When planning your Thanksgiving dinner, a salad may not be something your consider=, but this Fall Harvest salad looks seriously DIVINE! Mixed greens, acorn squash, apples, pecans, cranberries and homemade Pumpkin Goddess Dressing make this a must for your Thanksgiving table. You’ll wonder why you’ve waited this long to eat a salad on Thanksgiving!
For the Pumpkin Goddess Dressing:
1 cup plain Greek-style yogurt (
2 Tablespoons apple cider vinegar
2 Tablespoons olive oil
1 Tablespoon maple syrup
½ cup sour cream or additional plain Greek-style yogurt
1/3 cup canned pure pumpkin puree
1 teaspoon minced garlic or about ¼ - ½ teaspoon garlic powder
½ teaspoon salt
¼ teaspoon dried thyme leaves
¼ teaspoon cinnamon
For the Salad:
1 acorn squash plus olive oil, maple syrup, cinnamon, and salt for roasting*
1 apple, thinly sliced
½ cup toasted pecans
¼ cup dried cranberries
1 pkg. 5-6 ounces mixed salad greens (you can use any blend that you prefer, but I like a mix that includes broccoli slaw, Brussels sprouts, cabbage, kale, and chicory)
FOR THE DRESSING:
Place all ingredients in a blender and combine. Chill until ready to use.
ROAST THE ACORN SQUASH:
Preheat oven to 400 degrees F. Spray a baking sheet with cooking spray and set aside.
Slice squash lengthwise, remove seeds, and slice horizontally into ½-inch thick rounds. Place sliced squash in a single layer on prepared baking sheet. Drizzle with olive oil and maple syrup, sprinkle with a dash of cinnamon and salt, to taste. Toss squash to coat.
Bake squash at 400 degree F for approximately 20 minutes (or until tender and caramelized), flipping halfway through.
ASSEMBLE THE SALAD:
Once the squash has cooled, cut it into bite-sized pieces and place it in a large salad bowl with the remaining ingredients. Add Pumpkin Goddess dressing and toss gently. Serve immediately.
*can substitute with diced roasted sweet potatoes or butternut squash

“ People romanticise their plans but dread the execution. The magic you’re looking for is in the WORK you’re avoiding “ ... so true 👌🏼. These medals I’ve collected over the years are nice, but, they wouldn’t have been achieved without putting in the hard work.
Deciding your goals is the easy part. It doesn’t matter if it’s fitness related...wanting to run a 10k, marathon, do a triathlon, achieve a press up / pull up PB. Or whether it’s aesthetic related, losing weight, changing shape, building muscle... they all require YOU to do the work. As I said, easy to choose, hard to execute.
You won’t get results by making excuses, cutting corners, and avoiding the work (training)
I’m a true believer that ANYONE can achieve ANYTHING they really want to achieve....ONLY if they work at it.💪🏽Mindset + action plan (work) + consistency = success.

Studies have shown that surrounding yourself in nature has the same effect on the brain as Meditation has so it’s definitely a win win to get out there especially if you get days like today 😊 ☀️ But when you are out there, be mindful of where you are and what you see 👀 and what you hear 👂 instead of trying to solve all of your life’s problems .. be present in the thing you are doing and you will receive so much more out of it 😊🙌 Happy Sunday guys
So..a chapter ended with this amazing little girl who I had the privilege to train for 18months..we did a total of 100 sessions together twice a week, and sometimes she was tired, sometimes it was raining, sometimes (most times) she was outside her comfort zone but along this lovely journey we made friends and I became a little part of her life and she definitely became part of mine. Hopefully she will continue her fitness coming to my Sunday classes and also to @baseboxuk on Thursdays for HIIT and Hip Hop. Not many 14 year old has the luck to have a PT at that age and hopefully one day when she grows up a bit more will understand the commitment that her parents did for her ❤️
Sundays were made for barre, yoga, animal flow and gong baths….....well guess what, we’ve got all of that and more at #ELLEweekender with @lululemonuk 🧘♀ PLUS @seenonscreen.dance will be hosting three empowering Wonder Woman Dance Workouts across the weekend. ⠀
What are you waiting for? Grab your #girlgang and join us for the biggest fashion, beauty and wellness weekend of the year! 30 Nov - 2nd Dec at the @saatchigallery⠀

We all have 86,400 seconds at our disposal each day 🤔 that doesn’t change .. the same amount is deposited at midnight event night to utilise or not utilise the following day, the amount doesn’t change but the amount of energy we put into those seconds is under our control. ➡️ you can choose to procrastinate or take action toward a goal that you have because without a goal, all you have is a wish and what I don’t want you to do is to wish your life away, I want you to take control of your life and make use of all those seconds so at the end of that day you will have moved closer to you goal as a result of what energy you put into those seconds .. 🔥 it’s not about time management guys, it’s about energy management 🙂👍🙌 Michael
Meet Hillary! You may have noticed Miss Hil is new to our schedule leading our ROLLAX class on Tuesday evenings.
Hillary is a born and bred Calgarian, with a background in dance, movement, and fitness! In her words, "having trained with School of Alberta Ballet for over a decade I decided my mind needed a change... transitioning into the fitness industry in 2013 one of the most challenging + rewarding practices I’ve found has been Rollax. Enhancing mobility, body aptitude & awareness I fell in love with how kindly committed you’re required to be in those quiet yet searing muscle moments. Training with Dr.Justin Tan was a soul-churning experience for my mind and vessel that only magnified the benefits of this discipline."
When not in a studio setting rolling, barre, yoga practice, the mountains and pup are her head peace.
Catch Hillary on the select Tuesday evenings at 7:15 PM for ROLLAX!
