These are one of my favorite weeknight meals.. in fact all Mexican food really because it’s so easy to whip together & it TASTES SO GOOD!!! 🤤 If you don’t like Mexican food, I’m sorry but we can’t be friends 😂

All I did was throw some chicken thigh in the slow Cooker with @salsaranchero Taco mix (I like theirs because it’s clean ingredients or make your own) + a small amount of water.
For the last hour I added red & yellow capsicum. Just before serving I shredded the chicken with 2 forks & served it with Grilled🌽, Gauc🥑 & Salad🥗
YUM!
Kobi had the same (minus the tomatoes) toasted in a tortilla.

Een feestje om te serveren, deze 1 persoonstaartjes 😄. Beetje uit noodzaak geboren, want ik ben de bodem van mijn grote taartvorm kwijt 🧐. En daar kwam ik uiteraard achter toen ik alles al aan het voorbereiden was.

↪️ voor vijf taartjes: 10 plakken bladerdeeg, 2 per vormpje. Kook 1 bloemkool en 1 broccoli op kleine roosjes gesneden. Meng ondertussen vijf eieren en 150ml crème fraîche in een kom met peper en zout. Bekleed de bakvormpjes, prik gaatjes in de bodem. Vul met broccoli en bloemkool. Giet het eimengsel er overheen, en brokkel wat geitenkaas er bovenop. 20 tot 30 min op 200gr in de oven. Halverwege wat amandelsnippers toevoegen.

There's nothing like hiding veggies in baked goods to unsuspecting kids right? I my daughter would live off of chocolate if I let her! So 90% of the time I'll make chocolate muffins, or sweetbreads, or brownies but I'll fill them with fruits and veggies. I'll use applesauce, beets, or zuchinni! No, its not the same as her just eating the veggies, but its better than her not getting any veggies at all! So I'll take what I can get. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

I'm always looking for savoury breakfast ideas as sooo many breakfasts are full of sugar. Today Hudson had these mushroom, red onion and bacon puff pastry flowers. These are so versatile. You can top with any flavours you want. Savoury or sweet (think veggie/apple and cinnamon/cheese and tomato!) and they're easy and quick to do! Inspo: @foxfairy_led_weaning card 🌸 Cut puff pastry into shapes
🌼 Grease cupcake tray and pop shapes in.
🌸 Top with filling of your choice. I fried off red onion, mushroom, bacon and then put a blob of Creme fraiche.
🌸 Bake at 180 degrees for 20 mins.

The most simple pasta dish.
Perfect weekend dinner!
- boil some water in a large pot (I use the kettle to speed up this bit!)
- add some pasta to the water to cook
...while the pasta cooks
- chop 1 red capsicum into small squares & slice 3/4ish of a punnet of cherry tomatoes in half
- finely chop a handful of fresh herbs (use what you have/prefer...oregano, thyme, parsley, basil) or you can use dried herbs here too...around 1 tbsp
- rinse a tin of your fav beans well with water (I used butter beans today)
- once the pasta is cooked, put everything in the saucepan & generously drizzle over some extra virgin olive oil (I often use herb infused oil for some extra yum-ness!) & mix everything together. If you have it, a squeeze of lemon juice goes nicely here too! 🍋
- transfer to a pretty bowl & put in the middle of your dinner table with side of your fav green salad so that everyone can help themselves
- I also put out nutritional yeast (which I call ‘cheese’ to the girls 😉) & hemp seeds to top the pasta too👍🏻
- et voilà...dinner is done in around 12mins! ❤️💚

Here are some of Raffy’s meals over the last week. He’s had a few random dishes where I’ve been using up leftovers, and a couple of finger food meals when he’s had a larger meal at another point during the day.
👶🏼 Most of the time Raffy’s meals are about simplicity. I work (a lot) and I also have a house to keep in order, friends and family to keep happy etc etc etc and so I don’t have time to make him lavish meals every day. When I do it’s a bonus!
🍲It’s so good when he has a long nap in the afternoon (which he’s starting to do more recently) as this leaves me with and hour or two to actually create something a little more exciting!
⏱But more often than not his meals are bish bash bosh - I still always aim to make them healthy and balanced though, to ensure he’s getting enough energy and nutrients to help his tiny little body to grow and develop properly.

1.) Mushroom stroganoff with basmati rice
2.) Veggie finger foods with eggs and hummus
3.) A rare meal for Raffy of cream cheese, oatcakes and smoked salmon (he really doesn’t have that often, only this week as I had some in the fridge) and some veggie sticks
4.) Wholemeal pasta with chopped kale, avocado slices, Parmesan cheese and a little EV olive oil
5.) Sage and butternut squash risotto with broccoli florets
6.) Wholemeal pasta with homemade tomato sauce and chickpeas and a little grated cheese
7.) A super light meal of cream cheese, oatcakes, smoked salmon and mixed peas/beans
8.) Lunch out and about of 1/2 a sweet potato, hummus dip and vegetable fingers
9.) Rye bread with scrambled egg and tomatoes with a little paprika and some avocado fingers
10.) Omelette (may have been last week?!) with mixed veggies and sweet potato chunks
🌟 This week may not have been quite as varied as some other weeks but I tend to try and vary as much as I can whilst using up bits I have in the fridge.
✅ I hope these meal ideas are useful for inspo - the stroganoff and the risotto were, of course, the meals that took the longest to put together and the rest probably took max of around 10mins

Koldhævede morgen-boller. Nem, lækker og sund morgenmad 😊 
Dejen laves aftenen før. Jeg bruger en rosti Margrethe skål med låg fra @kopogkande til dejen kan hæve i natten over, i køleskabet. 
Om morgenen laves boller og sættes direkte i ovnen i ca 20 min ved 200 grader. 
Opskrift på ca 10 boller (de er store og mætter godt) 
5 dl vand 
20 gram gær 
2 dl grahamsmel (@finaxdk) 
2 håndfulde havregryn 
1 spsk olie - jeg bruger solsikke 
Lidt salt 
Ca 8 dl hvedemel - gær røres ud i koldt vand, alt undtagen hvedemel blandes i og røres godt rundt, og hvedemel tilsættes til sidst. 
Bollerne er ikke gode til madpakken, men hvis man har nogle tilovers, kan de sagtens varmes igen om eftermiddagen 😊

Chicken wings are always the best party food, for both adults and kids. This is a mild spicy version of the bbq wings as I marinated the wings with bbq sauce and paprika. Dipping sauce is a mix of Siracha chilli sauce and mayonnaise. The wings and spicy sauce are a good match for the Halloween theme and are definitely an attractive treat for your children and friends. Try it out!

How to make:
Chicken wings: Marinate wings (12 pcs) overnight with 2 Tbsp bbq sauce, 2 tsp paprika powder, 1 tsp salt, 1/2 tsp ground black pepper and 1 Tbsp flour. Bake at 200C for 12 minutes.
Dipping sauce: 1 Tbsp Siracha chilli suace + 1 Tbsp mayonnaise

Fusilli and Pasta Sauce with Cauliflower, Green Peas and Carrots

Menu of today shall be pasta and I decided to use my last bottle of @haruplate No-Eye-Deer tomato sauce with Shitake mushroom. 
I've parboiled some cauliflower, green peas and carrots and did a quick stir-fry, with a dash of light soy sauce (quarter of a teaspoon?). Popped them into the sauce and added a teaspoon of @sghomemade Sakura Chicken Powder and half teaspoon of sugar to balance the acidity of the tomato sauce. Cook for 2 to 3 mins and you are done. Now you can add this to any pasta of your choice. 
Can this be eaten on its own? I think you can. Add more vegetables like potatoes and it can be a hearty dish on its own. 
Note: If you are uncomfortable to add soy sauce/ sugar, you can omit them out.

Ihr benötigt 300 g Kürbismus, 300 g geraspelte Zucchini, 1 kleingeschnittene rote Zwiebel, 400 g körniger Frischkäse, 2 Eier, 2 Tl Flohsamenschalen, Salz und Gewürze nach Wahl (bei mir Paleo Guten Appetit von @justspices )
➡️ Backofen auf 175 Grad vorheizen, puffer aufs Backblech klatschen und für 25 Min in den Ofen ➡️dazu gab es Knoblauchquark mit Petersilie ➡️fürs Kürbismus einfach Hokkaido halbieren und für 30 Min in den Ofen bei 175 Grad 👌🏼

I try to eat 75/25 ratio of veggie to protein at dinner, so tonight I ground up and sauteed a couple cups of baby portobello and a medium onion and added a pound of ground beef. It stretches the meat to feed more people and adds sneaky veggies for the kids!
