Now that Fall 🍂 is officially upon us, recipes like this is a must. Chicken Binakol is basically a Filipino 🇵🇭 chicken soup made with coconut 🥥 water as it’s broth. At first, it sounded really weird, but due to my curious brain cells, I say why not?!
I’m telling you all, it sounds a bit odd, but hey, just like a classic old saying, “Don’t judge the book by it’s cover.” Give it a try and you might just find your newest favorite “soupy” dish this cold season 😉. Scroll ⬇️ for the full recipe.

Ingredients: (based on approximate measurements; adjust as desired)
2 T canola oil
1 red onion (minced)
10 garlic cloves (minced)
2 T worth of ginger (minced)
8-10 chicken thighs (halved)
5 c worth of coconut water
1 sweet potato (roughly chopped)
1 c worth of canned coconut meat
5 handfuls of spinach
salt and pepper (for seasoning)
- Place a large casserole under your stove and put the temp under med heat.
- Drizzle the oil and start sautéing the onions, garlic, and ginger just until fragrant.
- Add chicken pieces cover and allow to cook for about 25 mins.
-Add coconut water, cover, and let it simmer for about 10 mins. Start adding your sweet potatoes, cover, and allow to simmer for about 10 more mins, mixing occasionally.
- Add your coconut meat, and spinach, season as desired with salt and pepper, and continue to cook until the chicken reaches 165 F internally.
- Just like that, your fall season has officially been warmed up. Enjoy 😋.

Atmosphere could NOT be any better. The minnehaha falls are the perfect backdrop to enjoy a refreshing beer and some lightly fried fish. &&& to get to the good part, the FOOD! The fish tacos is what I order every time I have time to get out to Sea Salt they are crispy crunchy fried flakey fish in a taco shell with onion and cilantro it is the perfect refreshing summer meal. Beware 🛑 before you douse your tacos or filets with hot sauce do the taste test, because some of the hot sauce options are extremely spicy 🌶 🌶 🌶
Overall we say, if you’re in the area-rent a scooter or bike and work up an appetite then stop on by sea salt for a beer and some fish.
