Es aquí donde entra el concepto de Masa Madre Natural (MMN), o Masa Madre de Cultivo (MMC)
La Masa Madre es una mezcla de harina y agua, la cual fermenta en un tiempo breve gracias a la acción de bacterias (bac. lacticas y levaduras salvajes, es decir, del ambiente)
Simple por la facilidad de la mezcla. La dificultad viene de saber mantenerla en las mismas condiciones, saber incorporarla adecuadamente a los procesos, saber cuidarla o arreglarla. En definitiva es un proceso aprendizaje del que cuesta hacerse maestro.

Bartolo, Achi and Shalom were drying and fermenting many heads of garlic in the last weeks, to eventually turn them into black garlics. Well... their house smelled like a garlic-cave, also their clothes were more garlicy than a stinky garlic bread you could get at pizza hut. They told me “we’re gonna use it for the dinner at the 20th, it will worth it”. I was definitely not skeptical, but at the same time I was not expecting such a MIND BLOWING dessert. Yes, the cream on the right is made of black garlic. And it was incredibly surprising and delicious. THANK YOU for a lovely dinner guys. Those funky-smelling hugs these recent weeks were worth it. @goodmoodfoodclub . .
CLOCHE | just a few more items left to collect now that my Durand cloche is here and I’ll be baking bread! Oh and hooking my garage up with electricity so I can get my second fridge going because I’ve maxed out our new fridge. Jam packed, no space for boule dough (doh!). Lucky my brother is an electrician. All I need now is my proofing basket and a good pair of heat-safe gloves because I’ll be baking my bread at high high temps. Apparently this cloche is fired at 1,280 degrees celsius so I’m sure it’ll handle anything. My hands won’t in my less-than-average oven mittens. And you’ve seen my track record with the mandolin. Yep. I need some seriously safe gloves. I was looking at the Weber ones and they looked about right haha. Why does all the good stuff have to cost so much? I found this cloche to be a really affordable price compared to some of the other options I was looking at. I want to bake my bread enclosed to save me from needing to add a pan of water to the oven. Le Creuset dutch oven was too expensive, and I’m not keen on having to keep up with caring for a cast iron one even though there’d be no risk of damage in the latter. So happy to have found this cloche. It’s handmade in Australia too. And pretty don’t you think? I told Noah I’ll be baking bread soon and showed him photos of boule. He asked me to make him some because he wants to eat it. The early stages of making sprouted fermented homus. As you may know from previous posts, sprouting releases the phytic acids that bind and inhibit the bioavailability of nutrients. Even though you may pay more for organic food, did you know you can really supercharge them into powerhouse food by sprouting and fermenting. This Saturday I'll be hosting a fermentation workshop at Burleigh Heads and chatting about how to really get value out of food, the importance of good nutrition and how it plays a massive role in keeping us vibrant, resilient and disease free.

So my friend Jessica gifted me with this SCOBY earlier today and I am all set and ready to get fermenting!!! It looks kind of gross and👽 like, but this crazy beautiful organism is going to be placed in some honey sweetened green tea where it will do its job of consuming the sugars and fermenting the tea.
I’ll be left with a delicious probiotic and antioxidant rich beverage that I can ferment again with fruit and spices to add flavour. If I leave it long enough in the second ferment, it will become slightly alcoholic 🙌🏽🎉🙌🏽 We all know the health benefits of green tea. The fermentation process will actually serve to further boost the nutrient quality of the tea as well as increase its bioavailability. Pretty amazing, huh?!
