We love choice, don’t we? We want to do it ourselves and be independent!
As I was listening to my Personal Development this morning, I realized how PD days in other professions were code for the opportunities to take a sick day or fill the time with “something important”. Instead, I now reframe it and look forward to my PD each day because it’s based around what I need to help me grow the best. I also CHOOSE to do it because I love it and it fills my cup for the day and energizes me!
How has reading helped you grow lately?
This, my friends, is what you call a 🧠 and gut fueled smoothie. Maqui berries are super berries that are super purple - and filled with high levels of antioxidants called #anthocyanin . Blueberries- aka as “brain berries” by @askdrsears - can help brain function...and heart function...and gut health. @medicalmedium suggests wild blueberries and his rationale makes a lot of sense. So why not combine them both into an insanely yummy smoothie?
-1 scoop/packet chocolate complete -1 tsp maqui powder -handful wild blueberries -ice .

In the cooler months, one of my favorite thing to cook is soup. I LOVE all the ways I can make it, how easy and flavorful they all are, and possibly what I love most of all is how comforting and soothing a big bowl of soup is! Raise your hand if you love soup as much as I do. 🙋🏼♀️
Lemon quinoa veggie soup
2 c. chopped carrots
1 1/2 c. chopped celery
4-5 c. broccoli (cut into smallish bite sized chunks)
1/2 head (2 1/2 c) cauliflower (cut same size as broccoli)
1 large bunch chopped kale
1 1/2 juiced lemons
1 c quinoa
2 cartons (quarts) broth
1 t @simplyorganicfoods herbs de Provence
3 garlic cloves
Dash of @chosenfoods avocado oil
Pink salt and pepper to taste
Sauté carrots, celery, broccoli, cauli, spices in avo oil for a few minutes until they’re about half cooked.
Add in everything else and cook covered over medium low heat for about 20-30 minutes until everything is cooked fully (veggies and quinoa). Add more herbs, salt and pepper, or garlic if needed! #chelsbateseats#naturallychelsrecipe

Leftovers for lunch and I ain’t mad about it! 🙌🏼 I just took a pasture raised chicken thigh I cooked in my instant pot yesterday and reheated it in my cast iron with avocado oil also some #fatadapted alfredo spaghetti squash casserole we had for dinner last night! When I was younger, I had terrible terrible skin. I really couldn't find a photo (I did a good job at covering my skin at that time) so, that's what the photo of me and my CUTE dog is. ⠀

AUTHENTIC, NOT AUDACIOUS⠀
These are photos I’ve been sitting on for at least two years, too afraid of what people might think to share them with the world. There was a conversation in the @luscioushustle Academy page the other day about telling our stories, and what hold us back from them. I said I didn’t think anyone would relate, or that my story wasn’t worth telling. To me, they’re obstacles that I’ve overcome, but at the time, they can be excruciating to live with. @betsymilne came back and told me that “by holding on to your story, you are holding on to the past. Your stories make you you. It’s not audacious to share them, it’s authentic”.⠀
In Australia we have an almost pathological fear of being seen. We even coined the term “tall poppy syndrome” to make sure that anyone who wants to step out of their box remembers their place and doesn’t move ahead. We don’t allow people to stand or step in to their power. I am a very prideful person, and have accomplished some incredibly exciting things in my life, but I continually diminish them for fear that someone tears me down, points out all my shortcomings, or tells me in an number of ways that I’m not worth listening to. I’ve come to realise that that’s fine with me. I wasn’t put here to be small. I chose to be here to live with light and lead with my heart. Sometimes that means I’m cranky and it changes the vibe of the room I’m in without me noticing. Sometimes it’s laughing inappropriately loud and snorting with my friends and family. And sometimes it’s accepting that who I am isn’t who I was, but I’m who I am because of who I was.⠀
Today I took a step and posted my health story on my website. Maybe no one will read it. Maybe they will and won’t give a shit. Or maybe it’ll teach one person and make them feel more connected to a small part of ourselves. It’s not audacious to stand in who you are. It’s authentic, and it’s worth celebrating, acne scars and all.

All pumpkin everything 🧡🍂🎃 These pumpkin chocolate chip muffins were made using @traderjoes pumpkin bread mix! So easy and only $2 🤙🏼 It didn't come with chocolate chips tho, that was my addition, and man was it worth it 🤩

Decision making and learning is demanding on your brain and so burns up glucose faster than normal. Research has revealed that those who appeared in front of a judge before lunch had a 20% chance of getting parole compared to those after lunch who had a 65% chance. This percentage would then continue to decrease throughout the day until another light meal when the percentage would increase back up to 65%.

I popped that pre-made bad boy into the open and sautéed up some zoodles, tomatoes and basil for a lil topping. I’d def call this a first course bc this def isn’t a complete meal IMO... don’t know how you whole30-er’s do it! Not that this would be compliant 🙄🤫
