Thanksgiving can sometimes be a stressful time, especially when it comes to the food. But my hope for you this Thanksgiving is to remember that it’s just food and to be present & enjoy this day with loved ones.

Here are a few tips that I hope help you be more mindful & less stressed around food this thanksgiving:
✨Focus on the people around you rather than the food on your plate. You may only see these people once a year so focus on engaging in conversation with them rather than stressing about the food on your plate.
✨Breathe. Try not to eat meals when you’re stressed. Take a moment to take a few deep breaths before you eat if you can.
✨Practice gratitude. It can be so easy to be stressed during the holidays but taking a moment to express gratitude can help to put things in perspective. Maybe try going around the table and saying one thing that you’re grateful for. I am sure you’d see a mindset shift 😊
✨Eat foods you truly enjoy & look forward to. Maybe that’s your mom’s apple pie or your aunt’s sweet potato casserole? Whatever it is fill your plate with foods that make you satisfied. Depriving yourself of foods you’re craving and enjoy only intensifies your cravings for these foods and can lead to uncontrolled feelings around them. So eat the foods you enjoy and are craving until you feel full & satisfied and then move on with your day.

Making granola isn't complicated, its a handful of selected ingredients, one bowl mixing, baking & storing for two weeks worth of breakfasts. I am not a morning person so I don't want to faff around on weekdays I just want to eat something tasty, healthyish that will sustain me. If you make your own granola it's cheaper, you know what's in it, so it should be healthier & you don't have to pick bits out you don't like. It's quite simply a base of old fashioned oats, mixed with raw nuts & or seeds, a pinch of salt, a pinch of lovely warming cinnamon, oil (I prefer coconut or olive), some honey or maple syrup all baked then cooled & stored in an airtight jar. Ready for mornings to serve with milk of your choice try almond or coconut, you can add any seasonal fruits, the leftover blueberries or half apple from the fridge, maybe top with yoghurt but it is a healthy satisfying start & you get to feel smug too. Surely a warming feeling. Still experimenting with a recipe to share.

Looking for the perfect winter side? How about pan-roasted potatoes? I use “new” potatoes (they need a fairly thin skin), tossing them with melted butter and seasoning with salt. Then I cook them in a heavy pot (I use a smallish Staub), shaking the pot several times during cooking and finally toss them with an abundance of sliced scallions. (I think the green onions reflect my Irish heritage; it’s a riff on the dish Champ.) Truly yummy.

These HARISSA LENTIL STUFFED SQUASH are one of my favorite recipes and make a delicious meatless main or side dish. I can never decide what to make for thanksgiving, but these are so perfect. Plus, the flavors are spot on! Search harissa on my site to snatch up the recipe. In the meantime, I’ll be over here studying for my exam. I always get super nervous before these sorts of things, but i promise we’ll be back to regular programming in no time. Wish me luck!

The leftovers from yesterday’s baked fish was recycled today into a delicious « Sayyadieh » (fish and rice Lebanese recipe).
Many of us don't realize how much food we throw away every day — from uneaten leftovers to spoiled produce. 
I haven’t been very good at minimizing food waste until I did a few changes to my shopping and cooking habits. 
Here are a few helpful tips:
1- Try to plan your meals for the week and write down the needed ingredients and quantities for each. You don't have to plan every meal – just having a clear idea for 4-5 meals will allow you to be flexible with unexpected leftovers and your supermarket shopping will be more efficient. Most importantly you won’t end up buying things that you don’t need.
2- Look in your refrigerator and cupboards first to avoid buying food that you already have. 
3- Learn how to store fruits and vegetables in a proper way so they stay fresh longer. Some fruits and vegetables could be frozen or preserved.
4- Make a list of what is in your refrigerator with expiry dates so that you remember when to use them. I keep this list on the refrigerator door along with a list of the weekly menu.
5- Consume what you already have at home before buying more.
6- I always have one day of the week where I don’t cook and its « eat leftovers » lunch or dinner. I love this day!:)

My recipe for creamy oats 🙏🏻 because it turned out so good and i always get the question how I make my oatmeal I thought I share the basic recipe with you 👇🏻 this was a tahini oatmeal. Just add 1 tbsp of tahini while cooking
🇩🇪 Hey ihr, da ich ganz oft nach meinem Oatmeal Rezept gefragt werde dachte ich, dass ich es mal für euch aufschreibe 📝 hier habe ich zum ersten Mal die Haferflocken von @govindanatur benutzt und ich will keine anderen mehr benutzen! Dadurch das die Haferflocken gekeimt sind, sind sie auch noch reicher an Nährstoffen 😍 bei dem Oatmeal hab ich einfach noch 1 EL Tahini beim kochen zugefügt - 70g Oats
- 350-400ml liquid (water, milk, half/ half)
- 1 salt - 1 tbsp sweetener of choice ( maypole syrup, agave nectar, flav drops )
- Soak oats in liquid for 10-15 minutes. Bring to a boil and add salt and sweetener. Lower the heat and stir constantly until desired consistency. Add an other splash of liquid (or 2 tbsp of soy yogurt) - that’s it!
- Play with different flavors! For example add nutbutter, maca, cinnamon, protein powder, chia seeds, coconut, cacao - it’s up to you!
- Top with everting you like! .

Are you a nut and/or a nut lover?! I am both 🤪 But!!! If you eat nuts as a snack, you might be making fat loss much harder on yourself. Why? Because nuts are super high calorie and if you aren’t aware of portions, those calories can add up faster than you can say donuts.

That being said, if you want to have almonds, be my guest. I love nuts (lolz). They are a great source of healthy fat, which will help you stay full and aren’t processed, contain lots of nutrients, benefits and no preservatives!

At 7-8 calories PER ALMOND 🤭, keep an eye out on your portions to avoid by accidentally eating hundreds of calories!! I’ve totally caught myself reaching in the bag a few too many times and then I realize I just ate like 50 almonds, aka 350 calories. Wooooops.

👏🏼How to Solve this problem:
Instead of letting your hand keep wandering in the bag, grab the portion you need, and put the bag away out of sight, so you can avoid mindless snacking!

Again, almonds (and nuts in general) are a GREAT thing to include in your diet, but keep in mind they are primarily *fat* .. which has 9 calories per gram. They are a calorically dense food, meaning a lot of calories for not that much food volume.

At the end of the day, just keep practicing your portion control and keep things in moderation, nuts and all 👌🏼

I love nuts (lolz). They are a great source of healthy fat, which will help you stay full and aren’t processed, contain lots of nutrients, benefits and no preservatives! ⁣⠀ At 7-8 calories PER ALMOND 🤭, keep an eye out on your portions to avoid by accidentally eating hundreds of calories!! I’ve totally caught myself reaching in the bag a few too many times and then I realize I just ate like 50 almonds, aka 350 calories. Wooooops. ⁣⠀ 👏🏼How to Solve this problem: Instead of letting your hand keep wandering in the bag, grab the portion you need, and put the bag away out of sight, so you can avoid mindless snacking! ⁣⠀ Again, almonds (and nuts in general) are a GREAT thing to include in your diet, but keep in mind they are primarily *fat* .. which has 9 calories per gram. They are a calorically dense food, meaning a lot of calories for not that much food volume. ⁣⠀ At the end of the day, just keep practicing your portion control and keep things in moderation, nuts and all 👌🏼 ⁣⠀ Hope this tip helps you!! Wait what? No oatmeal? Yes, i made this amazing chocolate caramel protein crepes with a yoghurt filling and topped them with star shaped bananas, pomegranate, chocolate and popped brown millet. Вкус ноября: сырое варенье из фейхоа🍁🍂🍋

Чем ближе морозы, тем больше хочется вернуться в лето, хотя бы на миг. Сделать это довольно легко: достаточно приготовить пасту из фейхоа, чей вкус так напоминает спелую землянику 🍓😋.

Ингредиенты:
🔸 спелые плоды фейхоа - 1 кг
🔸 лимон - 1-2 шт.
🔸 сахар - 2-3 стакана
🔸 мёд - 300 г
🔸 грецкие орехи
⠀
Способ приготовления:
1. Промыть фейхоа (не переспелые, без тёмных пятен на кожуре) и лимон, обсушить бумажным полотенцем.
2. Удалить с фейхоа хвостики, разрезать на 4 части и измельчить с лимоном в блендере до пюреобразного состояния.
3. Добавить 4-5 столовых ложек мёда (или больше, если не планируете использовать сахар).
4. Добавить стакан измельчённых грецких орехов и тщательно всё взбить.
5. Силиконовой или деревянной лопаткой (чтобы не оказалось) переложить смесь в банку, оставляя сверху 1-2 см воздушного пространства.
6. Присыпать верхний слой сахаром (ради сохранения цвета) и убрать в холодильник на несколько часов.

Хранить такую витаминную смесь можно несколько месяцев, добавляя в утреннюю порцию овсяной, рисовой или пшенной каши. Также хорошо использовать в качестве соуса к штруделю и сырной тарелке🧀 или просто добавлять по ложке в чай ☕.

This week’s Recipe on Food4Thought is: BANANA BREAD 🍌🍞
…but the healthy kind !

Banana bread, banana cake, or loaf, whatever it is you prefer to call this delicacy.

This sweet bread has been around since 1930 gaining its popularity during The Great Depression.
If you aren’t already aware, banana bread is made with (really) over-ripe bananas and during The Great Depression people were very reluctant to throw any food away… ‘old’ bananas too ! These were then mashed up and made into what was also known as ‘Quick Bread’ (Banana Bread)

It was also very popular during WW2 when rationing was crucial. (You basically had to find the cheapest way to curb serious hunger pangs ! )
So it was whipped up with over-ripe bananas, a single egg and buttermilk (All very cost effective during this time- 1940’s) 
Now that you have a brief history, let’s take a look at how to make a healthy, sugar-free version of this delicious loaf !

INGREDIENTS
•1 ¾ cup whole wheat flour ( You can also use 1.5 cup Rice Flour, half a cup raw oats if you prefer)
•⅓ cup Coconut Oil (Melted)
•2  Beaten eggs
•1 cup mashed bananas (Must be Ripe) (about 2 large bananas)
•¼ cup milk of choice •1 tsp baking SODA (NOT baking powder)
•1 tsp vanilla •½ tsp salt
•½ cup Honey
•½ tsp cinnamon
*Add-in’s to make it extra tasty: Raisins, chopped nuts, coconut flakes and blueberries* (Half a cup)
METHOD
1. Preheat the oven to 165 degrees C and grease your loaf pan
2. In a large bowl, beat the oil and honey together with a WHISK. Add the eggs and beat well, then add in the MASHED bananas and milk. (Sometimes the coconut oil solidifies upon mixing, just leave the whole mixture on a warm (Not Hot) surface for a few minutes and mix again)
3. Add the baking soda, vanilla, salt and cinnamon, and WHISK. Now using a large SPOON, stir in the flour, until combined. Add in your ‘extras’
4. Pour your mixture into the loaf pan and top with some cinnamon. 
5. Bake for 55 to 60 minutes (Until a skewer comes out clean if you ‘poke’ the loaf) Allow to cool IN the pan for 10 mins. Remove from pan and alow to cool for a FURTHER 20 mins, the slice and enjoy !

Preheat the oven to 165 degrees C and grease your loaf pan 2. In a large bowl, beat the oil and honey together with a WHISK. Add the eggs and beat well, then add in the MASHED bananas and milk. (Sometimes the coconut oil solidifies upon mixing, just leave the whole mixture on a warm (Not Hot) surface for a few minutes and mix again) 3. Add the baking soda, vanilla, salt and cinnamon, and WHISK. Now using a large SPOON, stir in the flour, until combined. Add in your ‘extras’ 4. Pour your mixture into the loaf pan and top with some cinnamon. 5. Bake for 55 to 60 minutes (Until a skewer comes out clean if you ‘poke’ the loaf) Allow to cool IN the pan for 10 mins. I have heard so many times in my life people telling me what I was supposed to do, how I was supposed to live my life, which were the right choices to take, what I was supposed to eat, etc. And I'm sure many of you have been in the same situation! It's not easy to keep all of these thoughts out from your head (and life). BUT IT'S ONLY WHEN YOU ALLOW YOURSELF TO CHOOSE WHAT IS BEST FOR YOU THAT EVERYTHING BECOMES EASIER! Honestly, I still find difficult sometimes to stay focused on myself when people around me keep saying different things from what I believe is right for me BUT with time and a lot of self-care practice, I have understood how to deal better with these situations⠀

➡WHERE TO START? Try to deal with every little challenging situation staying FOCUSED on yourself, your well-being, and what you really want. If you try to please everyone around you or if you try to make specific choices because they sound more socially acceptable, having a healthier lifestyle and being more intuitive around food WON'T be either possible or easy. BUT THEY SHOULD! Listening to your body, and building a support system for your well-being should be easy and enjoyable. Don't let other people take this away from you! Gratitude challenge day 4. Growing up one of the things I struggled with was that I wasn't good at sports.  I felt like an outcast, and when I tried to play sports with friends I was often told to sit on the benches. It haunted me for a long time until I began to discover the gifts God placed in me . I want to take this time to thank God for my gifts especially my kitchen skills 😎 and for making me exactly who I am.
