete technophobe doing this live on line is a huge challenge. Fortunately my colleague Jen who does this in her sleep will be there to hold my hand. Unfortunately she will be holding my hand virtually from the other side of Perthshire! Wish me luck! Fortunately our SWI meeting is gin tasting with The Gin Class!

I think this is my best version of it yet, recipe below
1 1/2 cups of Almond Meal
1/2 cup of gluten free flour
1 teaspoon baking powder - gf
Shake of salt
1 cup of Dried fruit - more if you desire, I used cranberries, mango, pear and peach
2 teaspoon apple cider vinegar
Mix all dry ingredients together.
Mix all wet ingredients in a separate bowl.
Combine wet and dry mixes.
Pour into a lined loaf pan and bake for 40-45mins on 160-180, time may vary on different ovens temp etc, I cook until the skewer comes out clean.
Eat hot or cold with your choice of butter, enjoy xx

H O M E M A D E wholemeal fruit and nut loaf. What would you put on it? Or would you eat it plain?
It's so easy to swap to wholemeal in this recipe, there is an amazing mix of textures and flavours from the almonds, dried fruit and mixed spice that the usual dry texture of wholemeal bread is overcome so easily.
💬: swapping to wholemeal versions of bread and other grain foods increases you fibre intake which is beneficial for gut health = happy tummies 😊.
My kids love helping measure out the ingredients, the bonus for me is that they're learning fractions without realising it!
This makes a fantastic breakfast, or snack food.
Even though there is sugar added to this recipe, it is primarily there to feed the yeast to make the bread rise and doesn't really sweeten the bread. It is otherwise preservative and additive free 😍
✍: 390ml water • 2Tbsp olive oil • 1tsp salt • 2Tbsp brown sugar • 620g wholemeal bread flour mix • 2.5Tbsp milk powder • 2tsp dry active yeast • 1.5C dry mixed fruit • 1C chopped almonds. Place all ingredients in bread maker 😉
🍏 🍎 🍏 Apple loaf (no added sugar)
I haven’t done any baking in what feel like forever but I thought I’d try something new to use my extremely less than perfect tiny apples from the garden! This is fab buttered warm from the oven!
Mix all of the following in a bowl. Cook for 40mins 180c oven.
🔹2 cups self raising flour
🔹3 medium apples grated (I used 5 small apples)
🔹1/4 cup coconut oil
🔹1/4 cup raisins 🔹1/2 tsp nutmeg
🔹1/2 tsp cinnamon
