Chicken keema (mince) stuffed baigan(eggplant)
Not the most photogenic dish but definitely one of the tastiest! Perfect for those on low carb/keto diets.Eggplant is naturally low carb and adds that smoky flavour to the dish.
Rough calorific value: 300kcal per serving
Proteins 40% fat 40% carbs 20%
2 eggplants raw hollowed out
100g chicken keema raw
1 onion finely chopped
1 tomato finely chopped
1/2 teaspoon black pepper crushed
Olive oil 2 sec spray for cooking
1 teaspoon garlic finely chopped
Salt according to taste
Mozarella cheese 1 teaspoon(u can increase this to make it more ketogenic)
1 cup water
Coriander and red chillies for garnish
Take the hollowed out brinjals and take a little bit oil and rub over them coating all sides.sprinkle a little salt over them and put ot to bake in oven/airfryer for 15 min at 160 degrees.in meantime,take a wok and spray with olive oil.add the garlic,onions,tomatos and sautè them till soft.Add the minced meat and sautè that too.add the salt and pepper and water and cover it with a lid and cook for 15-20 min,stirring intermittently.once the water has evaporates and keema is cooked,remove from wok and add to the egg plant cups.sprinkle some mozarella on top and put back in air fryer/oven for just 2-4 min till cheese melts.garnish with chillies and coriander.Enjoy!!

Hello all #veganlovers , today I prepared something special for you. Berry crumble is one of my favourite desserts. I love eating it hot, topped with vanilla ice cream. Here less calorie version with coconut yoghurt from @alpro

Hoy tengo algo riquísimo y prefecto para todos veganos. Crumble de frutos rojos es uno de mis postres favoritos, especialmente me encanta comerlo caliente con una bola de helado sabor vainilla. Aquí lo tengo con un poco yogur de coco (menos calorías 😂)
¿Te gusta mi nuevo fondo del fotos? .
150g berries of choice (I used blueberries) / 150g frutos rojos (usé arándanos)
2 acid apples / 2 manzanas ácidas
2 peaches / 2 melocotónes
5 small plums / 5 ciruelas pequeñas
2 tbsp cornstarch / 2 cucharadas maizena
2 tsp cinnamon / 2 cucharillas canela
Juice of half lemon / zumo de media limón
30g xylitol / 30g xylitol
70g rolled oats / 70g copos de avena
20g cocoa nibs / 20g nibs de cacao
40g almonds well chopped / 40g almendras troceadas
40g xylitol / 40g xylitol
30g cold coconut oil / 30g aceite de coco frío
1. Cut apples, peaches and plums into pieces (more or less 2cmx2cm), 2. In a big bowl mix together berries and other fruits and pour lemon juice
3. Add cornstarch and xylitol, cinnamon and mix very gently
4. In the other bowl mix together oats, almonds, cocoa nibs, xylitol and cold coconut oil
5. Using your hands mix all crumble ingredients together until consistency of wet sand
6. Cover rectangular mold with a small amount coconut oil, place fruits and crumble on top
7. Bake 25-30 minutes in 180°C until golden brown and crunchy
Minus talking to my coach friends and crushing leg day…TODAY SUCKED! 😞 Guys, so much of social media is the highlight reel but tonight, this is me. 🤷🏻♀️ Teary eyed, tired, sore, and feeling defeated. I have EVERY reason to go to bed, call it a day, throw in the towel, and let those feelings take over. BUT I’VE GOT GOALS, FRAAAAANDS! 🤗 I have a tribe of women who want to inspire and motivate others to live healthy and happy lives. 💕 I have clients who need support, motivation, and to know that they are loved. 💜 I run a business and, although it is a simple one to run, it requires consistency and dedication to helping others. So I cried a little, complained for a second, then put my big girl pants on and reminded myself that I am on a MISSION to help as many people as possible learn to love the skin they’re in, get healthy, find happiness, and live a purposeful life! I won’t stop just because I had a frustrating day. Goals baby. 💫 Goals. 💫 Want to join me?
You guys, this is what progress looks like to me.
1) Grabbing my normal size and realizing I’m not that size.
2) Realizing I didn’t notice the size change because I’ve gained so much confidence I really wouldn’t have cared if I went up a size (hello booty gains!)
3) Finally enjoying shopping because I love my body. It’s not perfect but is there such a thing? (NO!)
It’s about loving the body I’ve been given and taking care of it so I can live the life God has for me, expectantly waiting to follow Him wherever he leads.
