@fitchickscook -  Lately, I've been getting a lot of questions around what I eat for breakfast or why I don't eat before noon. Well, if you're new to following me, I do 16-8 intermittent fasting which means I eat between 12-8 pm (8 hour window) and fast for 16 hours. During my fasted state, I can still drink water, black tea or coffee, no added sugar or milk/cream.

Here's the details for this week's prep:
Lunch 12 pm - Grilled chicken burger (pre-made) with sweet potatoes "buns" served with steamed broccoli and raw peppers. Green apple on the side. 
Snack 4 pm - Two boiled eggs, assorted cherry tomatoes, raw sliced jicama. My other option is not in this pic but in my previous post. It's a zoodle salad with two boiled eggs. 
Dinner 8 pm - Pan seared wild salmon fillet, steamed watercress and one whole baked sweet potato with half an avocado.
P.S. I will post the recipe for the zoodle salad tomorrow! Stay tuned.

Ever have those days when you hit the gym + the second you start going you never want to stop? Today was one of those days. Anger + anxiety took over today and instead of letting myself deal with it sulking, I decided to make the most of it and let it out the best way possible.
~
Endorphins were flowing + serotonin levels seemed to sky rocket. I decided to combine strength training with cardio making my own total body HIIT session and I came out feeling incredible.
~
It’s so much easier said then done, but I promise if you get yourself up to go workout during a time when you’re feeling angry/stressed/anxious/sad/annoyed/hopeless/defeated whatever the case, I promise you’ll come out feeling better.
~
Let yourself cry! Get angry! Punch a bag! Lift heavier! Run faster! Give it a try, I guarantee the outcome will be so worth it. 💪🏼✨

The colors of the harvest season captivate me. It never ceases to amaze me how we can grow such beautiful things to eat ❤️ At markets don’t be afraid to buy peppers in bulk! I roast them at around 475° in the oven until they’re charred and black, remove the skins, and freeze them for up to 6 months. Around the holidays I pull them out of the freezer, defrost and drain them, and then mix them with fresh garlic, extra-virgin olive oil, salt, pepper, and fresh parsley. It makes an incredible addition to any charcuterie board and an incredible robust and smoky flavor stays with them even after being frozen! A must try!

Not the most excited by the consumption of red meat, but on occasion I get a craving for something other than poultry and fish as a lean protein source. Today I decided to take a chance with bison meat and was not dissatisfied. Leaner than traditional red meat (90/10 split), and pretty dang tasty. Simple pan fry recipe, paired along side some fresh local farm bought veggies and roots as well as few slices of oat, chia, and flaxseed bread. 60 grams of Carbs, 18 grams of fat, and 35 grams of protein. Chocolate caramel apple slices:
2 green apples we got apple picking
1 cup @santabarbarachocolate organic cacao chocolate chips (with 0 added sugars)
1/2 Tbsp coconut oil
Crushed pecans
Melt chocolate with coconut oil in a small sauce pan mixing frequently. Dip apple slices, add to parchment paper, sprinkle crushed pecans on top, let sit in fridge to harden.

5 medjool dates soaked 
1/4 cup @georgiagrinders cashew butter
2 Tbsp coconut oil
1-2 Tbsp maple syrup (optional)
1/4 cup filtered water
Add to food processor or blender and mix. Drizzle on top of chocolate dipped apples, and store in fridge. You will have leftover caramel store in airtight container in fridge for up to a week.

Sesame chicken and Vegetables was on the menu this past week for my lunches. So good and so easy I love sheet pan recipes!

5 small chicken breasts - sliced into bite size pieces
2 cups carrots 
2 cups broccoli 
1 sliced yellow pepper 
1 sliced red pepper 
1 cup snap peas 
Sauce 
3 Tbsp soy sauce
1 Tsp brown sugar 
1 Tsp sesame oil 
Toss chicken and veggies in sauce mixture and throw on a sheep pan. Sprinkle sesame seeds and bake at 350 for 20-30 minutes or until chicken is done. Easy peasy!
