Pallotte cace e ove

Amici, ancora un'immersione nell'abruzzesita' con una ricetta tipica e gustosa.

500grammi di formaggio grana grattugiato
5 uova
5 cucchiai di farina
1/2 bustina di lievito
un pizzico di noce moscata

In una ciotola mescolare e formare delle palline grosse come delle noci. Scaldare l'olio di semi (io uso quello di arachidi) e tuffarsi le palline di formaggio. Si gonfieranno durante la cottura. Lasciar friggere almeno 10 minuti. Scolare su carta assorbente.
Preparare una sugo di pomodoro soffriggendo uno spicchio d'aglio, un pezzetto di peperone dolce e l'olio extravergine d'oliva. Aggiungere la salsa di pomodoro e lasciar ritirare un po'. Mettere le "pallotte" nel sugo e lasciar terminare la cottura per altri 5 minuti.

Here is this sunday special. "Veg Dum Birayani". Delicious, Delectable, Appetizing, and an Aromatic flavour for gastronomical delight. A shahi dish originated from the royal courts of mughals.The origins of this dish goes back to Persia and made popular in India by Mughals. Originally Biryani was succulent dish of shahi khanasama  of royal courts of Mughals which was chicken based. The veg version developed by the vegetarian courtesans  prepared in basmati rice with super tasty and tangy mixture of curd soaked boiled vegetables (tomoto, potato, carrot, beans, cauliflower, peas and paneer), mixed in indian spices (cardamon, clove, pepper, cinnamon, bayleaf, ginger, garlic, and jeera) with red chilli powder, turmeric powder, garam masala and special biryani masala in rich desi ghee. Add a layer of fried onions, mint and coriander leaves sprinkled with saffron.The dum is the uniqueness which come with cooking layers of rice and vegetables in closed lid air tight pot in low flame.

Next Sunday I'll be heading to Oxford ...and doing a demo at the @foodiesfestival at 5pm!

At the start of the year on my vision board I put the festival and felt I eould get a last minute shout to be at Bristol. 
It didn't work out there way, so I parked it for a year and thought it will happen when the time is right.

Last week (with the help of a recommendation from the lovely @anupreetattridge!) I got the call to go to Oxford! Different location, but last minute call up as predicted! 
Things don't always pan out as we think they should but I'm learning that it will unfold as it should at the right time for me!

This is my equivalent of those insta-perfect bikini bodies or travel locations ... where it’s easy to just post the good or get caught up in thinking some people have ‘perfect’ lives.

And of course, they don’t.

Or rather they do because our lives are often perfect as they are and often especially when they’re not looking so - when we’re red faced and crying with laughter or whatever it is.
.
Anyway, I digress. Of course!
.
I love spending time playing with food, trying new recipes, inventing new recipes.
.
This morning I’d been reading a recipe for ‘red pork’ - a long marinating time, a long cooking time kind of dish ... and I wondered if I could make something similar but a quick stir fry version.
.
I knew I wanted pork fillet but there wasn’t any in the shop so I improvised with an unsmoked gammon steak.
.
I kind of knew it wouldn’t be right but I went ahead and I like the marinade I made: tomato purée, soy sauce, Demerara sugar, fish sauce.
.
Next time I’ll add garlic and some chilli too.
.
I went ahead and made it and it just wasn’t what I’d had in mind. At all. It was .... fine ... but not right.
.
And yet I think it does look good and I could easily have posted it as such.
.
But I’m not.
.
This is what a work in progress looks like. This was my first attempt at getting something from imagination onto plate.
.
This is what I do ‘behind the scenes’ three, four, five - however many times until I’m confident in the recipe.
.
Sometimes of course it just works first time - usually when it’s been really clear in my mind.
.
This - because I was playing and adapting flavours and experimenting - nope it didn’t work first go.
.
And I suspect t won’t even look like this by the time I do post it and the recipe and am happy with it.
.
It doesn’t happen instantly all the time.
.
Just because you can make it appear so doesn’t make it so.
.

Food is fuel. That’s a sentiment I hate. Food is much more than that - it’s social lubricant, a way to show love, a pleasure in life. But sometimes, you do eat also to fuel up. Luckily, this morning, before a 6 mile hike, we had great food, wonderful conversation, and are leaving with loads of energy for the journey ahead.

Vamos con la receta de esta pizza saludable y sin gluten .

Los ingredientes encontrálos en una de las fotos.

El procedimiento. Fácil y rápido. Ninguna cosa rara, sólo es cuestión de ordenarnos.
Puse en remojo el trigo sarraceno por 6 horas. Escurrí y coloqué en la licuadora con el resto de los ingredientes. No me hizo falta agua pero eso depende. 
Que consistencia tiene? 
De masa de creps o panqueques. Es decir,  puedo utilizarlo para eso tambien.
Enaceité una placa para horno y esparcí la mezcla. 
Horno medio por 30 minutos aprox. 
Salsa de tomate  saludable 
Cebolla morada, 1 unidad.
Tomates, 3 unidades.
Sal marina, oregano, pimentón, etc.

Rehogar la cebolla.  Agregar en tomate en cubitos. Cocina a fuego minimo por 10 minutos. Retirar y licuar levemente .

Todo es importante. La masa , la salsa,  cubierta.
En este caso usé queso común para mis comensales, la idea era y es, introducir cambios de a poco.

Today is roast veg today. Red peppers, drizzle virgin olive oil, 1 bulb garlic roasted off. Sprinkle sea salt, cracked black pepper. Was going to blitz to make a purée, but going to leave to serve as part of a mezze. Vegetables are beautiful.

Now I'm sharing my love... the humble yet stylish and reassuringly sexy , single egg yolk raviolo. There is something about this beauty... it has my pulse racing when I slip the yolk into the centre of the filling , praying that I don't piece the yolk accidentally with my impractical nails.. Making millas at the Soreze fair. It’s very similar to the Italian polenta, made with local maize flour. A very jolly lady told me the recipe - “Maize flour, water, a copper pan, and a man to stir it,” whereupon she burst out laughing. It apparently takes one and a half hours to cook! It’s then rolled out very fine, allowed to dry, then fried and tossed in sugar. Not sure I’ll be making it any time soon 😉

It's forgiving, the simple technique doesn't demand the precision of a surgeon, the dexterity of a sculptor or require specialised equipment. Yet, the end result is pretty impressive.
Put together this rustic Orecchiette with Prawns for the family lunch. The base flavours were garlic (loads of it), crushed dried red chillies, cherry tomatoes, capers and sage. Used roughly chopped blanched almonds as a garnish. Had initially planned to use it to toss up a flavourful pangritata, but was too famished and tired to go that extra mile. Rounding out a jam-packed weekend with a slice of chocolate crostata topped with a good dollop of clotted cream 😍 this recipe is from @italyonmymind’s new cookbook. I made it a long tart, rather than round because I don’t have a round cake tin and it worked perfectly!

I loved seeing everyone’s benchtop answers from my stories. You guys have good taste because we are all on the same page! I think we are leaning towards the slightly darker grey which has a slight subtle marbling through it (which you can’t see on the small sample) so that we can tie in the age of the rest of the house (1930’s) with the more modern cabinetry 😊 I’ll feel better about it once I can line it all up together to really see how the cabinets, tiles and bench tops look altogether. It’s so hard to visualise how a kitchen will look when you’re working off tiny colour chips!

Spotted these ginormous, over a foot long bananas, colloquially called 'Bin Bonda', on my visit to the local market this morning. The discussion that ensued turned out to be a 'Study in Bananas'. Apparently, this particular variety does not bear a blossom like the regular ones (not sure how accurate that is) which gives it the name.Grown along the Nalasopara-Virar belt, each tree produces a stem with not more than a dozen or two in a cluster, making it a rare commodity. Given it's  novelty and humongous size, it sells for a  whopping 40-50 Rupess a piece. The one in the center is the famed Rajeli from Vasai. The same variety that is used to make Sukeli (sun-dried bananas) and the tiny one of course, is the ubiquitous 'Safed Velchi'.

‪Tapped my inner Bengaliness and made a doi kasundi ilish begun (hilsa & aubergine in a yogurt & mustard sauce) in my little Bandra kitchen.‬ I had bought the hilsa from Poonam & Sangeeta, The Koli ladies at the Khar Station Market. They assured me that it had come from ‘Howrah.’ Like I had, the first time I came to Mumbai in ‘96 for my MBA summer project presentation!
