How about Balsamic Acorn Roasted Squash for a side dish or entreé?
1 large acorn squash, halved, seeded and thinly slice
3 Tbsp. extravaGONZO Blood Orange Oil
2 Tbsp. extravaGONZO Dark Balsamic Vinegar
1 tsp. kosher sea salt
Ground fresh black pepper
¼ cup Parmesan cheese, plus more to taste
Preheat oven to 425.
1. Toss the sliced squash with the extravaGONZO Blood Orange Oil, sea salt and a few grinds of the pepper.
2. Divide between 2 baking sheets and roast at 425 until browned and tender, about 20 minutes.
3. Drizzle with extravaGONZO Dark Balsamic Vinegar. Sprinkle Parmesan, serve hot.
If you want to make the dish a bit more decadent, cook three or four slices of quality thick-cut bacon and remove excess grease by letting slices cool on a plate covered in paper towels. Dice cooled bacon and sprinkle on dish after balsamic, just before serving.

Here’s a view of my table top that I use for shooting. This shows the big oversized basement windows. The windows are south west facing, and the light is shining in as a result, is coming from the north east direction. This long multipurpose table allows me to shoot backlit, as well as from the side. I generally shoot backlit most of the time. Shooting backlit allows me to achieve bright highlights. I use the reflector to bounce light back into the photo from the front, while shooting backlit.
As mentioned in my last post, I keep my main backdrops that I use for shooting on top of the table, for easy access.
My Lowel Ego table top light and reflector is a permanent fixture on the table top as well, for days that are darker and the extra light is needed. I mainly use this table top light at night, when the window has passed for good natural light. I think I will grab a second one, eventually to not have to rely on the reflector as much and have more evenly dispersed light while shooting with artificial sources. I highly recommend this light for food photography though!

Let's face it, generally speaking fries usually suck. Heresy, I know, but in my line of work I have come across many, many fries and it has ruined my taste for them. This is not to say that standout fries don't exist. I've had great fries but not very often. Fries are difficult to make, have an extremely short lifespan and for most cooks they are an afterthought, or worse, a menu necessity. Every once in a while I come across actual french fry greatness. These are the parmesan truffle fries at @LePaddock in Brooklyn. They are perfect.
