My new and improved 150% pumpkin still 100% whole wheat sourdough 👍. 50% more organic autumness (don’t think this is a real word 😆) makes for a totally tender and moist crumb. Another little fruit project that I worked on a few weeks ago, cold smoking some strawberries. In this case some seasonal strawberries that had been in my freezer for a few weeks, and charred tea leaves for smoking. The flavor was very intense and interesting, more development to come. I slap one ass cheek, then the other. Nothing. He looks at me expectantly. Eager, even. I try both thighs in rapid succession. Nada. Breast? Nope. This doesn’t usually happen. Not to me. I try again, harder this time. Wait! I think I feel some— Sigh. Face it, it’s a no-go. Failure to launch. “I…” Flop sweat. How had it come to this? Ah, right. That’s the easy part, boyo. Let’s rewind… mmm… five minutes, shall we? “Can I help you find anything?” I’ve been coming here a long time. If I can’t find it, they don’t have it. “Nope. I’m all set, thanks.” “Okay.” He goes back to stocking shelves. I peruse. Besan? Check. Turmeric powder? Got it. Chaat masala? Hrm… that should be… here. They’re out. No big deal—I can make it myself. All I’m missing is… ah, there we are. Amchur powder. I walk to the cold case—cool case, really—and select several knobs of ginger. I’m getting ready to close the door when… what… what’re you? I grab one, then take everything to the counter. “Got it all?” “Almost. Can I get a couple samosas?” “No samosas… the kitchen…” He shrugs, grins. “Okay, just this then. Oh, and… ah… what’s this?” I hold it up. His eyes flit to the left. Translating. “Tindora. It’s… zucchini family, maybe? Or cucumber? You fry it up.” He mimes sautéing. Interesting. “Okay, let me grab some.” I bring back what I hope will be enough to fill a half-gallon jar. He weighs them, gives me the total. Which brings us full-circle, doesn’t it? Slap, slap, slapity-slap-slap. Panic edging in. The whole shebang. “I… I left my wallet at home. I’ll have to come back tomorrow. During lunch, if that’s okay?” It is, indeed, okay. ### “Slapity-Slap-Slap” Tindora Pickles. Basically the “New York Deli-Style Pickles” from @ferment.works’ “Fermented Vegetables”, except with tindora instead of cucumbers. I'm shooting for full sours. Yesterday’s #blackriceamazake and #blacksesame #sourdough in a #blackricesourdough wrap —— with a friend. 
Very tasty: sweet and custardy crumb, though with some mistakes on the interior where the wrap was too thick on the bottom. Ah well.

Gluten free sourdough extravaganza. Dehydrator shelf propped up with stoneware bowls as wire cooling rack too!
▪️There is now a bread knife and a cast iron loaf pan in this homestead’s kitchen! Special gifts, indeed. Though the first loaf baked was likely a little too high in hydration and caved in a little, it had a lot of promise. I can’t wait to bake more loaves!
▪️And the baguette experiments have been getting better and better. Autumn is here and I just want to bake all the bread.

Surprisingly found this gem in Key Foods which, actually has a large selection of kombucha- even more of a variety than Whole Foods at times 🙉. This brew is comparable to Health Ades Pink Lady Apple which I love, so I thought the basil would give it an additional pop of flavor... and I was wrong. Awhile back I did a combo with watermelon and basil which I thought had a nice balance however, the basil combo in this brew ended up giving a muddy/ dirty taste. Hola hola, estoy en días intensos de chamba y por eso desaparezco un poco, pero aquí va la receta de cómo hago el queso crema que hago con leche kefirada que preparo en casa (mi depa es bien frío y con hartas corrientes de aire, así que los búlgaros demoran en fermentar aproximadamente 36hr sin quedar demasiado ácido)
Para hacer el queso dejo trabajando los búlgaros unas 4-5 horas más que para hacer yogur griego pero es cuestión que pruebes la acidez que necesites).
🌿🌿🌿Uso aproximadamente 1 1/2 tazas de leche kefirada🌿🌿🌿 🍃Una vez lista la leche kefirada la coloco (sin los búlgaros) en un colador hondo con una tela de algodón en el fondo, para que el kefir pueda drenar poco a poco el suero, y en la parte de abajo un recipiente de vidrio o plástico lo suficientemente profundo para recibir el suero que drene, es muy importante que este proceso sea dentro de la refri para cortar el proceso de fermentación y que sea sobre la tela de algodón finito para que pueda drenar, le coloco una tapa y dejo que drene por 3-4 días, verificando que el suero no choque con el colador para que no vuelva a agregar humedad al queso. 🍃Pasado este proceso, con una espátula o una cuchara de plástico lo traspaso a un pomo pequeño y a comer 🐽
🚨🚨🚨*es muy importante que no haya contacto en ningún momento con utensilios de metal, siempre debemos usar utensilios de plástico al manipular los búlgaros y la leche kefirada.* 💚
A mí me agrada sin sal, queda con la textura y el saborcito muy similar al queso Philadelphia, pero puedes agregarle sal de Maras al gusto.

Thank you kombucha for being an interesting non-alcoholic drink! 😁 this is my homemade treat-drink with natural fizz! ✨Good for your gut too 🙌. I've noticed when out, how few interesting non-alcoholic drinks are out there... (combination of concussion & pregnancy has meant not drinking for over a year). I normally end up having tap water as I don't like sweet drinks so I'm always really grateful when kombucha is on the menu. (Although not strictly alcohol free at less than 0.5% it's so minimal you don't need to worry.) My scoby (the alien like culture 👽 that converts your sweet tea into this yummy probiotic beverage) really enjoyed this warm summer we had so I'm ready to split & share so I have 4 scobies to give away if you're interested in starting your own brew? You have to come for a cuppa & pick them up though as I'm waddling like a penguin in my 38 weeks state! #kombucha #kombuchabrewing #probiotics
