@fitchickscook - Lately, I've been getting a lot of questions around what I eat for breakfast or why I don't eat before noon. Well, if you're new to following me, I do 16-8 intermittent fasting which means I eat between 12-8 pm (8 hour window) and fast for 16 hours. During my fasted state, I can still drink water, black tea or coffee, no added sugar or milk/cream.
Well, why do I do it? I recently wrote a blog post of it. Check it out on my site (link in my bio).
Here's the details for this week's prep:
Lunch 12 pm - Grilled chicken burger (pre-made) with sweet potatoes "buns" served with steamed broccoli and raw peppers. Green apple on the side.
Snack 4 pm - Two boiled eggs, assorted cherry tomatoes, raw sliced jicama. My other option is not in this pic but in my previous post. It's a zoodle salad with two boiled eggs.
Dinner 8 pm - Pan seared wild salmon fillet, steamed watercress and one whole baked sweet potato with half an avocado.
P.S. I will post the recipe for the zoodle salad tomorrow! Stay tuned.

Roast duck, thick rice noodles, tamari hoisin sriracha sauce, steamed bok choy, scallions 🦆🍜🌶🌿.
Haven’t had roasted duck in a while and lucked out on some fresh out the oven ducks when I was @99ranchmarket 🙌🏻 Made a quick sauce w/ equal parts duck jus, tamari, hoisin & a squeeze of sriracha 👅.
Hope y’all had a fab Saturday! #diningwithdiana
Every single time I’m starting to feel like I’m not doing a good job motivating or helping people, I get confirmation that people are watching! And it’s always someone I’ve never talked to before or had no clue could even see the things I post! God’s funny like that, isn’t He?! 🙌🏻
This is the only time I’ll probably ever say this....thank you, anxiety. (⁉️⁉️⁉️)
Ever have those days when you hit the gym + the second you start going you never want to stop? Today was one of those days. Anger + anxiety took over today and instead of letting myself deal with it sulking, I decided to make the most of it and let it out the best way possible.
Endorphins were flowing + serotonin levels seemed to sky rocket. I decided to combine strength training with cardio making my own total body HIIT session and I came out feeling incredible.
It’s so much easier said then done, but I promise if you get yourself up to go workout during a time when you’re feeling angry/stressed/anxious/sad/annoyed/hopeless/defeated whatever the case, I promise you’ll come out feeling better.
Let yourself cry! Get angry! Punch a bag! Lift heavier! Run faster! Give it a try, I guarantee the outcome will be so worth it. 💪🏼✨

Behind the Scenes: Setting up for market day takes time and preparation. Before the Alexandria Farmers Market opens for business every Tuesday, you'll often find our vendors collaborating and discussing the best ways to keep our shoppers happy. 😀
We appreciate all of our visitors and cant' wait to see you soon! We'll be at 2727 Jackson St. next to the Great Pumpkin Patch (across from First United Methodist Church) from 3 - 6 pm.
Come out this upcoming Tuesday to celebrate with us during Fall Harvest Day at the Alexandria Farmers Market!
What’s loaded with antioxidants, omega-3 fatty acids, fiber and super tasty? Matcha Chia Seed Pudding of course 😋 •
•In a storable container mix 1/4 cup of chia seeds, 1 cup of unsweetened vanilla almond milk, 1/2 tsp. vanilla, 1/2 tbsp. of raw organic honey, and 1 tsp. matcha powder (@tropeaka). Stir it all together and refrigerate overnight, top with raspberries ❣️
Shrimp and Rice bowl
This with lemon butter shrimp, roasted asparagus, and sautéed mixed veggies for dinner tonight!
1/2 pound raw shrimp, deveined
Juice of half a lemon
1 bunch asparagus
1 zucchini, diced
1 yellow squash, diced
1 cup sliced mushrooms
1 cup white rice
1 tbs butter, divided
1/4 tbs Butter
Salt and pepper
Pinch of garlic powder
The colors of the harvest season captivate me. It never ceases to amaze me how we can grow such beautiful things to eat ❤️ At markets don’t be afraid to buy peppers in bulk! I roast them at around 475° in the oven until they’re charred and black, remove the skins, and freeze them for up to 6 months. Around the holidays I pull them out of the freezer, defrost and drain them, and then mix them with fresh garlic, extra-virgin olive oil, salt, pepper, and fresh parsley. It makes an incredible addition to any charcuterie board and an incredible robust and smoky flavor stays with them even after being frozen! A must try!

Meal prep has helped me SO much! It keeps me on track throughout the week and saves me time.
Sesame chicken and Vegetables was on the menu this past week for my lunches. So good and so easy I love sheet pan recipes!
5 small chicken breasts - sliced into bite size pieces
2 cups carrots
2 cups broccoli
1 sliced yellow pepper
1 sliced red pepper
1 cup snap peas
3 Tbsp soy sauce
1 Tsp brown sugar
1 Tsp sesame oil
Toss chicken and veggies in sauce mixture and throw on a sheep pan. Sprinkle sesame seeds and bake at 350 for 20-30 minutes or until chicken is done. Easy peasy!
It’s safe to say @guac_shop is better than @chipotle 🤷🏻♂️ I don’t have to ask for double protein and there are more ingredients to choose from! Make sure you have protein in every meal and workout in a fasted state.😉
latest evening YUM includes this protein cake in a mug with NO GUILT. seriously no guilt. no flour. no sugar. nothing to feel bad about. the whole thing (not including toppings is less than 200 calories!! AND HIGH PROTEIN)
here ya go... •1-2 scoops chocolate protein powder (I used 2 scoops soy chocolate protein=130 calories)
•1 egg white
•2 tbsp organic pumpkin purée (no it won’t taste like pumpkin- just gives a gooey texture)
•splash of unsweetened almond milk
•dash baking powder
•dash organic cinnamon (I put cinnamon in everything lol!) my toppings on this one= PB2 & dark chocolate chips 👅
this was 19g protein & 185 calories...calorie and protein content will depend on protein powder used (ps- topping calories not included!!)
Last night we went to one of my favourite restaurants in Bali @merahputihbali and as usual, got treated like royalty by their beautiful staff. Thank you for an amazing experience and a mouthwatering array of spices and flavour! 🤤
Alright ladies how do you take your Terragreens?
I know how amazing they are...
A single scoop of TerraGreens added to water or a smoothie is all you need to gain the nutrition you would get from eating a day’s worth of fruits and vegetables.
But how, oh how do you make them taste good??
Help this mama out 💋
