Good food and two hours of good company, I could ask for a better Monday evening. I’m so excited to see what God is going to do come this fall. I love seeing different generations gather together for a common purpose and I’m blessed to be surrounded by such strong and mighty women!

Behold, Zucchini chicken with pepper & tomato flatbread. ✨✨✨✨✨
Zucchini, peppers, & tomatos were used from my home garden which makes this even more special for me.

Ummm, not a repost, I had to bring my husband back for the bacon smoked gruyere flatbread 😳 I forgot to mention how perfect the sweet caramelized onions taste with the salty bacon...still heaven 😋 🥓🧀 🌟 ☁️
Not the prettiest pic but this was TASTY and satisfied my cravings for something different and for tomatoes.
DEATS - butternut pumpkin and frozen peas sautéed in coconut oil, then cooked in tinned tomatoes with garlic and oregano, added tuna and a glob of unhulled tahini from @houseofhealthcentralmarket (so creamy!) - an oat flatbread thing made from blended oats, water, apple cider vinegar, herbs and salt, and cooked in a pan - all topped with nooch and pepitas.

Chicken-crust veggie flatbread. Crust made with @trifectasystem chicken breast. Loaded with all the fresh veggies from the local market - squash, zucchini, sweet banana peppers, and asparagus. I got home from work and put my pjs on straight away tonight so dinner had to be concocted out of food I had in the house 🏠 I had some sad looking veggies in the bottom of my fridge, and an overgrown herb garden... so I decided to whip up a batch of fresh pesto 🌿 and some bread 🥖 and created some pesto chicken and veggie flatbreads 👌🏼
And quite frankly, I’m really impressed with the result (if I do say so myself)! 😁
For the pesto I put a large bunch of basil 🌿 in a blender with some olive oil, lemon juice 🍋 Parmesan 🧀 and pine nuts 🥜 and blitzed!

Finnish flatbread 🙌
Quick and easy, serve for example for breakfast or with soup 🥣
2 dl gluten free flour mix
1 dl rolled oats
0,5 dl chia seeds
0,5 dl sesame seeds
1 carrot, grated
0,5 dl coconut oil/olive oil
2 dl liquid (i used plant milk)
1 tbsp sugar
1 tsp salt
1 tsp baking powder
Bake breads for 10-15 minutes at 225°c (440°F). You can make your own version of flatbread by adding spices (garlic 😍), nuts, cheese, or anything you like, to the dough! .

Hyvä peruspohja on esim. tämä:
2 dl gluteenitonta jauhoseosta
1 dl kaurahiutaleita
0,5 dl seesamin siemeniä
0,5dl chian siemeniä
1 porkkana hienoksi raastettuna
0,5 dl oliiviöljyä/kookosöljyä
2 dl nestettä
Paista teeleipiä 225°c:ssa n. 10-15 min. Taikinasta saat tuunattua mieleisesi lisäämällä vaikka mausteita, pähkinöitä tai juustoraastetta.
Itse tykkään tästä perusversiosta, makua muuttelen päällisten avulla 🤗
