Fail to plan and plan to fail!
Meal prep doesn't have to be hard. It's just about finding the time.
Aim for fresh, wholefood, nutrient dense plants and veggies each day.
Here are my meal prep tips: ➡️ Boil some eggs and leave them in the fridge
➡️Cut up some carrots and celery and have them with some hummus or PB if you're wanting a snack
➡️ When doing the food shop, write a list and stick to it!
➡️Plan your meals
➡️Keep it simple. Stick to the basics. Protein, fats, and carbs. Try fill at least half your plate with fresh wholefood. ➡️ Make a smoothie! So easy and delicious. ➡️ Most importantly- eyes on the prize... remember your why. This should be a lifestyle not a diet.

the other night I wanted pasta and had a lot of cauliflower to use up so my mom and I decided to try out a new recipe! we tried @minimalistbaker ‘s garlic chili pasta with roasted cauliflower and it was AMAAZING🤩 honestly the best pasta recipe I’ve had in a while🤗

They have tons of healthy options and the food is just really fresh. I got a sandwich that I have been craving for so long and it just made me so happy. My happiest moments are 3 times a day when I have the pleasure of eating breakfast, lunch & dinner. Also, once a month when I have the pleasure of unwinding & pouring half a bottle of wine into one huge glass. Let’s cheers to that... 🍷
Vegan black bean chilli with quinoa, kale & corn 💚💚
This is one of my fave recipes to make.. so quick & versatile (eat it with rice/baked potatoes/tacos/tortillas) and it tastes truly yummy!! I think adding the cacao/chocolate gives the dish a real depth of flavour 🍫
• 2tbsp olive oil
• 1 medium onion, chopped
• 2 cloves garlic, chopped
• 2 bell peppers, chopped
• 1/2 tsp salt
• 2 tsp smoked paprika
• 2 tsp ground cumin
• 2 tsp chilli flakes/powder
• 1 tsp dried oregano
• 1 can/carton black beans
• 1 can chopped tomatoes
• 200g mushrooms
• 1/2 cup vegetable stock or water
• 1 tsp cacao powder/ 2 squares dark choc
• 3 tbsp chopped coriander
• Small tub sour cream/non-dairy yoghurt
• 1 bag kale
• 1 can sweetcorn
1. Warm olive oil in pan, add chopped onion & garlic & sweat over a low heat
2. Add chopped pepper together with salt, chilli, paprika, cumin & oregano & cook for about 2 minutes
3. Add chopped tomatoes with juices, drained black beans, mushrooms & stock
4. Stir to combine & let mixture come to a simmer
5. Continue cooking whilst stirring occasionally & reducing heat as necessary to maintain gentle simmer for around 30 minutes
6. Remove from heat, add the cacao or dark chocolate, 2/3 of coriander & stir to blend
7. Serve on a bed of cooked quinoa with sweetcorn & sautéed kale
8. Garnish with a big dollop of sour cream/dairy-free alternative & a sprinkle of coriander
9. ENJOY this delicious meal & share your pics with me 😋😋

✖️•Are just some comments that really piss me off. The judging, the worrying, the questioning. I don’t judge you for eating that cheese burger so why do you need to judge me for wanting roasted veggies? Does anyone else feel this way? Food should not be this big deal but we tend to make it this insecurity almost. Next time someone makes a comment to you about what you are eating or what you’re not eating tell them to stay in their own zone. I eat what I want, when I want and I suggest you do the same. 👋🏼 (bye)

#whatsonmyplate : salad leaves, strawberries from my grandmas garden ( BEST EVER 😍), cucumber slices, tomatoes, one avocado toast ( so proud that avo looks perfect, happy me 😭🥑)
A ton of lemon juice and lime juice, a bit of olive oil, chia and sunflower seeds, pepper, pink himalayan salt ( not on the strawb).
