A post earlier this week from @forever.health.nutrition prompted today's perfect Sunday (afternoon) breakfast. Sweet Potato Fritters with guac. 
PALEO SWEET POTATO FRITTERS
3 cups grated sweet potato (about 1 large sweet potato)
4 eggs whisked
2 tsp paprika
salt and pepper
butter for the pan

1. Squeeze out extra juice from the grated sweet potato and place in a bowl.
2. Add the eggs, paprika, salt and pepper and mix.
3.Heat a fry pan and  melt a dash of butter.
4.Use a 1/4 cup to scoop of fritter batter (we put it straight in the pan from the scoop and didn't try shaping it)
5. Cook for 5 minutes, flip, press down with spatula, then cook for a further 5 minutes.

Makes 4 serves- about 10-12 fritters.

This dinner was SO good! Baked sweet potatoes, sautéed garlicky tofu and mushrooms, some baguette slices, and my favorite almond butter turmeric dressing 😍. Today has been good so far, I managed to do some self care. As you know, having depression really just makes you not want to care for yourself 🤷🏻‍♀️. I’ve slowly slipped into that, but pulled myself out today. So I brushed my tangly hair and wiped my face with astringent. If you’ve ever used astringent on your face, you know how much invisible “dirt” lies on your face 😂. I think it’s important to take little steps everyday to better your behavior. Recovery doesn’t need to go super fast, it just doesn’t work. Little challenges go a LONG way ❤️

Struggled with the lighting today because of the weather, hence why you cant see the Week 6.
I can see slight improvements. Down 1kg, 3cm from waist and gained 1cm in hips.
I had a pretty good platform to start after last challenge so for me, this challenge was about changing my mindset towards food. I upped my calories in order to gain more lean muscle mass and worked on my fear of food. 
I feel like I achieve what I set out to do, and can't wait to see what I can bring to the next challenge.

3. Use less salad dressing (use half or even a third of the dressing, alone, or mix with water so you still get the "dressing all over" feel)

I also try to avoid ones with added processed cheese and meats. I can add my own fresh chicken or small amount of cheese if I choose...not too much trouble. 
Skip the croutons and go for nuts and seeds...and you've got yourself a bomb salad that is actually healthy!

What a difference a few months makes (along with healthy eating)! It was tough to find a full-length pic of me because I hated having my picture taken before 😬. I am certainly not afraid to be front and center in pictures anymore!

How to eat LIKE A BOSS at holiday parties ğŸŽ„

We all know the unpleasant feeling of holiday bloat. Luckily, there’s a few things you can do to have enjoy your party and all the food there without all the suffering of holidays past!

1️⃣ Eat meals beforehand
DO NOT FAST UNTIL THE PARTY! This leaves you starving by the time you get any food in your sight, and you fill your plate with your eyes instead of your stomach, then you eat too much on a binge and the rest is history 😅 Eating one or two small meals before your party is a great way to prevent this.

2️⃣ Drink water
Staying hydrated helps your digestion, and also helps your appetite. Staying hydrated will also help your body process any drinks/cocktails you have.

3️⃣ Don’t hang out by the snacks
You’re less likely to mindlessly snack if the finger foods are not within reach.

4️⃣ Move your body
Not only is walking around or even some dancing going to be good for your metabolism, but it will also help you better digest all of your goodies.

5️⃣ Eat what you want
Holiday parties are a time we’re supposed to enjoy. If not indulging is going to make you miserable, give yourself alsome of the holiday treats & traditional foods that you usually have this time of year. Just don’t go overboard!

So we all know, veggies are important part of a balanced diet. Finding delicious way to enjoy them is crucial to avoid getting bored and simply stop having them. Here I bring you my winter salad ❄️ very easy to make, full of nutritious ingredients and soooo delicious 🤤 .

👩🏻‍🍳 2 leeks (cut up in small pieces)
👩🏻‍🍳1 cup of shredded red cabbage 👩🏻‍🍳1 red bell pepper 👩🏻‍🍳coconut oil or butter 👩🏻‍🍳3 tbsp turmeric purée 👩🏻‍🍳Spice blend: Ras El Hanout( cinnamon, chilies, coriander, Nigella seeds, cardamom and rose petals)
👩🏻‍🍳 1/3 cup slivered almonds .

In a large pan on medium heat, combine leeks, cabbage, pepper and coconut oil.

Cook for 5-10 minutes until leeks soften and becomes golden. 
Reduce heat to low.

Add turmeric puree and spice blend

Let simmer for 5-7 minutes 
Serve cold or hot. 
Top with slivered almonds 
ENJOY! 😍

Another weekend, another big breakfast skillet 😍 •
I ran a 5k today, and didn’t get near my best time, I didn’t even run the whole thing. As I crossed the finish line I cried because I was having such stomach issues during the run and I was so frustrated. I am on the last day of my second parasite cleanse so I was hoping to be at the end of my stomach problems. While my stomach issues may not be over, I am still learning how to not get frustrated and how to have compassion for myself.
I don’t want anyone to feel bad for me, I’m getting to the bottom of my stomach problems and will be much better soon. I just wanted to share this story to show how the ups and downs of your health journey happen. It’s okay to get frustrated and to break down sometimes, but it’s more important to continue on and persevere in the face of your health issues.

Maybe not everyone resonates with this but if you do I’m there with you. Health issues may be frustrating sometimes but just know it’s okay to break down when things get hard, you’re not always going to be strong. Just remember to keep looking for solutions, you’re getting stronger and more knowledgeable every day and you’re going to fix this one day soon❤️

Ingredients:
* 1 cup packed blanched almond flour
* 2 Tbsp full fat coconut milk
* 2 Tbsp maple syrup
* 1 tsp vanilla extract
* ¼ cup chocolate chips
* option to add some stevia too if you like it sweet

INSTRUCTIONS
1. Mix almond flour, coconut milk, maple syrup, vanilla extract and stevia in a bowl.
2. Mix in chocolate chips.
3. Roll in 7 balls. 
4. Enjoy right away or refrigerate for a thick cookie ball.

Pipe rigate has to be the BEST pasta ever for it, I love the way it holds the cheesy goodness inside. To make, just take your favorite basic mac + cheese recipe and amp it up with a little shredded parmesan, dried truffle flakes, and a touch of bleu cheese.

Our church congregation had a Christmas brunch this morning, complete with breakfast burritos, yogurt, grapes and donuts, plus orange juice, chocolate milk, and mineral water. 🌯🍇🍩🍹🥛🚰
At community social events like this, its super easy to just get sucked into an eating trap. 🍩 The donuts are running out, oh no, I have to grab one! 🍩
If i go into a party ready to eat whatever is offered, great!! I enjoy it! But if i want to try to eat well, i have to have a plan. It's probably not going to be perfect, but it can be pretty decent if i focus on emphasising protein and water, and letting the other stuff go. 
So Greek yogurt and a breakfast burrito with mineral water would be 👌
(Full discourse: I'm gluten free, so often my choices are even more limited. It's easy to skip the donut when i can't eat it, but hard to pass up whatever gf option they provide. This time, I got a chikfila egg and chicken scramble thing that was great!!)

Today we have an acai smoothie bowl for brekky using powdered acai superpowder @naturesheartuk. Why take acai? Acai berries are rich in antioxidants, but also they are one of the few fruits that contain healthy fats (the omegas!), making them good for the brain (improved cognition-where did I leave my phone again?!), heart, digestive and immune systems. They are also good for anti-ageing! (Cheaper than a pot of posh anti-wrinkle cream too!)⠀

This smoothie bowl has acai berries, blueberries, spinach, cucumber blended together with a twist of lime for extra zing and soya bean protein powder. I've topped it with granola, coconut, dried goldenberries, gojis, fresh berries and seeds. ⠀

It's Workout Wednesday! Today we have some pink porridge! I have soaked these overnight oats with beetroot powder (beetroot juice also works) plus chia seeds for an omega-3, protein and fibre boost. It's Workout Wednesday! Today we have some pink porridge! I have soaked these overnight oats with beetroot powder (beetroot juice also works) plus chia seeds for an omega-3, protein and fibre boost. What do you think? (If porridge could blush!). Simply blend together frozen mango, cucumber, carrot, avocado, protein powder and Vitalising superpowder and top with fresh berries, nuts, dried goldenberries, seeds and granola. ⠀

Good morning! On cold crisp mornings like this, nothing beats a warming comforting bowl of wholesome porridge with added chia seeds. I've cobbled up this breakfast bowl with a quick blackberry sugar-free jam, sliced banana, cacao nibs and a generous swirl of peanut butter. (He he, I kinda went a bit mad there! Can you ever have enough peanut butter?!!)⠀

This should rev me up for my run! 7 miles run today. I need to work on my stamina and speed. Hopefully this should get me going!⠀

Hello! How is your weekend? I had a great workout today, finishing off with a 2 minute 50 burpee challenge! It was such fun. I just thought I'd post my lunch: a low carb courgette noodle dish with a pesto sauce made by just blending spinach (you could also use kale) with pine nuts, extra-virgin olive oil, garlic, lemon juice, avocado and a shot of spirulina. Pan-fry the spiralised courgette zoodles and stir in the sauce. Chuck in some nectarines or mozzarella and pine nuts and hey bingo! you have lunch in 10 mins. ⠀
Tonight I am so excited..I am off with friends to a gourmet Indian restaurant..nomnom! Carb time!!! Have a lovely weekend!⠀
