I am literally going to sound like a twattish perfect parent here but look what my four year old made!
Home made fish fingers, potato wedges and peas from scratch. Twat part over .

As I said before, I've started cooking with him for two reasons. Firstly, so he understands how much effort goes in to a meal and therefore won't clamp his mouth shut at the first sight of what's on his plate. Secondly, he may perhaps learn to love cooking which is undoubtedly a great life skill. .
However, he is still a defiant four year old. He enjoyed it but got bored fairly quickly and wanted to stop. Mummy had words about eating raw fish and dodgy stomachs and we compromised by turning on some music and finishing the job. .
Best part was I got leftovers for lunch the next day. 
You cannot beat a fish finger sandwich!

I know it is really naughty, but every once in a while, we have pancakes for breakfast. I just can't help it. They are super easy and quick to make, I barely have to put much thought into it. (which is lucky for me when my son gets me up at 430 every day!) The mixture takes me about 5 minutes to put together if that and then another 10 minutes to cook enough pancakes for the whole family.

Though, technically, if I am being correct they aren't 'pancakes' they are drop scones. This recipe was inspired by the queen of baking herself, Mary Berry, and modified from @TheHappyFoodie.

175g self-raising flour
1tsp baking powder
40g caster sugar
1 egg
200ml (my preference almond milk)
1tbsp vanilla essence

1) Mix dry ingredients together in a bowl.
2) In a jug, mix wet ingredients.
3) Whilst whisking, pour wet ingredients into dry ingredients. Continue to whisk until you have a smooth batter mix.
4) Add butter or oil to a pan, I personally use a frying pan and allow to heat up.
5) Depending on the size of your pan, add large scoops of batter mixture. I use a large serving spoon and add about three separate scoops in order to cook three pancakes at a time.
6) You will see the mixture around the edges start to bubble and change colour. When it has done this around the whole outside for about 1min, flip your pancakes over. (I don't tend to leave it longer than this as it starts to overcook). Then repeat on the other side. 
7) Do not squish your pancakes down as this removes the light airy quality making them scotch pancakes. If they need longer to cook the batter in the middle, just keep flipping so either side gets a little longer.
8) Remove from pan, serve and top with your prefered toppings. This occasion, we used maple syrup and strawberries.

Забавный пингвин из оливок. 
Шаг 1. Для приготовления понадобятся: чёрные оливки (маслины), одна морковка, мягкий плавленый сыр (сливочный), шпажки. 
Шаг 2. Морковь необходимо нарезать кружочками. Не слишком тонкими. Из каждого получившегося кружочка вырезаем небольшой треугольник. Это ножки для пингвина. 
Шаг 3. Маслину, из которой будет сделано туловище, аккуратно надрезаем вдоль острым ножом. 
Шаг 4. Теперь надрезанную чёрную оливку «фаршируем» плавленым сливочным сыром. Удобнее всего это делать с помощью пакета с отрезанным уголком или кондитерского шприца. Но можно и чайной ложечкой или маленьким ножом. Только это сложнее. 
Шаг 5. Берём вторую маслину, это будет голова, и делаем ножом надрезы для клювика и глаз. Из морковного треугольника, который остался на втором шаге, вырезаем пингвинчику клюв. 
Шаг 6. Далее, с помощью одной шпажки, закрепляем голову и туловище пингвина на лапках из моркови. Будьте аккуратны. Повторите все шаги, чтобы создать необходимое количество забавных пингвинят.

🍲РЫБНЫЕ ТЕФТЕЛЬКИ ПОД МОРКОВНОЙ ШУБКОЙ

🌿ИНГРЕДИЕНТЫ:
🌟Филе рыбы (у меня треска) - 200 гр
🌟Творог - 4 ст.л.
🌟Куриное яйцо - 1 шт.
🌟Сливочное масло -50 гр
🌟Молоко -100 мл
🌟Лук репчатый - 1/4 среднего
🌟Морковь - 1/2 средней
🌟Зелень укропа, соль (по желанию)
🔹Выход: 200 гр.

.🌿ПРИГОТОВЛЕНИЕ:
🔸Филе рыбы тщательно проверить на наличие косточек.
🔸Кладём в чашу блендера рыбу, творог, измельченную зелень, яйцо. Взбиваем.
🔸Формируем из фарша шарики и выкладываем в форму для запекания.
🔸Готовим соус - на мелкой тёрке измельчаем морковь и очень мелко нарезаем лук. Можно измельчить в блендере почти до кашицы. Добавляем молоко и заливаем тефтели в форме.
🔸Накрываем форму крышкой или фольгой и ставим в разогретую до 190 ° духовку.
🔸Запекаем до готовности. Главное - не пересушить.

Breakfast - Vanilla Protein Porridge with Blueberries 🍇 Apple Slices 🍎 and Cheese Cubes 🧀

To make the porridge, add 1/4 cup of oats, 1 cup of milk and 1/4 cup Vanilla Complete protein to a pan, cook for a few minutes stirring constantly until the porridge thickens. Stir in blueberries a minute before the porridge is cooked 👌🏼 LJ is currently learning how to use a spoon 🥄 and the consistency of the porridge made it really easy for him 🙌🏼 Proud momma ☺️

I’m not the best planner. I do try to plan for meals for the week, but half the time random things pop up (unplanned outings and just pure spontaneity) and all the meal plans go out the back door. And then I am faced with situation of a hungry toddler who needs his food in the next 10 minutes. And at times like these, I will remain calm and compose and just do ‘FAST FOOD’. This one is pretty fast, took me 10 mins.
✖️Braised noodles with mushroom, spinach and tofu✖️. I used leftover braised tofu and mushroom from the soup last night, cut them up and drop them into some spinach and cook them together. I used some of yesterday’s soup as stock and added water and a little vegetable seasoning too. And the result, was a simple and awesome lunch! Little one loved it and I ate the extra portion too 😆

{super easy veggie nuggets}
Well, they’re not really nuggets but nuggets are appealing to small humans, so that’s what I’m calling them.

These are an adaptation of a recipe shared with me by a friend. They are seriously so simple and, when served with Greek yoghurt to dip, tend to be devoured by Eleanor.
.
100g grated potato
100g grated pumpkin
140g grated zucchini
2 pinches garlic flakes
1 scant pinch salt
3 tbsp wholemeal spelt flour
2 tbsp chia seeds

Place the grated veggies into a nut milk bag or muslin cloth and give it a good squeeze to remove excess liquid.

Place squeezed veg into a bowl and add all remaining ingredients. Mix well with your hands to combine.
.
Place some oil into a frying pan and heat over a medium heat.
.
Form mixture into small patties, approximately 5cm in diameter, then fry off a few at a time for a couple of minutes either side.

That’s it. Done.
.
I serve them with a little natural yoghurt to dip. They refrigerate well and are perfect for lunchboxes.

Ingredients
1 bag of egg-free dinner rolls (sub for GF buns to make it gluten free)
1 box of Amy’s Mac & Cheese (swap with our Rice Mac & Cheese or Rice Mac & Cheeze if you wish)
½ bottle of Korean BBQ Sauce
1 can of unripe jackfruit (about 2 1/2 cups)

Directions
Shred jackfruit using a fork to create a pulled effect. Add pulled jackfruit to a small saucepan with with ½ a bottle of Korean BBQ sauce. Bring to a simmer and turn off the heat. Stir and set aside. Cook the Mac & Cheese following the directions on the box. Then, spoon jackfruit onto half of the rolls. Add a spoonful of Mac & Cheese on top. Lastly, add the tops of the rolls back on, and serve!
