🍗Cook chicken, meat and eggs thoroughly. These are high-risk foods, especially minced meat or chicken. Always ensure that your meals are NOT undercooked. If you are handling raw meat, avoid working with an infant such as change diapers or feed baby at the same time. This is because infants are extra vulnerable to bacteria.

🌡 Know your Temperature Danger Zone. Bacteria thrives between 5 degC - 60 degC. Keep cooked food above 60 degC. If you are leaving cooked food out, make sure you don’t leave them out for more than 2 hours! .

🤲 Clean hands with soap and warm water before handling food. This should be done BEFORE & AFTER a meal. If you are preparing a meal, clean surface with antibacterial wipes before putting any food items on them. .

❄️ Chill your food promptly & properly! The fridge should be below 4 degC, and freezer ideally should have a temperature of -18 degC. Know when to throw your food out when it has been sitting in the fridge past its expiration date, and avoid placing raw food with cooked food. What are carcinogens and do you know what they do? 
By definition a carcinogen- a substance capable of causing cancer in living tissue.

Everyone loves to bbq right? What if the high-temperature grill can quickly turn your meal carcinogenic?

There are 2 types of chemical reactions that occur when you bbq meat.

First gat drippings from meat create smoke and that smoke contains chemicals called PAH's (Ploycyclic Aromatic Hydrocarbons). When the smoke surrounds the meat during the cooking process it transfers those carcinogenic PAH's onto the meat itself.

Second, when you grill meat at high temperatures (above 300°F or above) or for long periods of time a reaction in the foods occurs creating HCA's (Heterocyclic Amines). Most HCA's are found in meat that has been fried or grilled (both high temp cooking methods). Lower temperature cooking methods such as boiling, baking, or poaching tend to produce the least amount oh HCA's.

What you can do to reduce carcinogens when you grill?

You can grill your meat until it's brown and not black. Aim for a lower internal temp such as medium rather than well done. Trim off any burned/ charred parts because HCA's are only found in those parts.

Go with a leaner meat as they tend to have less fat. Fat drippings are key to a PAH development.

Marinating meat before cooking helps lessen HCA formation due to antioxidants found in herbs and spices such as tumeric, basil, rosemary and oregano.

Lastly you can load up on veggies or fruits as the build up of carcinogens is associated with grilling the protein-rich foods like chicken and steak, so to help you out grill up some corn or asparagus there are many more possibilities.

It’s important for teens with food allergies to not take posts like these seriously. People will always make fun of whatever they can, and you can’t control it. BUT there is 1 thing that you CAN control - and that’s how you react. You choose how it makes you feel. You can choose how to react to this. My advice? Choose to ignore. Choose to forget. Choose to not let something stupid like this bring you down. So probably one of my biggest fears as a new mom has been food. The idea of Edison choking or having an allergic reaction scares the crap out of me! So I’ve been doing my best to make sure I follow best practices and introduce him to known allegations early and slowly. There are many different ways to do it, but one I happened on was @_readysetfood. Their system is easily poured into milk or food and introduces them slowly to peanuts, eggs and other allegations to help reduce the risk of a reaction! They offer free starter kits from their site too, so if you’re worried about introducing new food like I was (am) it’s worth giving them a go!

A preceptor I’ve had during my community rotation had introduced me to kombucha 😍 Today she mentioned Talk Town Foods in Fort Worth had a sale and I couldn’t pass it up! This was my first time in this store and from what I have seen most items are past their Use By/Best Before Date. This does not mean the food is bad! Use By/Best Before Date gives you an estimate on time when their peak quality could begin declining. Expiration Dates are meant for when food is no longer good to consume.

If food prepared for personal consumption isn’t well prepared, it can be tolerated. Selling food of any kind to different kind of people with varying digestive system, it’s a very delicate thing and requires careful handling. You don’t want to cause mass food poisoning or something similar. For few persons that know me, they know I don’t take for granted hygiene in food handling and processing. I want to let you know that I will continue to improve myself and make sure that you get quality and nothing less.

Mold or yeast in your ferment?  The photo shows some kahm yeast in a mushrooms ferment. While mold (which you don't want to eat) can be white, green,black, rusty, reddish, green or even blue while Kahm yeast is white, with a "stringy" pattern and sometimes bubbles trapped under it. 
Took me quite a while to finally get a kahm yeast photo (for my upcoming book on fermenting wild edibles) and I had to do deliberate mistakes/effort to finally get it. It usually shows up when the top ferment is exposed to oxygen for too long without stirring or shaking the content in the jar, you had organic ingredients floating on the surface and not under the brine or you didn't use enough salt.
#Mold is more fuzzy and starts to grow in floating patches. I always recognize Kahm yeast from the pattern. 
Kahm yeast (actually a colony of various harmless yeasts) is not harmful to your health but it can influence flavors (cheesy a bit). One solution is to skim it off and possibly add more salt but very often it will come back. Personally,  I don't like using ferments that developed kahm yeast due to change of flavors and very often they become compost. 
From my perspective, kahm yeast or mold is an indication that you're doing something wrong and a great opportunity to learn how to do things properly.

Week 2 of Hoshigaki! We started drying these Hachiya persimmons 5 days ago. They hang from this clothing rack by a sunny window in our office, next to an oscillating fan. Before we massaged them for the first time they felt fairly firm and lifeless. But after some lovin’ they softened up! We think the sugars are starting to move outward in the fruit.
