Mmmm..... porchetta. pork belly, butterflied open and rubbed down with a parsley, rosemary, thyme and garlic mix. Rolled then Trussed up and cooked hot and fast in the @chargriller_australia akorn over @firebrandbbq lump charcoal. First time cooking porchetta and first time using the akorn. Every so often a product comes along and you’re hesitant to try because you know what you love but boy oh boy... @firebrandbbq are now stocking “Jacoubs” brand of Rubs. Made locally out of Wetherill Park, there is an incredible range from middle eastern to classic steak and Portuguese to Indian. Here is his #oconnorbeef Pasture fed ribeye rack. “This was dry rubbed, then barbecued in the kettle with #firebrandbbq lump and cherry wood. Indirect heat, 250f for about 90 minutes.
Taken to 125f and rested. Cheers @morningtonprimecuts for the best beef!!”
What an awesome weekend. Our first pop up. We smashed out a lot of plates, pulled pork burgers, and brisket burgers. Sadly no photo of the brisket burger.. but a great day, and happy to say we will donate money to the kids of the school
Chicken nibbles for dinner tonight. Turned out bloody amazing 😉 So spicy. So full of flavour. So happy 😁. Rubbed with our special blend of home made buffalo rub. It’s a treat for the whole family. Glazed in @heavenlyhellhotsauces Championship Candy.

BBQ Chicken Tikka in 90 Minutes!! Hard to believe, from go to whoa, but this is a super easy, super tasty meal that will be on high rotation at your place too!!! Cut up a few spuds and cauliflower into even sizes, finely chop coriander stalks (save the leaves for later) and put all into a skillet. Drizzle over with olive oil, balsamic vinegar and salt and pepper. Finally, dollop or two good tablespoons of commercially bought Tikka paste. Mix all this thoroughly through with your hands.
For the chook, we have a whole, free range, size 17 bird, which we slather in the Tikka paste and massage that into the chicken till really well covered.
To elevate the chicken above the veg, I used the Solidteknics Flaming Skillet as a riser, the holes allowing the chicken juices to drip onto the veggies, creating a lovely gravy.
The whole lot goes into a HOT kettle. I used a full charcoal basket on either side, with a chunk of cherry for smoke.
The chicken hit 185F internal in 80 minutes, veg was also done in the same time. Let the bird rest, then served up with some greek yoghurt and fresh coriander leaves, it's a big, flavourful, yet mild and universally appealing dish.

What an amazing year it’s been for us. We grew from strength to strength finishing top 10 in almost every comp we competed in. We finished 16th out of all BBQ teams in Australasia. How good is that!
