Although I loved being in Guatemala surrounded by good food and family, I can't wait to be home. I'm one of those people that really loves to travel and explore, but also one that needs a home base - a special place to come home to. To tell you the truth, I was a bit disappointed with the 18minutes of HIIT we completed, followed by a team game where we queued most the time. happy hump day! it’s been yet another stressful week but I’m trying my best not to CRUMBLE under the pressure😅 I’ll leave the crumbling to these chocolate granola crumble bars💃🏻🍫 these bars are fullll of texture and messy in the best way🙌🏼 the creamy chocolate filling (made with sweet potato, but you can’t taste it!) is sandwiched between two layers of a crunchy granola crumble...need I say more? perfect for breakfast, a snack, or dessert👌🏼 recipe👇🏼

Crumble Crust/Topping:
-1 cup almond flour
-3/4 cup @onedegreeorganics GF rolled oats
-1/2 cup granola, roughly chopped (I used @grandyoats super hemp coconola)
-1/4 cup coconut oil, softened
-1/4 cup @artisanaorganics tahini
-1/4 cup maple syrup
-1 tsp cinnamon
-1/2 tsp baking soda
-1/4 tsp salt
.
Filling:
-1/2 cup canned coconut milk*
-1 medium baked sweet potato, skin removed (I used a Japanese sp)
-2 T tahini
-2 T maple syrup
-2 T @navitasorganics cacao powder
-1 T tapioca starch
-1 tsp vanilla extract
-pinch of salt
*Refrigerate coconut milk overnight & use the coconut cream on top (don’t shake/stir the can)

Directions:
Preheat oven to 350F. Combine the crumble ingredients in a large bowl and beat together with a hand mixer until a crumbly mixture forms. Reserve 1 cup of the crumble and press the rest evenly into an 8x8 pan coated with coconut oil. Bake for 10 minutes. Blend the filling ingredients in a food processor until smooth and spread evenly on top of the baked crumble crust. Top with the remaining crumble and bake for another 25-30 minutes or until a toothpick comes out clean.

A much better day over here for me, so let’s talk about supplements! I don’t take a ton, outside of my daily prenatal and collagen peptides, but I recently decided to give @vitalproteins spirulina a try.
Fun facts about spirulina: it’s sometimes considered the most nutrient dense food on the planet, it’s a natural algae, it’s vegan, and it’s a powerful antioxidant. The problem is that it tastes terrible, so no one wants to eat it. I love to find smoothies and products that have spirulina in them, as long as you can’t taste it — but you usually can, so I was eager to try these supplements. If you take them quickly with a big glass of water, you’re golden — but don’t stop to smell them first eheheh. Thus far, I’ve had great energy, digestion and health since incorporating these pills, but I need to take a little longer to report more benefits — it does feel good to know I’m getting an extra kick of nutrition each day.
Moral of the story, you probably don’t need every single pill and supplement out there, and if you find one you want to try, make sure it’s got quality ingredients and is something your body needs! I steam cook the whole unpeeled beetroot for 45 minutes, peel it add feta, balsamic vinegar, maple syrup and fresh pepper. All goes in the oven for 30 minutes and all done. 
Also kumara (sweet potato :) always foods down very well, low in calories and super delicious.

Directions
1. Pre-heat oven to 425 degrees
2. Place crust on a oven safe pan
3. Add ingredients on crust
4. Bake for 10-12 Min

It's nice to finally relax after what felt like a hectic couple of days with finals at school. It was such an honor to get up in front of my classmates & instructors to show them my growth from the last time we had presented, as well as share this meal with them. They were beyond supportive & all went on to crush their presentations as well, teaching me so many new things & creating amazing dishes of their own. It's been an intense 5 months but I'm looking forward to our last week together & the opportunity to serve one more meal with this team of people. Ok enough with my ramblings of a post, just woke up filled with gratitude & joy, couldn't help but share it!

🍴 ⚡️ Chicken Marsala 💫 🍴 .
*3 chicken thighs *8 small Cremini mushrooms
*1 cup chopped spinach *1 large shallot
*2 tbs minced garlic
*1/4 c sherry wine
*1/2 c Marsala wine *1/2 tea dried oregano *1/4 c almond flour *1/4 c chopped parsley

In a bowl, coat chicken in almond flour, dried oregano & salt + pepper. Sauté garlic and chopped shallot on med heat 2 min. Brown chicken on both sides about 5 min. Slowly stir in sherry and Marsala. Once boiling top with spinach and mushrooms. Cover 15 minutes. For a thicker sauce add 1 tbs arrowroot powder with cold water then mix with sauce.  Top with parsley. I served my Chicken Marsala over Paleo mashed potatoes. .

🍴 ⚡️ Chicken Marsala 💫 🍴 . *3 chicken thighs *8 small Cremini mushrooms *1 cup chopped spinach *1 large shallot *2 tbs minced garlic *1/4 c sherry wine *1/2 c Marsala wine *1/2 tea dried oregano *1/4 c almond flour *1/4 c chopped parsley . In a bowl, coat chicken in almond flour, dried oregano & salt + pepper. Sauté garlic and chopped shallot on med heat 2 min. Brown chicken on both sides about 5 min. Slowly stir in sherry and Marsala. Once boiling top with spinach and mushrooms. Cover 15 minutes. For a thicker sauce add 1 tbs arrowroot powder with cold water then mix with sauce. Top with parsley. 3. If you’re trying to slim down, it’s important you’re getting the right balance of foods for maintaining overall health during weight loss, to sustainably lose the weight and to ensure you get the body type you want in the process.

4. To find out what balance and how many calories makes you feel the best. Every person’s body composition/genes/lineage/lifestyle is different. That means that one diet does not fit all. Some people feel great on a keto diet and others feel better eating more carbs than fats. If your trying out a new diet, give it about two and a half weeks. If you didn’t start to feel better physically AND mentally after the second week, it’s probably not the diet for you.

5. Eventually you will be able to stop tracking and intuitively eat, meaning you know your body so well that you can feel when you need something specific. That’s a long term goal of mine!

I haven’t been tracking for awhile but I think I do best with about 1,450 calories, consisting of 173g of protein, 45g fats, and 90g carbs. I might switch up the fats to carbs ratio once I start tracking again.

Summer nights call for ice cream 🍦!! I think I’ve had ice cream 3 times this week - a true sign of soaking in what is left of summer!! I find that I get bored of just eating one flavour, and I prefer to jazz up vanilla ice cream instead. Try this combo - French vanilla ice cream with local Niagara peaches, local blueberries and a smidge of balsamic vinegar. Yep, move aside mixed greens salad, this balsamic has more exciting places to go! You’ll have to let me know if you try it out! 🍑💡🍑
