Healthy and easy pancake recipe that makes for a great breakfast option.

Method:
Peel and grate carrot and transfer it in a bowl. Add milk, egg, vanilla extract and combine it all well. Now add refined flour, baking powder, sugar, a pinch of salt and cinnamon powder and give it a whirl until all the ingredients are well combined and prepare a batter.
Heat the pan and add oil or butter. Pour the batter for pancake and cook it till slightly brown and then flip it to cook form the other side as well.

This was such a filling bowl of oats to have, made with; 🥣 GF oats mixed with hemp hearts, buckwheat groats, cacao, almond milk, chia seeds (I also put in some protein powder). In the morning, top with figs, honey (I used agave nectar), blended walnuts, cacao nibs and yoghurt (kefir). Thanks to @theawesomegreen for the recipe. Not as pretty as her bowl but I was pretty happy to see it this morning for breakfast time 😍

Delectable pancake recipe with an ideal  combination of sweet apple and cinnamon spice.

Method:
Firstly, put oats in a blender and blend until fine. In a bowl, combine refined flour, baking powder, cinnamon powder, oats and sugar.
Now add melted butter, egg, vanilla extract and finely chopped apple and mix it all well. Add milk, just enough to combine all the ingredients and to adjust the consistency but make sure not to make it too runny.
Heat the pan, add dollop of butter and pour the batter for pancake. Cook it for 2 to 3 minutes or until it is slightly brown and then flip it to cook from the other side as well. Flavourful breakfast is ready to be relished.

Monday, breakfast & snacks: creamy eggs with veg, pepperoni & cheese, a few pumpkin oat cookies and cheese with pepperoni. Not pictured: an apple and a banana, plus we’re about to have salads for dinner. Taking this rainy, holiday-day to focus on recommitting to tracking my food and trying to limit my snacking/decrease my portions. Also have been doing yoga daily (7 days in a row so far!) and hopeful to take many autumn weather walks this week to continue this reset. ‘Breakfasting under artificial light’ season has begun 😩
40g porridge with 150ml skimmed milk, with vanilla skinny syrup, topped with a tablespoon of yogurt, banana and bloobs. 
This should sort me out all morning. 
Chicken and aubergine pasta again for lunch with a yogurt and lots of fruit. 
Lemon drizzle @nakdwholefoods  bar as well. Loving these at the moment, missed them on slimming world.

Wholesome and delicious Pumpkin Pancakes.

Method:
Start by blending the oats into fine powder. In a bowl combine refined flour, oats flour, baking powder, sugar, cinnamon powder and pinch of salt.
Now transfer boiled and pureed pumpkin, melted butter, egg, vanilla essence and milk(just enough to combine it all in a smooth consistency). Mix all the ingredients well and make sure there are no lumps.
Heat the pan, add oil/butter. Pour the batter and cook until slightly golden brown from both the sides. Enjoy healthy pancakes with sweetness of honey.

Healthy and fluffy Banana Oat pancakes.

Method:
Transfer oats in a blender and blend until fine. Now add peeled and sliced banana and egg and allow to blend well. Add baking powder, cinnamon powder and vanilla essence and give it a whirl until the batter is all smooth. If needed, add milk to adjust the consistency. But make sure it is not too runny.
Heat the pan and add oil or dollop of butter. Pour the batter and cook till it is golden brown and then flip it to cook from the other side as well. Simply drizzle honey or maple syrup to add the sweetness. Healthy and fluffy pancakes are ready to be enjoyed.

I fancied something different for breakfast this morning so I veganised a recipe for cherry and almond baked oats from slimmingeats.com. Instead of the egg I used a flax egg and I used soya yogurt instead of dairy yogurt. This was definitely a success but not an everyday breakfast if you are doing slimming world as it is a little high in syns. In saying that, I’m really full now and it should keep me going until lunch time. If you haven’t tried this, do. Also, never buy biscoff spread as you won’t have the willpower to not spoon the whole jar into your mouth. Mistake I won’t make again.
